Make hot wings with sriracha and serve with a chili-lime dip.

3/4 cup Asian sweet chili sauce
1/2 cup mayonnaise
Juice of 1 lime
Kosher salt
Vegetable oil, for the oiling the baking sheets
4 pounds split chicken wings, wingtips removed
Kosher salt and freshly ground black pepper
2 sticks (1 cup) unsalted butter, melted
3/4 cup sriracha
Celery sticks, for serving, optional

Steps:

  • Whisk the chili sauce, mayonnaise, lime juice and 1/2 teaspoon salt together in a small bowl. Cover and refrigerate until ready to serve.
  • Preheat the oven to 425 degrees. Generously oil 2 rimmed baking sheets.
  • Toss the wings with 2 teaspoons salt and a few grinds of pepper in a large bowl and divide them between the 2 prepared baking sheets, spreading them out into a single layer. Bake until very crispy, about 55 minutes.
  • Whisk the melted butter and sriracha together in a large bowl. Transfer the baked wings to the bowl and toss to coat. Serve with the dipping sauce and celery sticks if using.

Asian Shrimp and Ginger Fritters with Sweet Chili Dipping Sauce image

These tasty morsels are always popular as an appetizer and team well with the sweet chili dipping sauce. Add more chilies to the sauce if you like it hot! You can obtain fish sauce (and also a sweet chili dipping sauce, if you prefer not to make your own) in an Asian food store. The fritters can also be served with my Thai Sweet Chili Sauce, posted separately.

1 lb uncooked medium shrimp, peeled and de-veined
2 1/2 cups coarse fresh breadcrumbs
1/2 cup coconut milk
2 1/2 tablespoons finely chopped ginger
1/2 cup cilantro leaf, chopped
1 egg
4 teaspoons fish sauce (nam pla)
vegetable oil (for deep frying, preferably peanut oil)
1/4 cup rice wine vinegar
2 tablespoons fish sauce
1/4 cup hot water
2 tablespoons sugar
1 kaffir lime, juiced
1 teaspoon minced garlic
1 teaspoon finely chopped hot red chile (or 1 teaspoon sambal oelek)

Steps:

  • Shrimp and Ginger Fritters: Place the breadcrumbs and coconut milk together in a bowl, and set aside.
  • Place the shrimp meat, ginger, cilantro, egg and fish sauce into a food processor bowl, and pulse until the mixture is combined.
  • It is important not to over-mix or otherwise it will turn into a paste!
  • Add the breadcrumbs, which by now should have absorbed all the coconut milk, and pulse until just blended.
  • Heat the vegetable oil over high heat, or to 350 degrees F (180 C) in a deep-fryer.
  • Drop rounded tablespoons of the mixture into the hot oil, and cook until golden brown on all sides, about 2 minutes.
  • Do this in batches.
  • As the fritters cook, remove from the oil with a slotted spoon, drain on kitchen paper, and keep warm in a low oven.
  • Sweet Chili Dipping Sauce: Place all ingredients in a blender and whizz until blended and sugar is dissolved.
  • Serve in a small bowl (it yields 1 cup) to accompany the Asian Shrimp and Ginger Fritters.

1/4 cup buttermilk, shaken
1/4 cup sour cream

Zest and juice of 1 lime

One 10-ounce bag sweet chili flavor tortilla chips or your favorite flavor chips
3 large eggs
1 tablespoon sriracha
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 pounds boneless skinless chicken breasts, cut lengthwise into 1-inch strips
Vegetable oil, for frying
Crudites, such as celery, peppers and endive, for serving

Steps:

  • For the sriracha ranch dipping sauce: In a medium bowl, whisk together the mayonnaise, buttermilk, sour creamcilantro, parsley, scallions, sriracha, sugar and lime zest and juice until smooth. Season with salt and pepper.
  • For the chicken: Crumble the chips into a food processor and process until finely ground. (You should have about 3 cups crumbs.) Spread the crumbs in a large shallow bowl.
  • Beat the eggs and sriracha in a second shallow bowl, and combine the flour, 1/2 teaspoon salt and some pepper in a third shallow bowl.
  • Sprinkle the chicken strips with some salt and pepper.
  • Heat about 1 inch vegetable oil in a large cast-iron skillet until a few crumbs sizzle on contact (350 to 360 degrees F).
  • Dredge the chicken in the flour, then the egg, then the crumbs. Fry, in batches, until crisp and golden, about 4 minutes per batch. Drain on paper towels.
  • Sprinkle with salt and serve warm with the sriracha ranch dipping sauce and crudites.

