BUTTERNUT SQUASH, POTATO AND GINGER SOUP



Butternut Squash, Potato and Ginger Soup image

Top this gorgeous autumnal soup with toasted pepitas and fresh rosemary.

2 tablespoons unsalted butter
1 cup chopped sweet onion
1 cup peeled chopped potato
1 tablespoon peeled chopped fresh ginger
Pinch of freshly grated nutmeg
1 clove garlic, minced
1 sprig fresh thyme, plus more leaves, for serving
Kosher salt and freshly ground black pepper
3 1/2 cups low-sodium chicken broth
3 cups chopped peeled butternut squash
1/4 to 1/2 cup heavy cream, plus more for drizzling (optional)
Toasted pepitas, for serving

Steps:

  • Heat the butter in a medium saucepan over medium heat. Add the onion and cook, stirring, until tender, 4 to 5 minutes. Add the potato, ginger, nutmeg, garlic, thyme, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
  • Add the butternut squash and simmer until the potatoes and squash are tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat, discard the thyme and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill blender more than halfway full).
  • Stir in the cream and reheat the soup if necessary, adjusting the consistency with water and seasoning with additional salt and pepper.
  • Serve hot drizzled with more cream if using and a sprinkled with pepitas and thyme.

1 (2 pound) butternut squash - peeled, seeded, and cut into large chunks
4 sweet potatoes, peeled and cut into chunks
1 onion, peeled and chopped
1 (2 inch) piece fresh ginger, peeled and finely chopped

1 ½ quarts water, or amount to cover
1 cup plain yogurt, or amount desired
salt and ground black pepper to taste

Steps:

  • Place the squash, sweet potatoes, onion, ginger, and garlic in a large pot. Pour in enough water to cover the vegetables. Bring to simmer over medium heat, and cook until vegetables are tender and can be easily pierced with a fork, 30 to 45 minutes.
  • Remove pot from heat. Place soup in batches into a blender or the bowl of a food process. Pulse until smooth. Return soup to pot, and whisk in yogurt. Season with salt and pepper to taste. If necessary, reheat soup over low heat, but do not allow to boil.

1 large butternut squash (peeled, seeded, and cubed into 1 inch pieces (about 5 cups))
1 - 2 large sweet potatoes (peeled and cubed into 1 inch pieces (about 5 cups))
1 large carrot (peeled and cut into 1 inch pieces)
1/2 large yellow onion (peeled and cut into large pieces)
3 cloves garlic (minced)
3 Tbsp olive oil
1 tsp kosher salt
1/2 tsp black pepper
2 Tbsp unsalted butter
1/2 large yellow onion (diced)
1 large carrot (peeled and diced)
2 ribs celery (diced)
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 tsp ground cinnamon
1/2 tsp dried rosemary
1/4 tsp ground sage
1/4 tsp ground nutmeg
6 cups reduced sodium chicken broth
drizzle of heavy cream
dollop of sour cream
roasted salted pumpkin seeds

Steps:

  • Preheat oven to 400°F and set out a large baking sheet.
  • To a large mixing bowl, add vegetables from the roasted vegetables section of ingredients (butternut squash, sweet potato, half an onion, 1 carrot and garlic).
  • Add oil, salt and pepper and stir to combine well. Transfer vegetables to baking sheet, then bake in preheated oven for 30-45 minutes, or until vegetables are tender and golden brown. Stir halfway through baking.
  • Start this process during the second half of the vegetables roasting, when you have about 10 minutes left.
  • Add butter to a large dutch oven or stockpot (whatever you would normally cook a big batch of soup in), and heat over MED HIGH heat.
  • Once melted, add diced onion, diced carrot, and diced celery. Sprinkle with salt and pepper and stir.
  • Cook for 3-5 minutes, stirring occasionally, until vegetables are softened and lightly golden.
  • Stir in cinnamon, rosemary, sage and nutmeg.
  • Add roasted vegetables from the baking sheet, then pour in chicken broth.
  • Use an immersion blender to puree the soup until smooth or desired texture is reached.
  • Continue heating until hot throughout (this time will vary from person to person), mine just took about 5 minutes. Taste, and add salt and pepper if necessary.
  • Serve hot, with an optional swirl of heavy cream or sour cream, and/or topped with any desired toppings.

