SWEET PLANTAIN MASH

Steps:
- Fill a small pot with water and a pinch of salt; bring to a boil. Add plantain and cook until soft, 3 to 5 minutes. Drain and immediately transfer to a ricer set over the bowl of an electric mixer and rice. Transfer bowl to mixer fitted with the paddle attachment and add butter; beat in butter. Slowly stir in cream. Season with salt and serve immediately.

- 1. Place the peeled and diced sweet potatoes, boniato and plantains in a 6 quart pot. Add hot water and salt, then place the stockpot on the stove over medium heat. Bring to a boil and cook for 35 minutes or until an inserted fork in the sweet potatoes and boniato pierces easily.
- 2. Heat the milk, butter, white pepper and cinnamon in a small stockpot until warm, then set aside for step 3.
- 3. 3. Drain the water from the sweet potatoes, boniato and plantains and transfer them into a mixing bowl. Using a wire whisk mash until sweet potatoes, boniato and plantains are broken up. Add the warm seasoned milk and mix again until the sweet potatoes, boniato and plantains are smooth. If needed, season with additional salt to taste.
- 4. Place the sweet potato, boniato and plantain mash on a large serving platter garnish with chopped parsley. Enjoy!
SWEET PLANTAIN MASH
Steps:
- 1. Cut plantains in half cross-wise, then each in half lengthwise. Place in a saucepan with cinnamon sticks, sugar, half the butter, and water to cover. Bring to a simmer; cook until plantains are soft, about 20 minutes. 2. Remove plantains from saucepan, but do not discard the cooking liquid. Puree plantains through a mill or potato ricer into a large bowl. Do not use a food processor or they become gluey. 3. Stir in remaining butter and 1/2 cup or more of the cooking liquid, to make a soft and smooth puree. 4. Add rum, stir and season with salt.
SWEET BALSAMIC SALMON WITH SWEET POTATO AND PLANTAIN MASH
We're fans of all kinds of mashed potatoes. But this version-made with sweet potatoes and plantain-are the perfect accompaniment to these salmon fillets.

- To cook the salmon: Place the salmon in a shallow dish, add 2 Tbsp of dressing; season to taste. Marinate for 15 minutes in the refrigerator.
- Meawhile, place the potatoes and plantain in a pot with water and cook until tender, drain
- Preheat the oven to 400°F. Line a baking sheet with parchment paper and lay the salmon fillets on it.
- Bake for 10-12 minutes or until just cooked through, but not dry.
- In a saucepan place the olive oil over medium heat. Add the garlic and cook for 2 minutes. Add the potatoes and plantains to the pan, mash them and mix to combine. Season, to taste. Add the green onion slices to garnish.
- Top the salmon with remaining dressing, serve over the mashed sweet potato and plantain puree.
