NUTTY OVEN-FRIED CHICKEN
Steps:
- Preheat oven to 350 degrees Fahreheit. Lightly coat a 9 x 13-inch baking dish with cooking spray. Set aside.
- Place milk in a shallow bowl. In another shallow bowl stir together biscuit baking mix, pecans, paprika, salt, poultry seasoning, and sage.
- Immerse chicken pieces in milk, transfer to pecan mixture and generously coat pieces. Place in prepared baking dish.
- Drizzle with melted butter and bake uncovered for 1 hour or until chicken is golden brown and juices run clear.

- Preheat oven to 350˚F (175˚C)
- Combine all seasoning ingredients and mix well. Add 2 tablespoons of the seasoning mixture to the Panko bread crumbs, set aside. (The extra seasoning can be used and stored for 1- 2 years!)
- Coat the chicken in flour, then egg, and finally seasoned Panko.
- Pour melted butter into the bottom of the 9x13 (22cm x 33cm) inch pan.
- Place each coated piece of chicken skin side down in the butter.
- Bake for 1 hour at 350˚F (175˚C) (times and temperatures may vary depending on the oven), flipping the chicken over halfway through.

- Drain pineapple, reserving juice. In a large saucepan, combine sugar, tomatoes, vinegar, onion, green pepper, soy sauce, ginger and pineapple. Simmer for 20 minutes. , Meanwhile, in a small bowl, combine cornstarch and the reserved pineapple juice until smooth; add to tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; set aside. , For the batter, in a small bowl, combine the flour, cornstarch, baking powder, baking soda, sugar and water until smooth. , In a deep-fat fryer, heat oil to 375°. Dip chicken pieces in batter; drop into oil and fry about 3-5 minutes on each side or until golden brown and juices run clear. Serve immediately with sweet-sour sauce.