3 ounces vietnamese cellophane noodles, cooked according to pkg. directions
2 cups bean sprouts
2 carrots, thinly sliced
1 large beet, thinly sliced
1 fresh red chili pepper, cut into circles
1/4 cup fresh cilantro, chopped
3/4 cup salted peanuts, chopped
2 teaspoons sesame oil
1 lime, juice of
sea salt & freshly ground black pepper, to taste
1 teaspoon sugar
20 (8 inch) round rice paper sheets
20 cooked medium shrimp, tails off, halved lengthwise
40 mint leaves
1/4 cup rice wine vinegar
2 tablespoons fish sauce
1/4 cup hot water
2 tablespoons sugar
1 lime, juice of
1 teaspoon garlic, minced
1 teaspoon sambal oelek (red chili paste)
2 tablespoons grated carrots
2 tablespoons grated daikon radishes

Steps:

  • Put the cooked cellophane noodles, veggies, cilantro and peanuts in a bowl and toss with the sesame oil and lime juice. Season with the salt and pepper to taste.
  • In a large shallow bowl, dilute the sugar in 3 cups of hot water and stir.
  • One at a time, immerse the rice paper spring roll wrappers in the hot water for 10 seconds and then place them on a damp towel. Keep them covered while you work to prevent them drying out and curling up. (The rice paper is very delicate so don't soak them any longer than 10 seconds.).
  • To form the rolls: lay a rice paper wrapper on a flat surface. Take a small amount of the cellophane noodle & veggie mixture and lay it across the bottom third. Use less filling than you think you should; if you overstuff the wrapper it will tear. Carefully fold the bottom of the wrapper up to cover the filling then fold in the left and right sides, then tuck and roll it over once.
  • Lay 2 pieces of shrimp on top, then tuck and roll it over again.
  • Lay 2 mint leaves on top and then tuck and roll it over to close the whole thing up. The shrimp and mint leaves should show through the transparent rice paper. Arrange the finished rolls on a platter and cover with a damp cloth.
  • To prepare sauce: Puree the rice wine vinegar, fish sauce, hot water, sugar, lime juice, garlic and sambal oelek in a blender until all combined. Pour into a serving bowl and add the grated carrot and radish mix.
  • Serve the shrimp rolls with the sweet chili dipping sauce.

This recipe is medium hot, so use the chilis according to your taste! I also use it on my sushi, egg rolls, and spring rolls, and it is incredible!

2 tablespoons sambal oelek or 2 tablespoons chili peppers
1 cup rice vinegar
2 teaspoons salt
1/3 cup sugar
2 teaspoons fresh garlic, minced

1/4 cup water

Steps:

  • In a small pan add the first 6 ingredients together, over low heat.
  • Stir constantly until mixture thickens to a syrupy consistency, about 5 minutes once it starts to simmer. It reduces quite a bit.
  • Mix well, and let sit until hot.
  • Mix the cornstarch and water together in a small bowl and add to the sauce. Mix well. Let cook until it starts to thicken, then remove from heat.
  • Let cool, and use in any of your Thai recipes asking for Sweet Chili Sauce.

