GREEN SALAD WITH ROAST CHICKEN AND SWEET POTATO



Green Salad with Roast Chicken and Sweet Potato image

Roasted chicken gives this main-course salad plenty of protein, and the chunks of sweet potatoes and shallots are full of potassium. The vinaigrette, made by deglazing the pan with cider vinegar and whisking it together with olive oil, brings the flavors together.

1 whole skinless, bone-in chicken breast (about 14 ounces)
1/4 teaspoon ground ginger
Black pepper
1/4 teaspoon coarse salt
3 tablespoons extra-virgin olive oil
2 sweet potatoes (10 ounces total), peeled and cut into 1/2-inch cubes
6 shallots, peeled and halved lengthwise (quarter if large)
1/2 head red-leaf lettuce, torn into pieces (2 1/2 ounces)
1/2 head frisee (2 ounces), torn into pieces
2 1/2 cups baby arugula (2 ounces)
2 tablespoons cider vinegar
Pinch of freshly ground pepper
1 tablespoon fresh thyme leaves

Steps:

  • Preheat oven to 400 degrees. Rinse chicken, and pat dry. Rub breast side with ginger and 1/8 teaspoon salt. Heat 2 tablespoons oil in a large (12-inch) ovenproof skillet over medium-high heat until hot but not smoking. Place chicken in skillet, breast side down; cook until breast side begins to turn golden brown, about 4 minutes.
  • Turn chicken over. Add potatoes and shallots to skillet; turn to coat in oil. Transfer skillet to oven. Roast chicken and vegetables, turning vegetables occasionally, until vegetables are tender and chicken is cooked through, 20 to 25 minutes. While chicken roasts, put salad greens in a serving bowl; set aside.
  • Transfer chicken to a cutting board and vegetables to a plate. Add vinegar to skillet; cook over medium-high heat, scraping up brown bits from bottom of skillet with a wooden spoon, 30 seconds. Remove from heat; whisk in 1/8 teaspoon salt, the pepper, thyme, and remaining tablespoon oil.
  • Cut chicken into 1/4-inch-thick slices. Add chicken and vegetables to salad greens. Toss with warm vinaigrette.

Pan-fried chicken tenderloins, scattered with toasted black sesame seeds
Pita bread, quartered
Ingredients (serves 4–6 for two meals, ie. salad serves 6, salmon cakes serve 4):
2 heaped tablespoons (45g) white miso paste
2 tablespoons olive oil
2 orange sweet potatoes (about 750g/1½ lb), peeled, cut into 2cm cubes
Salt and freshly ground black pepper
800g (28 oz) frozen unshelled edamame, or 400g (14 oz/2 cups) frozen shelled edamame
2¼ cups (450g) white quinoa
3 cups coriander (cilantro), chopped, plus extra to serve
¼ cup black sesame seeds (or white, if unavailable), toasted
Miso dressing (for salad only):
2 heaped tablespoons (45g) white miso paste, extra
1 tablespoon honey
2 teaspoons soy sauce (gluten-free or regular)
Small piece ginger, grated and chopped, about 1 tablespoon
1 tablespoon (15ml) water
1 tablespoon (15ml) rice wine vinegar

Steps:

  • Preheat oven to 200°C (390ºF). Mix 2 heaped tablespoons miso paste and olive oil together to form a paste. Toss with the sweet potato in a large bowl, until well-coated. Place sweet potato onto a baking tray lined with baking paper. Season. Roast for 20 minutes or until tender. Set aside. If using unshelled edamame, squeeze the beans from their pods. Blanch shelled edamame in boiling water for 5 minutes. Drain and allow to cool. Add edamame to the roasted sweet potato. Combine quinoa and 3 cups of water in a saucepan. Bring to the boil, cover and simmer for 5 minutes. Remove from heat and stand, covered, for ten minutes or until water has been absorbed. Spread quinoa out on a tray and set aside for ten minutes to dry. Add to the sweet potato and edamame, along with the coriander and sesame seeds. ♦ Reserve ⠓ of the undressed Sweet potato, quinoa and edamame salad (about 4 cups) for the Sweet potato and quinoa fritters. Meanwhile, make miso dressing. Place dressing ingredients in a small saucepan and warm over a low heat, stirring, until miso and honey are dissolved (1–2 minutes). Set aside to cool. Drizzle dressing over the remaining salad, and toss gently. Scatter with extra sesame seeds and extra coriander

8 cups tightly packed torn romaine lettuce
2 cups shredded rotisserie chicken
1 cup cut-up fresh green beans (2 inch lengths), cooked, cooled
1 cup halved cherry tomatoes
1 avocado, chopped
4 slices OSCAR MAYER Bacon, cooked, crumbled
1/2 cup KRAFT Classic Ranch Dressing
1/4 cup pumpkin seeds

Steps:

  • Heat oven to 400ºF.
  • Toss potatoes with oil; spread onto foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 25 to 30 min. or until tender, turning after 15 min.
  • Combine potatoes with all remaining ingredients except dressing and pumpkin seeds in large bowl. Add dressing; mix lightly.

