Sweet and Spicy Sausage with Peppers and Onions image

This one-pot Sweet and Spicy Sausage with Peppers and Onions is super easy to make with only four main ingredients, and delicious served over cooked rice or quinoa! It's sweetened with just a touch of honey and has a kick from crushed red pepper.

1 tablespoon extra-virgin olive oil
1 tablespoon butter
3 bell peppers (any color, seeded and sliced)
2 yellow onions (peeled, halved, and sliced)
14 oz. smoked sausage (such as kielbasa, sliced diagonally into 1/2 inch pieces)
15 oz. canned diced tomatoes
kosher salt (to taste)
black pepper (to taste)
1/2 cup water
1 tablespoon honey
1/4 teaspoon crushed red pepper (more or less depending on spice preference)
2 tablespoons fresh cilantro (chopped, plus more for serving)
cooked rice, quinoa, cauliflower rice, or other grain (for serving (optional))

Steps:

  • Melt butter (1 tablespoon) with olive oil (1 tablespoon) over medium-high heat in a large skillet.
  • Add peppers, onions, and sausage, with a pinch of salt. Stir to coat in oil and salt, then sauté for about 20 minutes, stirring only every 5 minutes or so in order to develop good color. It will seem like too much, but don't worry- the vegetables will cook down a lot.
  • Meanwhile, cook up rice/quinoa for serving, if necessary.
  • Once peppers and onions are softened and browned, add the water (1/2 cup) to the pot, stirring with a wooden spoon to scrape up any browned bits from the bottom of the pot.
  • Add the honey (1 tablespoon), crushed red pepper (1/4 teaspoon), and canned diced tomatoes with their juices. Stir and turn heat to low. Continue cooking until some of the liquid has evaporated and you are left with a thick sauce.
  • Turn off heat and stir in cilantro (2 tablespoons). Season with salt and pepper to taste.
  • Serve over cooked rice or other grain or grain substitute, garnished with extra cilantro if desired.

2 pounds Conecuh brand original spicy smoked sausage
1 (8-ounce) can crushed pineapple in juice, undrained
1 cup dark brown sugar, packed
3 to 4 tablespoons Creole mustard
2 teaspoons white vinegar
1/4 teaspoon salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Cut sausage into bite-size slices, 1/2 to 1-inch thick. In a large skillet or pot over medium-high heat, add the sliced sausage and enough water to cover. Bring to a boil; reduce heat to medium and simmer about 5 minutes to render some of the fat. Drain off the liquid and lightly brown the sausage. Remove sausages from skillet to drain on paper towels. Set aside. In a medium pot over medium heat, bring the pineapple and the juice, brown sugar, mustard, vinegar, salt, and red peppers to a boil, stirring constantly; then reduce heat by 1 mark and let boil for 5 to 6 minutes or until sauce is reduced and thickened somewhat, stirring frequently. Add the sausage to the sauce and continue to simmer a few more minutes to heat through and thicken the sauce as desired. Transfer to a serving dish or a small crock pot set on warm setting. Use toothpicks to serve sausages.

2 pounds bulk hot Italian sausage
½ cup red wine vinegar
½ cup ketchup
½ cup brown sugar
1 tablespoon soy sauce
½ teaspoon ground ginger

Steps:

  • Roll sausage into 100 very small balls using no more than 1 1/2 teaspoons meat per ball.
  • Stir red wine vinegar, ketchup, brown sugar, soy sauce, and ground ginger together in a large saucepan over medium heat; bring to a simmer, reduce heat to low, and cook at a simmer until beginning to thicken, about 15 minutes.
  • Heat a skillet over medium heat. Fry sausage balls in batches in the hot skillet until browned on all sides and no longer pink in the center, 3 to 5 minutes per batch. Remove cooked sausage balls with a slotted spoon to the saucepan and stir into the sauce to coat.

4 teaspoons brown sugar
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon crushed red pepper
1/2 teaspoon fennel seed, crushed with a knife or mortar and pestle
1/4 teaspoon Hungarian paprika
Kosher salt and freshly ground black pepper
1 pound ground chuck
1 teaspoon olive oil

Steps:

  • In a small bowl, combine the brown sugar, onion powder, garlic powder, crushed red pepper, fennel seed, paprika, 1 teaspoon of salt, and 1/4 teaspoon pepper.
  • Break the beef into chunks and add to a large bowl. Sprinkle the seasoning evenly over the top then with your hand gently mix the beef until the seasoning is evenly distributed. Divide the mixture into 8 even portions and roll gently into balls. Place back in the bowl and refrigerate for at least 1 hour.
  • Remove the sausage from the refrigerator and one by one place each ball between 2 sheets of parchment paper. Using a meat pounder, flatten out the sausage balls into 1/8-inch thick patties.
  • In a large saute pan or griddle over medium-high heat, add the olive oil and cook the sausage patties in batches. Sear on one side until caramelized and golden on the bottom, about 2 minutes, then flip to cook just a minute more on the other side.

In this easy weeknight meal, a tangy lime- and ginger-spiked dressing cuts the richness of the meat and tempers the sweetness of the fruit. Serve this with some crusty bread to mop up the drippings.

2 cups pineapple chunks, in 1-inch pieces
2 tablespoons dark brown sugar
2 tablespoons extra-virgin olive oil
4 teaspoons finely grated fresh ginger (from 1 1/2-inch piece)
4 teaspoons finely grated lime zest (from 1 to 2 limes)
Kosher salt and black pepper
1/2 teaspoon ground allspice
1/8 teaspoon ground cayenne
1 large red onion, halved and thinly sliced into half-moons
1 pound sweet or spicy Italian sausage
1/2 cup cilantro leaves and tender stems, roughly chopped
1 tablespoon lime juice, plus more to taste
1 small garlic clove, finely grated or minced
1/2 teaspoon fresh ginger, finely grated or minced
Kosher salt and black pepper
3 tablespoons extra-virgin olive oil

Steps:

  • Heat oven to 450 degrees and, if you like, line a sheet pan with parchment paper.
  • In a medium bowl, toss together pineapple, sugar, oil, ginger, lime zest, 1 teaspoon salt, 1/2 teaspoon pepper, allspice and cayenne until well combined. Stir in three-quarters of the onions. (Reserve remaining onions for serving.)
  • Spread pineapple mixture onto the sheet pan in one layer. Nestle sausages among the pineapple mixture. Roast until fruit is caramelized and sausages are browned and cooked through, about 30 minutes. Halfway through baking, flip the sausages and toss the pineapple mixture.
  • Meanwhile, make the vinaigrette: In a small bowl, combine lime juice, garlic, ginger and a big pinch each of salt and pepper. Slowly whisk in oil. Taste and season with more salt and lime juice if you'd like.
  • Pull the pan out of the oven, drizzle vinaigrette over sausages and pineapple, and toss gently to combine. Garnish with reserved onion and cilantro, and serve.

One 1-pound bag sweet mini peppers
3 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon sugar
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
8 links (about 2 pounds) sweet or hot Italian sausage links

Steps:

  • Add peppers, olive oil, vinegar, sugar, granulated garlic, salt and pepper to a large skillet and toss to coat. Place the skillet over medium-high heat and saute the peppers until they start to get slightly tender, 3 to 5 minutes. Nestle in the sausages amongst the peppers and lower the heat to low, then cover and gently simmer until the sausages are about 145 degrees F, 5 to 10 minutes.
  • Meanwhile, preheat a grill or grill pan over medium-high heat. Remove the sausage from the skillet and grill until charred and the internal temperature reaches 165 degrees F, about 10 minutes. Place back in the skillet with the mini sweet peppers and serve.
