Steps:

  • Cut rutabaga and apple into 1-inch pieces. Cover with water; boil until tender. Drain, then mash with butter and cream. Add salt and pepper to taste.

2 pounds sweet potatoes
1 cup finely chopped onion
2 large Granny Smith apples
2 tablespoons unsalted butter
3 tablespoons crème fraîche or sour cream, or to taste
freshly grated nutmeg to taste
hot water for thinning the purée if necessary

Steps:

  • In a large saucepan boil the sweet potatoes, peeled and cut into 1-inch pieces, in water to cover for 10 to 12 minutes, or until they are very tender. While the sweet potatoes are boiling, in a large skillet cook the onion and the apples, peeled, cored, and sliced thin, with salt and pepper to taste in the butter over moderate heat, stirring, for 5 to 10 minutes, or until the apples are very tender. Drain the sweet potatoes well, in a food processor purée them with the apple mixture until the mixture is smooth, and with the motor running add the crème fraîche, the nutmeg, salt and pepper to taste, and enough hot water to thin the puré to the desired consistency.

2 pounds sweet potatoes, peeled and cut into wedges
1 pound rutabagas, peeled and cut into wedges
1 medium onion, thinly sliced
3 tablespoons extra-virgin olive oil
1 cup chopped fresh rosemary
salt and ground black pepper to taste
2 tablespoons lemon juice
2 tablespoons lime juice
2 tablespoons orange juice

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine sweet potatoes, rutabagas, onion, and oil in a large bowl or resealable bag; toss to coat. Transfer to a 9x13-inch baking dish; sprinkle with rosemary, salt, and pepper.
  • Bake in the preheated oven until vegetables are tender, about 20 minutes, stirring once halfway through cooking time. Add lemon, lime, and orange juices to baking dish; stir to combine. Bake 5 minutes more. Serve hot or warm.

I love rutabaga. When I was a child it was one of my favorite parts of Christmas dinner, that golden pile of mashed rutabaga...This soup looks and tastes like liquid autumn. It's incredibly simple to put together and can be made well in advance and frozen. the elusive ingredient is a bit of maple syrup which enhances the natural sweetness of the rutabaga. Water or vegetable stock may be successfully substituted for the chicken stock if you want to make this soup vegetarian.

1/4 lb butter (1 stick)
1 cup roughly chopped onion
1 cup peeled cored and roughly chopped granny smith apple
1 cup peeled seeded roughly chopped butternut squash
1 cup peeled and roughly chopped rutabaga
1 cup peeled and roughly chopped carrot
1 cup peeled and roughly chopped sweet potato
1 quart good chicken stock
2 cups heavy cream
1/4 cup maple syrup

Steps:

  • In a large saucepan, over medium high heat, melt the butter.
  • Add all the vegetables and cook, stirring occasionally until the onions are translucent.
  • Add the chicken stock and bring to a boil.
  • Simmer for 20 to 25 minutes, or until all the vegetables are cooked through and tender.
  • Puree the vegetables in a blender or food processor, or if you are lucky like me and have one use a handheld food liquidizer.
  • Strain through a fine mesh sieve into the same pot you used to cook it inches Add the cream, maple syrup, salt and cayenne pepper.
  • Return the pot to the stove, bring soup to a simmer, then serve in hot bowls!
  • I like to cut buttered bread into small shapes and toast them in the oven til crispy and golden to float on top for an added garnish!

2 pounds sweet potatoes, scrubbed
2 tart apples, such as Granny Smith or Braeburn
Juice of 1 lime
1/4 cup plain low-fat yogurt
1 to 2 tablespoons unsalted butter, melted (to taste)
1 tablespoon mild flavored honey, such as clover
Pinch of salt

Steps:

  • Preheat the oven to 425 degrees. Scrub sweet potatoes and pierce in several places with a sharp knife. Pierce the apples in a few places. Line a baking sheet with foil and place the potatoes and apples on top. Bake for 40 minutes and remove the apples. Continue to bake the sweet potatoes until thoroughly soft and beginning to ooze, 5 to 15 minutes, depending on the size. Remove from the heat and allow to cool until cool enough to handle.
  • Turn the oven down to 350 degrees. Remove the skins from the potatoes. Peel and core the apples, scraping all the flesh from just inside the skins.   • Heat the puree in the 350-degree oven for 20 to 30 minutes, until steaming. Serve hot.

1 cup onion, chopped
3 garlic cloves, chopped
2 cups rutabagas, cut into 1 inch peices

4 cups chicken stock

1/2 cup milk
1 cup apple cider
salt and pepper

Steps:

  • 1. Heat olive oil in pan.
  • 2. Add onion and garlic and cook until onion is translucent.

2 pounds sweet potatoes, peeled and cut into 1-inch pieces
Kosher salt and freshly ground pepper
4 tablespoons unsalted butter
2 tablespoons minced garlic (from 5 to 6 cloves)
2 tablespoons finely chopped fresh sage leaves
1/2 cup heavy cream

Steps:
