HONEY GARLIC PECAN CHICKEN

4 thin, boneless, skinless chicken breasts
1 teaspoon seasoned salt ((I used Lawry's))
2 tablespoons olive oil
1/4 cup all-purpose flour
4 tablespoons unsalted butter
1/2 cup chopped pecans
3 cloves garlic, minced
1/3 cup chicken broth
1/4 cup honey
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place chicken breast between two pieces of plastic wrap and pound to about 1/2-inch thick. Place on a tray and season both sides of the chicken with the seasoned salt. Set aside.
  • Heat the olive oil in a large heavy-bottomed skillet over medium heat.
  • Add the flour to a plate and lightly dredge the chicken in the flour. Add it to the oil. The chicken should sizzle when you put it in the skillet. If not, allow the oil to heat a little longer.
  • Sear the chicken for 4 to 5 minutes on each side or until golden brown and cooked through. Remove and set on a wire rack. Cover with foil.
  • Add the butter to the skillet and allow it to melt. Add the pecans and cook, stirring frequently, for about 3 minutes or until the pecans are fragrant. The butter will foam up. That's normal.
  • Add the garlic and cook, stirring constantly, for 1 minute. Add the chicken broth and stir, scraping the bottom of the skillet to get the browned bits (also called fond) off the bottom - there's lots of flavor there.
  • Reduce the heat to a simmer and add the honey, salt, and pepper. Cook, stirring frequently until the mixture thickens - about 5 minutes. Serve the chicken with the sauce spooned over the top.

2 (2 1/2-3 lb) roasting chickens
4 cups buttermilk
1 cup flour
3/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 cup butter
1/2 cup honey
1/2 cup pecans, chopped
vegetable oil (for frying)

Steps:

  • Wash chicken pieces, pat dry. Pour buttermilk into large bowl; add chicken. Cover and refrigerate 1 ½ hours.
  • Drain chicken. Combine flour, salt, garlic powder and cayenne. Dredge chicken in flour - shaking off excess. Let chicken stand 20 minute.
  • Melt butter over low heat. Stir in honey and bring to a boil. Add pecans and simmer glaze for 15 minutes.
  • Meanwhile heat oil and fry chicken until crisp. Drain on paper towels. Serve with pecan sauce and pour over.

I saw this on Facebook, and decided to try it out. I figured, since it only had a few ingredients that it could not turn out to bad. Wow, what a nice chicken dish! The chicken breasts were very moist and very tasty!.I loved to combined ingredients..This is my take on this wonderful dish. Although it said to use 4 chicken breast,...

2 chicken breast halves, skinless and boneless
4-5 clove garlic, minced
4 Tbsp brown sugar
1 Tbsp olive oil
1 Tbsp butter
additional herbs and spices as desired, i used a spice blend that i really liked
2 Tbsp "cabela's "open season" spice blend" - pecan honey
salt and pepper to taste

Steps:

  • 1. Oven: 450 Line a baking dish with aluminum foil and lightly coat with cooking spray or brush with olive oil. I used homemade pan grease (I use instead of cooking spray)
  • 2. Take the whole garlic cloves and place on a napkin and put in microwave and microwave for 20 to 30 seconds. The cloves will now slip out of their skins and you can chop and mince as needed...careful they are hot hot.
  • 3. In a small fry pan, saute chopped or minced garlic in the olive oil and butter till tender and then remove from heat.
  • 4. Stir in brown sugar and add your spices. I would recommend a season or spice blend that you like for your first try at this dish.
  • 5. Place the chicken breast in your prepared baking dish and cover with your garlic/brown sugar mixture. Salt and pepper to taste.
  • 6. Bake, uncovered for 30 to 35 minutes depending on the size of your chicken breast..I use a meat thermometer, and when it registers 180 degrees, it is done.
  • 7. I served this chicken dish with rice, peas and garlic bread. I had leftover macaroni salad also, but was too full to eat any, so I will have it the next day.
  • 8. Cabela's spice blends can be purchased at their stores or over the internet..This Pecan Honey seasoning is my favorite.