2 cups bean sprouts
2 carrots, julienned
1 large beet, julienned
1 fresh red chile, cut in circles
2 handfuls fresh cilantro, hand-torn
3/4 cup chopped unsalted peanuts
2 teaspoons dark sesame oil
1 lime, juiced
Sea salt
20 (8-inch) round rice paper wrappers
40 mint leaves
1/4 cup rice wine vinegar
2 tablespoons fish sauce
1/4 cup hot water
2 tablespoons sugar
1 lime, juiced
1 teaspoon minced garlic
1 teaspoon red chili paste, such as sambal

Steps:

  • Put the cellophane noodles, vegetables, cilantro and peanuts in a large bowl; toss with sesame oil and lime juice to give the filling some flavor; season with salt and pepper.
  • Pour 3 cups of hot, not boiling water in a large shallow bowl. One at a time, immerse the rice paper wrappers in the hot water for 10 seconds to soften, then place on a slightly damp towel. The rice paper is very delicate, don't soak them any longer or they will break apart. Keep them covered while you work to prevent them from drying out and curling.
  • To form the rolls, lay a rice paper wrapper on a flat surface. Grab a small amount of the cellophane and vegetable mixture and lay it across the bottom third. Use less filling than you think you should, if you overstuff the wrapper it will tear. Carefully fold the bottom of the wrapper up to cover the filling. Fold in the left and right sides, then tuck and roll it over once. Lay 2 mint leaves on top, then tuck and roll it over to close the whole thing up like a tight cigar.   • Sweet Chili Dipping Sauce:
  • In a blender, puree the rice wine vinegar, fish sauce, hot water, sugar, lime juice, garlic, and chili paste until combined. Pour into a small bowl and serve with the summer rolls.

1 pound medium or large shrimp, shelled and de-veined
3 pieces scallions, thinly sliced
2 cloves medium garlic cloves, minced or grated
1 pieces jalapeño pepper, seeded and minced
1 handful fresh cilantro leaves and tender stem
1 piece Finely grated zest of 1 lime
1 pinch Kosher salt
1 tablespoons mayonnaise
2 tablespoon cornstarch
1 piece large egg white
1/4 - 1/2 cup panko-style breadcrumb
1 Peanut or canola oil, for frying
1 sweet chili sauce

Steps:

  • 1. Coarsely chop shrimp into 1/2-inch pieces. Set aside. Reserve a few tablespoons of sliced scallion greens for serving.
  • 2. Combine garlic, jalapeño, remaining scallions, cilantro, lime zest, and a large pinch of salt in the bowl of a food processor. Pulse until everything is finely minced. Add half of the shrimp, the mayo, the cornstarch, and the egg white. Pulse until the mixture forms a coarse paste, about 5 or 6 pulses. Add the remaining shrimp and pulse two or three times to combine everything. Some of the shrimp will be chunkier.
  • 3. Transfer the mixture to a bowl and add 1/4 cup of the panko breadcrumbs. Fold in with a spatula or your hands. The mixture should be soft and should just hold its shape if you form a ball. If it's too soft, add more breadcrumbs a little at a time until a ball just holds together. It will stiffen up more when it gets cold. Chill mixture for at least 30 minutes and up to a day.
  • 4. Once chilled, use wet hands and a tablespoon (or portioning scoop) to form the mixture into bite-sized patties. Transfer to a large plate as you go. When all the patties are formed, heat a few tablespoons of oil in a large skillet over medium high heat until shimmering. Fry patties in batches until golden brown and cooked through, turning once, 3 to 4 minutes total.

Just the sauce alone from this recipe is so good! These are so easy to make no pre-cooking just mix, fill the wrapppers then roll and fry and no cooking the sauce either! This recipe should make about 14-15 spring rolls, I strongly suggest to double the recipe, these are very good! To save time prepare the filling up to a day in advance and refrigerate.

