MASHED POTATO CAKES
My mother used to make too many mashed potatoes, just so she'd have the leftovers to make these cakes. Now I do, too. They're very simple and a great way to use up leftover mashed potatoes.

Steps:
- Mix all ingredients.
- If mashed potatoes are warm, chill for a couple of hours.
- Form into 4-6 patties about 1/2" thick.
- If mixture is too moist to form patties, add a little flour.
- Dip in flour.
- Saute slowly in butter, adding more as needed, until crispy on the outside and golden brown.
- Great with bratwurst, ham, meatloaf, or any meat that doesn't have gravy.
- Also good with bacon and eggs for breakfast.

CRISPY MASHED POTATO CAKES

- Peel and dice potatoes and add to a large pot. Cover with water and salt the water. Bring to boil over medium heat, and cook until tender. Drain the potatoes and return to hot pot to dry. Transfer potatoes to a bowl. Soften cream cheese in a microwavable bowl and microwave the cream cheese for 20 seconds on high. Add to the potatoes along with sour cream, scallions, zest, egg, salt and pepper, to taste. Mash potatoes to combine mixture.
- Heat the oil and butter in nonstick skillet over medium heat. Drop 2-inch mounds of potatoes into skillet and gently press down to flatten a bit. Crisp potatoes until deeply golden on each side, about 7 to 8 minutes total. Mixture makes 8 golden cakes.
KOREAN SWEET POTATO CAKE
A light cake you can find in Korea at Tous Les Jours and other bakeries. I haven't tried this recipe because I don't have an oven here, so try at your own discretion!

- Cream the butter and sugars in an electric mixer until light and fully combined. Add vanilla and eggs, one at a time, incorporating completely after each addition. Let egg and butter mixture blend until very light in color, about 4 minutes on medium/high speed.
- In a separate bowl add the flours, baking powder, and salt and whisk to combine.
- In a large measuring cup, measure the milk, add the mashed sweet potato and maple syrup and stir to combine.
- When the butter mixture is light and fluffy, add 1/3 of the flour mixture and mix well. Add 1/2 of the liquid ingredients and stir. Repeat with remaining flour mixture and liquid mixture, making sure to end with the dry ingredients. Make sure to scrape down the sides of the bowl when giving it a final mix.
- Pour the batter evenly between two 9 inch round cake pans that you've buttered and floured. Tap the pans lightly on the counter to remove any air bubbles and bake in a 350 degree oven for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool cakes in their pans for 15 minutes, then turn out on to wire racks to cool completely.
SUPER EASY SWEET POTATO CAKE (DOCTORED CAKE MIX)
I got the cake mix doctor book from the library and was inspired to create something on my own. It seems very easy to doctor a cake mix to make something terrific. If you like sweet potato casserole, you'll love this cake. Perfect for the holidays.

- Preheat oven to 350°F (or as instructed on cake mix box).
- Mash the sweet potatoes in a bowl.
- Add in liquid ingredients: Milk, eggs, oil and orange juice. Mix until blended.
- Add cake mix and apple pie spice. Mix on medium speed until smooth.
- Pour into pan of choice. I used a bundt.
SIMPLE SAVORY MASHED SWEET POTATOES
These simply mashed sweet potatoes taste so good it's hard to stop eating them! It's amazing what just a little butter, sour cream and a few scallions can do without all the frills we usually add. Then again, the beautiful sweet potato doesn't need much help. These make a wonderful addition to a hearty meal and pair well with most meats, especially pork. I pre-bake the potatoes in the oven because I think they have the best flavor, but I included steps for cooking them in the microwave as well. The dish will take from 25 minutes using the microwave to 65 minutes using the oven, not counting the cooling period post cooking.

- Wash and scrub the sweet potatoes; pat dry.
- To bake the sweet potatoes, preheat the oven to 400 degrees F. Place pricked potatoes on a foil-lined baking pan to catch any juices that leak, then into the preheated oven and cook for 45 minutes, or until the potatoes are fully cooked and tender, up to 1 hour.
- To cook the sweet potatoes more quickly, carefully prick each sweet potato about 6 times, place in microwave oven on a paper towel and cook on High 15 to 17 minutes, or until a knife is easily inserted into center of potatoes.
- When cool enough to handle, remove skin and any dark spots from potatoes. In a medium bowl, mash potatoes with butter and season with salt and pepper. Stir in sour cream and scallions until well mixed. Serve immediately sprinkled with reserved green onions on top.