¼ cup butter
1 butternut squash - peeled, seeded, and cut into chunks

1 carrot, peeled and chopped
1 stalk celery, chopped
1 sweet onion, chopped

3 small sweet bell peppers, chopped

Steps:

  • Melt butter in a large pot over medium-high heat. Cook and stir butternut squash, sweet potato, carrot, celery, onion, and garlic in hot butter until lightly browned, about 5 minutes.
  • Pour chicken stock and sweet bell peppers into butternut squash mixture; bring to a boil. Reduce heat to low, cover, and simmer until squash and potato are tender, about 40 minutes.
  • Pour squash mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

This silky fall/winter puree tastes rich, though there is no cream or butter in it.

1 tablespoon canola oil
1 small onion, chopped
1 tablespoon minced fresh ginger
1 pound butternut squash, peeled and diced
1 pound sweet potatoes, peeled and diced
1 medium-size Yukon gold or russet potato, peeled and diced
6 cups water, chicken stock, or vegetable stock
Salt to taste

Steps:

  • Heat the oil in a heavy soup pot or Dutch oven over medium heat. Add the onion and cook, stirring, until tender, about 5 minutes. Add the ginger and stir together until fragrant, about 1 minute. Add the squash, sweet potatoes, regular potato, and water or stock, and bring to a simmer. Add salt to taste, reduce the heat, cover and simmer 45 minutes, or until all of the ingredients are thoroughly tender.
  • Using an immersion blender, puree the soup (or you can put it through the fine blade of a food mill or use a regular blender, working in batches and placing a kitchen towel over the top to avoid splashing). Return to the pot and stir with a whisk to even out the texture. Heat through, adjust salt and add pepper to taste.

2 tablespoons EVOO
2 tablespoons butter
1 to 2 tablespoons puree of chipotle in adobo, medium to spicy heat level (freeze the remainder in a plastic baggie)
1 teaspoon ground coriander, 1/3 palmful
2 cloves garlic, chopped
1 teaspoon ground cumin, 1/3 palmful
1 teaspoon paprika, 1/3 palmful
2 onions, chopped
1 crisp apple, peeled and chopped
One 1-inch piece ginger root, finely chopped or grated
A little freshly grated nutmeg

4 cups chicken stock, plus extra to reheat
About 1 tablespoon honey
1 1/2 pounds kabocha, butternut squash or pumpkin, peeled and chopped (or leftover roasted)

Steps:

  • Heat the EVOO in a soup pot over medium-high heat, add the butter and melt into the oil. Add the chipotle, coriander, cumin, paprika, garlic, onions, apple, ginger, cinnamon and some nutmeg and salt and pepper. Cook for 5 minutes partially covered. Then add the stock, honey, kabocha, carrots and potatoes. Cook partially covered until very tender, 30 minutes. Puree with an immersion blender or in batches in a food processor. Cool and store for a make-ahead meal. Reheat over medium heat and add 1 cup of stock or water to loosen the soup enough to reheat.
  • To serve, add a little citrus juice for a pop and top shallow bowls or cups of soup with assorted toppings of your choice.

Sweet Potato and Butternut Squash Soup (With a Hint of Jamaica!) image

This recipe is so so creamy and naturally sweet. For a Vegan version, don't use milk. I use a bought spice mix of Jamaican Jerk Seasoning but anything similar will be just as good I would think.

2 sweet potatoes (large)
1 butternut squash (medium)
2 inches gingerroot (cubed)
3 garlic cloves
salt
3/4 pint vegetable stock
2 teaspoons jamaican jerk seasoning
2 white onions (medium)
3 tablespoons olive oil
milk (as required)

Steps:

  • Preheat oven to 180°C.
  • Prepare the sweet potatoes and squash by peeling and cubing.
  • Peel and grate the root ginger.
  • Roast the sweet potatoes and squash in a little olive oil along with the garlic (leave whole) and grated ginger for approximately 25mins.
  • Prepare the veg stock and add jerk seasoning and chopped onions.
  • Add the roasted veg mix to the stock and simmer for approximately 20mins or until the veg is very soft.
  • Remove from the heat and blend with a hand blender until smooth. Add the milk as you are doing this as the soup will be quite thick so use the milk to thin it out and to add extra creaminess. Season with salt if necessary.
  • Serve.
