1 tablespoon vegetable oil
1 large onion, chopped
2 cloves garlic, minced
2 teaspoons minced fresh ginger root
1 ½ teaspoons ground cumin
1 ½ teaspoons ground coriander
½ teaspoon ground cinnamon
1 pinch ground cloves
3 medium tomatoes, chopped
1 ½ pounds sweet potatoes, peeled and chopped
1 carrot, peeled and chopped
4 ½ cups water
1 teaspoon salt
¼ cup chopped, unsalted dry-roasted peanuts
1 pinch cayenne pepper
2 tablespoons creamy peanut butter
1 bunch chopped fresh cilantro

Steps:

  • Heat the oil in a large saucepan over medium-high heat. Saute the onion 10 minutes, until lightly browned. Mix in the garlic, ginger, cumin, coriander, cinnamon, and cloves. Stir in the tomatoes, sweet potatoes, and carrot, and continue to cook and stir about 5 minutes.
  • Pour water into the saucepan, and season the mixture with salt. Bring to a boil, reduce heat, and simmer 30 minutes.
  • Remove the soup mixture from heat. In a food processor or blender, blend the soup and peanuts until almost smooth. Season with cayenne pepper. Return to the saucepan. Whisk in the peanut butter, and cook until heated through. Serve warm topped with fresh cilantro.

2 tablespoons coconut oil (or olive oil)
1 onion, chopped
salt (to taste)
pepper (to taste)
4 garlic cloves, finely chopped
2 tablespoons ginger, freshly grated
2 teaspoons cumin
1/4 teaspoon cayenne
1 teaspoon cinnamon
1 tablespoon cilantro
2 tablespoons peanuts, crushed
3 large sweet potatoes, cut into 1/2 inch pieces (1.5 pounds)
1/2 cup creamy peanut butter
14 ounces crushed tomatoes
4 cups water

Steps:

  • Heat two TBL oil in a large saucepan over medium heat.
  • Add chopped onion; season with pepper and salt.
  • Cook onion until tender (8-10 minutes).
  • Stir in garlic and ginger; cook one more minute.
  • Add cumin, cayenne, and cinnamon; stir until blended.
  • Add the sweet potatoes into the pot.
  • Stir in the crushed tomatoes, creamy peanut butter, and water.
  • Add cilantro and crushed peanuts.
  • Bring to a boil, then reduce and simmer, covered, until sweet potatoes are tender (about 25 minutes).
  • Add more salt or pepper, to taste.

1 eggplant, diced (optional)
1 (15 ounce) can chicken broth or 1 (15 ounce) can vegetable broth

1 (5 1/2 ounce) can apple juice

2 1/2 tablespoons peanut butter
1/2 lemon, juice of

Steps:

  • Heat oil over medium high heat and add onions. Saute for a few minutes, until starting to show a little color.
  • Add garlic and ginger, and sauté a few more minutes. Stir in spices. Add cabbage, sweet potato, eggplant (if using), broth, tomatoes, apple juice, and salt.
  • Cover and bring to a boil. Simmer, mostly covered, for 15 minutes, stirring occasionally.
  • Check sweet potatoes for doneness. Turn off heat, stir in peanut butter until melts, then add lemon juice to combine.
  • Serve topped with cilantro, parsley, and peanuts.

2 large sweet potatoes diced
6 medium shallots sliced
2 ribs celery diced
2 carrots diced
5 jalapeno peppers from jar
6 or more cups of chicken broth
1/4 cup peanut butter
1/2 teaspoon cumin
1/4 teaspoon nutmeg
1 tablespoon olive oil
1 tablespoon real butter
1/2 cup heavy cream
salt to taste
optional: hot sauce

Steps:

  • 1. Pour olive oil and melt butter in large dutch oven. Put on medium heat.
  • 2. Add the shallots, celery, carrots, jalapeno, stir and cook until soft, then add the sweet potatoes, cook and stir five minutes. Add the cumin and nutmeg.
  • 3. Add chicken broth, and make sure it just covers the potatoes. If it doesn't, add some more.
  • 4. Let the mixture come to a boil, then cover and turn down the heat to a simmer. Simmer until the potatoes are tender. (45 minutes to an hour)
  • 5. Puree the soup in batches in a blender until creamy. WARNING: Do small batches in the blender ON LOW to avoid burning yourself! The hot liquid jumps up and can overflow on high. Put the pureed soup in a pan as you finish each batch, then transfer the mixture back to the dutch oven. Heat, the soup, add the peanut butter to it and mix well. Then add the heavy cream and mix again. Heat the soup until it is hot, but don't boil it. Serve immediately with my hot French rolls (this site) and butter. Add hot sauce to the soup if desired. Enjoy!

West African Sweet Potato and Peanut Soup image

2 tablespoons Butter (unsalted)
1 Onion - medium size, minced
1 teaspoon Brown sugar (light)
1 teaspoon Salt
1 tablespoon Garlic cloves - minced or pressed through garlic press
1/2 teaspoon Coriander (ground)
1/4 teaspoon Cayenne Pepper
3-1/2 cups Broth - low-sodium chicken or vegetable
2 cups Water
2 pounds Sweet Potatoes (about 3 medium) - peeled, quartered lengthwise, thinly sliced
3 tablespoons Peanut Butter
1 dash Black Pepper (freshly ground)
1 tablespoon Cilantro leaves (fresh, minced)

Steps:

  • In large Dutch oven, melt butter over medium-high heat.
  • Add onion, brown sugar and 1 teaspoon salt.
  • Cook, stirring frequently, until the onion is softened - 5-7 minutes
  • Stir in garlic, coriander and cayenne and cook until fragrant - about 30 seconds
  • Add broth, water, sweet potatoes and peanut butter
  • Bring to boil over high heat
  • Reduce the heat to low and cook, partially covered, until the sweet potatoes are easily pierced with a knife - 25-30 minutes
  • Working in batches, use a blender or food processor to puree the soup until smooth, then return it to a clean saucepan.
  • (At this point, the soup can be refrigerated up to two days)
  • Reheat over medium-low heat.

1 tablespoon hot thai kitchen curry paste or 1 tablespoon mild curry paste, to taste
1/2 teaspoon cinnamon (I used less cinnamon because I tend to prefer less cinnamony-flavors in my savory food)
1 medium red onion, peeled, diced
4 garlic cloves, minced
1 medium sweet potatoes or 1 medium yam, peeled, diced
1 large yellow bell pepper, cored, seeded, diced
1 jalapenos or 1 other hot chili pepper, seeded, diced fine
3 (14 ounce) cans black beans, rinsed, drained (I used 1 1/2 cups dried black beans that I cooked most of the way before adding to the broth)
1 quart light broth
1/2 teaspoon crushed hot red pepper flakes, to taste
2 tablespoons chopped fresh cilantro
1 big juicy lime, juice of
2 -3 teaspoons organic brown sugar or 2 -3 teaspoons raw agave nectar, to taste
sea salt and black pepper, to taste

Steps:

  • Heat the light olive oil in large soup pot. Add the curry paste and cinnamon; stir for a minute to infuse the oil with spice. Add the onion, garlic, sweet potato, yellow pepper and jalapeño. Stir and cook the veggies for 5-7 minutes, until softened.
  • Add the black-eyed peas, white and black beans, broth, melted peanut butter, red pepper flakes and cilantro.
  • Bring the soup to a high simmer, cover, and lower the heat; keep the soup on simmer and cook until the vegetables are tender, about 25 to 30 minutes.

