THAI PORK PATTIES WITH SWEET CHILLI & NOODLES



Thai pork patties with sweet chilli & noodles image

250g minced pork
1 garlic clove , finely chopped
3 lemongrass stalks, outer layers removed and the bottom thirds of the stalks finely chopped
1 tbsp fish sauce
handful coriander , chopped
1 tbsp sesame oil
1 tsp sugar
100g fine rice noodle
4 spring onions , chopped
sweet chilli dipping sauce , to serve

Steps:

  • Heat the grill. In a bowl, mix together the pork, garlic, lemongrass, fish sauce and half the coriander. Season with pepper. Mix well and form into 8 patties. Rub each one with the oil and a sprinkling of sugar, then place on a rack in a baking tray.
  • Grill the patties for 3 mins each side until golden brown. Meanwhile, in a large bowl, cook the rice noodles following pack instructions. Drain the warm noodles and serve with the patties, chopped spring onions, remaining coriander and a drizzle of sweet chilli dipping sauce.

This is from the Easy Thai Cooking recipe book. I always use this recipe to use up leftover roast pork. It has become quite a favourite in our house and is simple to make. I also substitute fresh chilli with bottled chilli to save time and a special shopping trip. Without the coriander it is not quite the same. I also double the sauce ingredients to add more flavour to the rice.

2 tablespoons oil
2 onions, thinly sliced
1 red chile, seeded and chopped
500 g lean pork, thinly sliced (or left over pork roast thinly sliced)
1/2 cup brown sugar, lightly packed
1/2 cup water
1 tablespoon fish sauce
fresh coriander, chopped

Steps:

  • Heat oil in large frying pan.
  • Add onions, chilli and pork and fry until golden brown, about 5 minutes.
  • Add brown sugar, water and fish sauce and bring to the boil.
  • Lower heat and simmer for 4 to 5 minutes or until sauce is thick and syrupy, stirring while cooking.
  • Sprinkle with coriander and serve with steamed rice.

Just love sticky sweet chilli recipes and well have a fair bit of pork in the freezer, so hoping to try this soon, from recipe+ NOTES - microwave rice is precooked and just needs to be reheated. Replace pork with chicken or firm tofu.

1 1/2 tablespoons vegetable oil (or peanut oil)
350 g pork steaks (scotch steaks cut into 2.5cm pieces)
2 garlic cloves (crushed)
1 chili (fresh long red seeded sliced optional)
3 teaspoons ginger (fresh grated)
1/3 cup sweet chili sauce
1 tablespoon soy sauce
1 red capsicum (small finely chopped)
450 g brown rice (90 second microwave packet)
370 g bok choy (baby 1 bunch trimmed coarsely chopped)
1/2 cup Thai basil (leaves)

Steps:

  • Heat a wok or large frying pan over moderately high heat and add half the oil and swirl to coat surface and stir fry pork for 5 to 6 minutes or until browned.
  • Add garlic, chilli and ginger and stir fry for 1 minutes or until fragrant and then add sauces and stire fry for 1 minute or until pork is cooked and then remove from wok.
  • Add remaining oil to wok, heat over high heat and add capsicum and rice and stir fry for 3 to 4 minutes or until heated and then add the bok choy and stir fry for 1 to 2 minutes or until heated and then return pork, cooking juices and 1/3 cup of the basil leave to work and stir fry until heated.
  • Spoon into shallow serving bowls and serve topped with remaining basil.

2 teaspoons peanut oil
400 g pork mince
4 garlic cloves, crushed
1/2 cup brown sugar
1/3 cup fish sauce
4 kaffir lime leaves, shredded
1 cup coriander leaves
1/2 cup coarsley chopped roasted unsalted peanuts
2 tablespoons fried shallots, plus extra to serve
1 long red chili, thinly sliced
8 iceberg lettuce leaves
lime wedge, to serve

Steps:

  • Heat oil in a wok or large frying pan on high. Stir-fry pork and garlic for 4-5 minutes, breaking up lumps with the back of a spoon, until browned.
  • Add sugar, fish sauce and leaves. Simmer for 3-4 minutes or until thickened slightly.
  • Add coriander, peanuts, shallots and chilli. Stir-fry for a further 3-4 minutes.
  • Spoon into lettuce cups. Sprinkle with extra fried shallots. Serve with lime wedges.

Steps:

  • Preheat oven to 200℃.
  • Grab an oven tray and line it with greaseproof paper. In a small bowl add the olive, salt & pepper and mix together.
  • Place the pork belly on they tray and brush the oil on the pork slices on the front and back. Place in the oven for 25mins, after 25mins turn over and cook for 10mins on the other side.
  • After the 10mins take out of the oven and brush the sweet chilli sauce over one side of the pork and place back in the oven for 2mins then take out and brush the other side and pop in the oven for a final 2mins.
  • Take out and serve with long grain rice, garnish with spring onion and serve. Enjoy
