SWEET AND SPICY BACON BITES

- Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
- Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
- Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

- 1. Heat oven to 400 degrees.
- 2. Line a 10x15-inch jelly roll pan with foil. Spray with non-stick cooking spray. Set aside.
- 3. Sprinkle steak cubes evenly with pepper and seasoning. Wrap each with a bacon piece and secure with toothpicks. Place on foil-lined pan.
- 4. For glaze, in a small bowl, stir jelly, mustard, garlic, and cayenne together. Brush evenly over bacon-wrapped steak bites.
- 5. Bake for 15-20 minutes or until bacon is crisp and glazed.
- 6. Serve immediately. May serve with your favorite barbecue or dipping sauce if desired. Serves 4-6.

- Rub barbeque seasoning into beef tips until meat has an orange hue, 3 to 5 minutes. Cut beef into 1-inch cubes.
- Wrap each beef cube in a bacon slice and secure bacon slice with a toothpick.
- Heat a skillet over medium-heat. Working in batches, cook wrapped beef tips in hot skillet until beef is browned all over and bacon is crispy, 5 to 10 minutes.