2 cups cooked chicken breasts, diced
1/2 cup sliced scallion
2 celery ribs, diced

4 medium shallots, quartered, root ends left intact
2 medium sweet potatoes, cut into 1/2-inch chunks (about 1 pound)
5 tablespoons grapeseed oil
Kosher salt and freshly ground black pepper
1/3 cup sliced almonds
2 tablespoons unseasoned rice vinegar
1 tablespoon natural almond butter
1 tablespoon grated fresh ginger
1 tablespoon white miso
1 tablespoon soy sauce
2 teaspoons honey or agave
1 tablespoon toasted sesame oil
2 heads frisee, trimmed and torn into bite-size pieces (about 8 cups)
8 ounces sliced Boar's Head Ichiban Teriyaki¿ Style Chicken, cut into strips
2 scallions, thinly sliced

Steps:

  • Put a baking sheet on the lower rack of the oven and preheat the oven to 400 degrees F.
  • Toss the shallots and sweet potatoes with 1 tablespoon of the grapeseed oil and some salt and pepper in a large bowl. Transfer the vegetables to the hot baking sheet and roast, tossing once about halfway through, until tender, 20 to 22 minutes.
  • Meanwhile, spread the almonds on a small baking sheet and toast until golden, 4 to 5 minutes. Set aside to cool.
  • For the dressing, combine the vinegar, almond butter, ginger, miso, soy sauce and honey in a blender and blend until smooth. With the blender running, slowly pour in the sesame oil and remaining 1/4 cup grapeseed oil through the hole in the blender top to make a smooth, creamy dressing.
  • Toss the cooked sweet potatoes and shallots with half of the dressing while still warm.
  • Put the frisee in a large bowl, drizzle with the remaining dressing and toss. Mound the salad on a serving platter or individual plates. Top with the sweet potatoes and shallots, followed by the Boar's Head Ichiban Teriyaki™ Style Chicken strips. Sprinkle with the scallions and toasted almonds and serve.

2 tablespoons plain yogurt
1 tablespoon sweet mango chutney (I have used other sweet chutneys too)
1 teaspoon curry
2 garlic cloves, chopped
2 boneless chicken breasts
2 lbs sweet potatoes
2 -3 celery ribs, sliced
1/2 cup roasted cashew nuts, roughly chopped
1/4 cup chopped dates
1/4 cup fresh cilantro
1/2 cup plain yogurt
1 -2 tablespoon sweet mango chutney
3 -4 tablespoons orange juice
1 teaspoon curry
1 teaspoon salt

Steps:

  • Put the first 4 ingredients into a plastic bag.
  • Add the chicken, then massage the bag so the chicken is evenly coated with the marinade. Set aside for at least 15 minutes. (Refrigerate if marinating for longer period of time).
  • Peel the potatoes and cut into 1 inch cubes. Boil gently until tender, then leave to cool to room temperature.
  • Cook the chicken by grilling for 5-10 minutes on each side (depending on thickness) or until the outside has browned and the juices run clear.
  • Leave chicken to stand for 5-10 minutes, then cut into bite sized pieces.
  • While the chicken is cooking, stir the dressing ingredients together, thinning to the desired consistency with the orange juice, and prepare the remaining salad ingredients.
  • Place the cooled well drained potato, the chicken and remaining ingredients (reserving a little cilantro to garnish) in a large bowl, drizzle with dressing, then toss gently to combine.
  • Garnish with the reserved cilantro and serve immediately or refrigerate until required.

3 tablespoons olive oil, divided
Salt and pepper
3/4 pound frozen breaded chicken tenders
4 teaspoons white-wine vinegar
1 tablespoon Dijon mustard
1 bunch Tuscan kale, tough stems and ribs removed, thinly sliced (about 6 cups)
1/2 cup toasted almonds, chopped

Steps:
