This recipe take time but is very food. Serve anywhere you would serve regular relish

Number Of Ingredients 12

12 cucumbers - scrape and remove large seeds, do not
3 red peppers - remove seeds
3 green peppers - remove seeds
6 onions
3 carrots, pealed
3 green tomatoes
AFTER GRINGING ABOVE, PUT THE FOLLOWING IN A LARGE POT
6 c sugar
4 c apple cider vinegar
1 Tbsp mustard seed
1 Tbsp celery seed
1 Tbsp salt

Steps:

  • 1. Grind all the veggies above and Drain well. I use a Kitchen Aid grinder so it is much easier but still time-consuming. It took about 2 hours to cut and grind all the veggies.
  • 2. Bring to a boil and cook for 1 hour.
  • 3. Can in hot jars. Hot water bath, 10 minutes. Recipe normally makes 9 pints, but I got 11 this time.

500 g white fish fillets, finely diced
2 tablespoons red curry paste
2 tablespoons fish sauce
1 tablespoon cornflour (cornstarch)
1 egg
1/2 cup green beans, finely chopped
1/4 cup green onion, finely chopped
vegetable oil, for deep-frying
1/2 cup sweet chili sauce
1/2 cup spicy cucumber relish

Steps:

  • In a food processor, mince fish to a paste.
  • Add curry paste, fish sauce, cornflour and egg. Combine well.
  • Transfer to a bowl and mix in beans and onions.
  • Wet hands and shape mix into flat round cakes approximately 5cm in diameter and 1cm thick.
  • Deep-fry in vegetable oil until golden brown, about 5-7 minutes.
  • Drain on paper towel.
  • Serve with sweet chili sauce and cucumber relish.

1/2 cup rice vinegar
1 cup sugar
1 teaspoon salt
3 tablespoons water
1 small onion, finely diced
1 small carrot, finely chopped
1 green cucumber, finely chopped
1 teaspoon chili paste (optional)
1/8 cup fresh coriander leaves, chopped

Steps:

  • Boil vinegar, sugar, salt and water in a saucepan for 1 minutes.
  • Mix onion, carrot and cucumber pieces in a serving bowl.
  • Pour just vinegar mixture over vegetables to cover.
  • Taste to see if extra vinegar, sugar or salt is needed to balance flavor.
  • For those who prefer spicy relish, in small amounts add chili paste.
  • Garnish with chopped corriander.
  • Serve with satays, fish cakes or crispy deep-fried snacks.

10 cups chopped cucumbers
4 cups onions
5 Tbsp. salt
2 1/2 cups white vinegar
6 cups sugar
2 tsp. tumeric
1/2 tsp. black pepper
2 Tbsp. cornstarch (maybe more, depending on how thick you want it)
2 tsp. celery seed
4 sweet peppers

Steps:

  • ~Mix cucs, onions and salt. Let stand overnight ~Mix well, then drain ~Rinse in cold water, drain again ~Place in a large pot with remaining ingredients and boil ~Put in jars & bath for 30 minutes to seal
