SWEET ONION CHEDDAR PIE (WALLAS,MAUI OR VANDALIA)
I would like to share this wonderful pie with a little history to it. In the 80's and driving our way back from Florida to Chicago. We happened to stop in Georgia, and purchased a bag of the states delicious sweet (GA.)Vandalia onions,along with this great buttery sweet stuffed onion pie recipe. Years later I moved to Spokane, WA.and now enjoy the states great,Walla Walla sweet onions.Pictured. Another sweet onion is the Maui from Island of Maui.The onions are named for where they are grown.They are so sweet you can eat them like an apple! Also try a fried egg,onion & mayo sandwich.YUMMY!!

Steps:
- Pre-heat oven to 350 F. In a mixing bowl, combine crackers and 4 Tablespoons of of butter until well blended. Press into the bottom and i inch up the sides of a 8 inch pie plate to form a crust. Refrigerate till needed.
- Melt remaining 2 Tablespoons of butter in a heavy skillet over a medium heat. Saute the onions and garlic slowly until tender, about 12 minutes. Arrange sauteed onions into the cracker crust.
- Beat eggs, whole milk, chives, and salt in a bowl until blended. Pour over the onions. Sprinkle with the cheese and paprila.
- Bake in the pre-heated oven for 35 minutes, or until a knife inserted comes out clean. Garnish with parsley. Serve and enjoy, this special gourmet treat ! 5/2/12
VIDALIA ONION PIE
A light dinner of Vidalia onion pie, a nice salad on the side, and a ice cold glass of homemade lemonade is perfect for hot summer nights! Optional additions can be sweet red pepper to the onions as they cook and/or crumbled bacon or fresh ham bits may be added to the mixture prior to baking. All versions are great! If desired, a couple Vidalia onion rings look great on the top of the pie for decoration!

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium skillet, cook onions in butter for about 10 minutes, or until clear and soft; stir often. Reserve juices.
- In a large bowl, mix onions with eggs and sour cream. Stir in onion juices, butter and cheese. Add salt and pepper and hot sauce to taste. Make sure all ingredients are well blended and then pour into the 2 pie shells.
- Sprinkle grated cheese and paprika on top of pies. Bake in preheated oven for 20 minutes. Lower temperature to 350 degrees F (175 degrees C) and bake for an additional 30 to 40 minutes, or until lightly browned on top. Let cool for a few minutes to settle before slicing.

SWEET VIDALIA ONION PIE
In the south, we love our Vidalia onions! One of the best ways to eat them is in an onion pie. This recipe can be made into a pie as well as into a casserole for a potluck. You can use any sweet onions but the Vadalia makes a much sweeter pie.

- 1. Preheat oven to 450 degrees. Saute onions in butter until carmelized (a light browned color). Combine eggs, sour cream, salt, pepper, flour, milk and half of the cheese (add all of the cheese if making two-crust pie); mix thoroughly. Add onions.
- 2. You have different options in the next step: 1) TWO-CRUST PIE: Add all of the cheese in step 1, pour mixture into bottom pie shell. Top with upper crust; brush with melted butter. Top with small half-cut onions starting with outer ring working your way to middle; brush tops with melted butter. Sprinkle with small amount of fresh herbs. 2) 9X13 CASSEROLE: Spray a 9x13 baking dish with cooking spray. Pour onion mixture into dish. Top with remaining cheese-add additional cheese if needed.
- 3. Bake at 450 for 20 minutes. Reduce heat to 325 degrees and continue to bake for 20 minutes longer. This applies for pie as well as casserole. Cover edges of pie with aluminum foil during final stages of cooking to prevent excessive browning.
SWEET ONION PIE
This delicious pie has a buttery cracker crumb crust and is stuffed with sweet onions. It is superb along side any barbequed meat -- especially pork.

WALLA WALLA ONION PIE RECIPE - (4/5)

- Pre-heat oven to 375°F. Prepare a 9-inch pie crust by lining it with parchment paper and filling it with beans or pie weights, then partially bake your pie crust for about 15 to 20 minutes in a 375°F oven. (Once you use and cook the beans as pie weights, they will no longer be edible, but you can continue to use them over and over as pie weights.) The pie crust should still be blonde but slightly golden on the edges, the middle should still be mostly raw. Remove from oven, remove pie weights, and set aside. Sauté onions in oil and butter over low heat until golden yellow. Beat together eggs, half and half, flour, salt, pepper, and nutmeg, then add onions and half of the grated cheese. Pour into curst; sprinkle remaining cheese on top. Place pie pan on baking tray and bake at 375°F for 25 to 30 minutes or until golden brown. Garnish with parsley and serve.

- Make dough:
- Blend together flour, butter, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until most of mixture resembles coarse meal with some small (roughly pea-size) butter lumps.
- Drizzle evenly with 8 tablespoons (1/2 cup) ice water and gently stir with a fork (or pulse in processor) until incorporated.
- Squeeze a small handful: If it doesn't hold together, add more ice water, 1 tablespoon at a time, stirring (or pulsing) until incorporated, then test again. (Do not overwork mixture, or pastry will be tough.)
- Turn out mixture onto a work surface and divide into 6 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute butter. Gather dough together with scraper and press into 2 balls, one slightly bigger than the other, then flatten into disks. Chill each disk, wrapped in plastic wrap, until firm, at least 1 hour.
- Make filling and glaze while dough chills:
- Peel potato and cut into 1/4-inch dice (3/4 cup). Steam potato in a steamer set over boiling water, covered, until just cooked through, about 3 minutes. Transfer to a plate to cool.
- Cook onion in butter in a 10-inch heavy skillet over moderately low heat, stirring, until softened, 8 to 10 minutes. Transfer to plate to cool.
- Whisk together 2 eggs, cream, thyme, salt, and pepper in a large bowl until combined well. Stir in potato, onion, and cheese.
- Whisk remaining egg in a small bowl and reserve for egg glaze.
- Assemble and bake pie:
- Put oven rack in middle position and put a large baking sheet on it, then preheat oven to 425°F.
- Roll out larger piece of dough into a 13-inch round on a lightly floured surface with a lightly floured rolling pin and fit into tart pan. Spoon filling evenly into pie shell and brush some of egg glaze on rim of shell.
- Roll out smaller piece of dough into a 12-inch round in same manner, then cover pie with it. Trim edges of pie, leaving a 1/2-inch overhang, then press edges together and crimp decoratively.
- Brush top of pie lightly with some of remaining egg glaze. Cut several steam vents in top crust with a small sharp knife.
- Bake pie on hot baking sheet until golden brown, 35 to 40 minutes. Cool on a rack at least 15 minutes. Serve warm or at room temperature.