2 - sweet potatoes (peeled & quartered or cubed)
3 - chicken -boneless - breasts (cooked) - cut into pieces
1 - red bell pepper (diced)
2 - fresh garlic cloves (minced) or use the equiv in minced form
1 - jalapeño pepper, (seeded & minced)
1 cup(s) bottled salsa
1/2 teaspoon(s) ground cumin
2 - cans (16 oz) chicken broth
1 - can (15 oz) black beans (drained)
1/3 cup(s) peanut butter
1 - onion (chopped)

Steps:

  • Boil chicken breasts either in plain water or add some poultry seasoning to the water while boiling to give it more flavor. Cook until chicken is not pink and then drain and let the chicken cool. Cut up the chicken into small pieces after it's cooled.
  • Place olive oil in a large pot and your cubed/diced sweet potatoes and cook them in the oil for 3 minutes.
  • Add the onion, red bell pepper, garlic & jalapeño to the sweet potatoes and sauté for 5 minutes.
  • Stir in the chicken, salsa, ground cumin, chicken broth and black beans & bring to a boil.
  • After the mixture has reached a boil, turn down the heat to a simmer. Get your 1/3 cup PB and a little bit of the soup broth & mix it together before dumping the PB into the pot. Then add that into the soup mixture. Let simmer on low for 15 -20 minutes and then serve when your ready!
  • Serve with some warm crusty bread, it's delish!

2 lbs sweet potatoes, peeled and chopped into 1 ich pieces (the orange-fleshed variety)
2 large onions, peeled and chopped
2 cloves garlic, crushed
1 tablespoon ground cumin
8 cups chicken stock
1 1/4 cups crunchy peanut butter
1 tablespoon chili sauce
1/4 cup chopped peanuts
1/4 cup chopped chives (or chopped cilantro)

Steps:

  • Heat oil, and saute onions in a heavy-based stockpot.
  • Add garlic and cumin, and stir-fry 30 seconds over medium heat.
  • Add chopped sweet potato, cover and cook for 10 minutes over low heat, stirring occasionally to prevent sticking.
  • Add chicken stock, bring to boil, then reduce heat and simmer for 10 minutes.

1 clove Garlic - minced
3/4 cup Leek - chopped
3 cups Sweet Potato - peeled, sliced
1 quart Chicken broth
3 tablespoons Peanut Butter
1/2 stick Cinnamon
3/4 cup Peanuts - roasted and chopped
2 tablespoons Molasses
1 1/4 cups Cream
1/2 teaspoon Nutmeg - grated

Steps:

  • Melt butter in soup pot over medium heat
  • add celery onion garlic and leek and cook to softened 5 minutes
  • add sweet potatoes broth peanut butter and cinnamon stick, bring to a simmer and cook for 25 minutes to tender
  • remove and discard stick. Puree soup (and strain if you want)
  • Return to soup pot and add 1/2 cup cream over low heat. Salt to taste. Do not let boil
  • Combine remaining cream with molasses, nutmeg, pinch salt. Whip to stiff peaks.
  • Serve with dollop of whipped cream and garnish with chopped peanuts (optional)

3 large sweet potatoes (about 3 lb), peeled, coarsely chopped
1 tablespoon chopped fresh rosemary leaves
2 cups cubed cooked ham
2/3 cup creamy peanut butter
1 cup whipping cream
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Fresh rosemary sprigs, if desired

Steps:

  • In 4- to 5-quart Dutch oven, melt butter over medium heat. Cook onion, celery and garlic in butter 10 minutes, stirring occasionally, until tender. Add broth, sweet potatoes and chopped rosemary. Heat to boiling; reduce heat. Cover; simmer 25 minutes or until potatoes are very tender. Remove from heat; cool 15 minutes.
  • Meanwhile, heat 10-inch nonstick skillet over medium-high heat. Add ham; cook until browned and crisp on all sides. Drain on paper towels; cover to keep warm.

12 ounces shell-less skinless peanuts (available in Asian supermarkets)
3 cups water
sugar

Steps:

  • Soak peanut in water for 6- 8 hours.
  • Bring water to a boil.
  • Cook peanut over low heat until soften.
  • Stir occasionally.
  • Or use slow cooker/pressure cooker to reduce cooking time.
  • Add more water if needed.
  • Add Sugar.
  • Degree of sweetness is your personal preference.
  • Serve hot or cold.

  • Put all ingredients in pressure cooker, cook for about 40 minutes. The peanut should be melt-in-your mouth when it cooked. If you don't use pressure cooker,you definitely more time to cook. Soak for one night, and cook for about 2-3 hours in low heat, cook until very tender. It's worthwhile for the melt in your mouth peanut soup ^_^