1/2 cup water
1/2 cup rice wine vinegar

1 large egg, lighty beaten
1/2 lb ground pork
1/4-1/2 teaspoon cayenne (optional add in only if you like spicy)

1 (8 ounce) can bamboo shoots, well drained and minced
1 tablespoon fresh minced garlic (can use a little more)
2 large green onions, finely chopped
2 tablespoons minced fresh ginger
1 1/2 tablespoons soy sauce
1/2 teaspoon salt (or to taste)

1 (12 ounce) package spring roll wrappers
1 egg, lightly beaten for brushing

Steps:

  • For the sweet chili sauce; in a glass bowl mix all ingredients until well blended and chill until ready to use.
  • For the spring rolls;In a bowl stir together the chopped shrimp, 1 egg, ground pork, chestnuts, bamboo shoots, garlic, onions, ginger and soy sauce; mix well and season with salt and pepper.
  • Place about 1 semi-heaping tablespoon down the center of each spring roll wrappper.
  • Fold the top corner of the wrapper over the filling (tucking the tip of the corner under the filling).
  • Fold the left and right corners over filling.
  • Lightly brush the remaining corner with the remaining egg.
  • Tightly roll the filled end toward remaining corner then press gently to seal.
  • Repeat using all the mixture and spring roll wrappers.
  • In a medium heavy saucepan, pour about 2-inches of oil inches.
  • Heat the oil to 350 degrees.
  • Carefully drop a few spring rolls in at a time and fry until golden (about 6 minutes) turning to brown and cook on all sides (don't fry more than 5-6 spring rolls at a time).
  • Place on paper towels to drain.
  • Serve with prepared chilled sweet chili sauce.

The best recipe I have found for coconut shrimp. The dipping sauce is a perfect Indonesian- inspired condiment. Ketchup manis is a sweet indonesian sauce. You can substitute 3 Tbs. soy sauce mixed with 1 Tbs. brown sugar if you can't find ketchup manis in your local asian food store.

1 cup cornstarch
4 egg whites, lightly beaten
1 1/4 cups unsweetened dried shredded coconut
2 1/2 cups peanut oil (for frying) or 2 1/2 cups vegetable oil (for frying)
3 tablespoons ketchup, manis
1/8 teaspoon dried red chili pepper
1 garlic clove, chopped
1 teaspoon fresh ginger, grated
1 tablespoon fresh lime juice
2 tablespoons sugar

Steps:

  • Wash and dry the shrimp on paper towels.
  • Put cornstarch, egg whites and coconut into three separate bowls.
  • Dip shrimp into the cornstarch.
  • Shake off the excess.
  • Dip into the egg white.
  • Dip into the coconut, pressing into the shrimp.
  • Heat oil and fry the shrimp until golden brown ( only a couple of minutes).
  • Note: The shrimp can be coated 1 hour before frying and kept in the refrigerator. After frying, they can be kep warm in a preheated oven at 300 degrees for up toe 30 minutes.
  • Place all of dipping sauce ingredients in a food processor or blender and puree until fairly smooth. The mixture may also be chopped and mixed by hand.

1 pound (500g) medium or large shrimp, shelled and de-veined
3 scallions, thinly sliced
2 medium garlic cloves, minced or grated
1 jalapeño pepper, seeded and minced
Large handful fresh cilantro leaves and tender stems (plus extra for garnish)
Finely grated zest of 1 lime
Kosher salt
1 tablespoon (15ml) mayonnaise
2 tablespoons (20g) cornstarch
1 large egg white
1/4 to 1/2 cup (100 to 200g) panko-style breadcrumbs
Peanut or canola oil, for frying
1 recipe Sweet Chili Dipping Sauce (see note)

Steps:

Coconut Chicken with Sweet Chili Dipping Sauce Recipe - (4.6/5) image

Ingredients:
2 lbs. boneless, skinless chicken breasts
2 large eggs
1/4 cup coconut milk (optional)
1/2 cup all purpose flour
1 cup panko bread crumbs
1 cup shredded coconut
1/2 tsp salt
1/2 cup vegetable oil, divided
1 cup sweet chili sauce

Steps:

  • Directions STEP 1: Cut off any extra fat globules from your chicken breasts. Cut each breast into 6 strips, diagonally to prevent the end strips from being really short. See photos below. STEP 2: Prepare your breading station by gathering three bowls. In the first bowl combine the flour and salt. In the second bowl, combine the eggs and coconut milk. Whisk together until well combined. In the third bowl, stir together the panko bread crumbs and shredded coconut. STEP 3: Place 1/4 cup of vegetable oil in a large heavy duty skillet and heat over medium/high heat until it is just below smoking. You can test the heat by throwing in a little bit of flour. When it is hot enough, the flour will sizzle and create a lot of bubbles. STEP 4: While the oil is heating, dredge the chicken strips. First, coat each strip in the flour and salt mixture. Then dip each into the eggs/coconut milk and finally coat each in panko and shredded coconut. I find it easiest to coat all of them in the flour then go back and then do the egg wash and panko/coconut for each before moving onto the next. STEP 5: After breading the strips, the oil should be hot enough. Place about 6 strips in the pan at once. There should only be one layer in the pan and there should be about an inch between each strip. If you over crowd the pan it will get too cold and the strips will soak up a lot of oil instead of frying. Fry the strips for 2-3 minutes on each side or until they are golden brown and crispy. Place them on a plate with paper towel to drain and move on to the next batch. After a couple of batches you may need more oil so you can add the second 1/4 cup to the pan. Allow the oil to come up to temperature before frying the next batch (2-3 minutes). Because the strips are thin, they should be cooked through by the time both sides are browned. You can tell by the texture of the chicken; it should be stiff when pressed. If you cut your strips thicker, you will need to bake off the chicken after frying to make sure the insides are cooked through. STEP 6: When all of the strips are done frying, serve immediately with sweet chili sauce to dip in. I garnished mine with a little bit of chopped cilantro. VIETNAMESE SHRIMP ROLLS WITH SWEET CHILI DIPPING SAUCE



Vietnamese Shrimp Rolls with Sweet Chili Dipping Sauce image

3 ounces Vietnamese cellophane noodles, cooked according to package directions
2 cups bean sprouts
2 carrots, thinly sliced
1 large beet, thinly sliced
1 fresh red chile, cut into circles
1/4 cup chopped fresh cilantro
3/4 cup chopped salted peanuts
2 teaspoons sesame oil
Juice of 1 lime
Sea salt and freshly ground black pepper
1 teaspoon sugar
20 (8-inch) round rice paper wrappers
20 cooked medium shrimp, tails off, halved lengthwise
40 mint leaves
Sweet Chili Dipping Sauce
1/4 cup rice wine vinegar
2 tablespoons fish sauce
1/4 cup hot water
2 tablespoons sugar
Juice of 1 lime
1 teaspoon minced garlic
1 teaspoon red chili paste, such as sambal
2 tablespoons grated carrot
2 tablespoons grated daikon radish

Steps:

  • Put the cellophane noodles, vegetables, cilantro, and peanuts in a bowl; toss with the sesame oil and lime juice to give the filling some flavor; season with salt and pepper. In a large shallow bowl, dilute the sugar in 3 cups of hot water and give it a stir. One at a time, immerse the rice paper spring roll wrappers in the hot water for 10 seconds and then place on a damp towel. The rice paper is very delicate; don't soak them any longer or they will break apart. Keep them covered while you work to prevent them from drying out and curling. To form the rolls, lay a rice paper wrapper on a flat surface. Grab a small amount of the cellophane noodle and vegetable mixture and lay it across the bottom third. Use less filling than you think you should; if you overstuff the wrapper it will tear. Carefully fold the bottom of the wrapper up to cover the filling. Fold in the left and right sides, then tuck and roll it over once. Lay 2 pieces of shrimp on top, then tuck and roll it over again. Lay 2 mint leaves on top and then tuck and roll it over to close the whole thing up like a tight cigar. The shrimp and mint leaves should show through the transparent rice paper. Arrange the finished rolls on a platter and cover with a damp towel.
  • In a blender, puree the rice wine vinegar, fish sauce, hot water, sugar, lime juice, garlic, and chili paste until combined. Pour into a serving bowl. Add the grated carrot and radish and mix. Serve the shrimp rolls with the sweet chili dipping sauce. These also make a terrific light lunch.

5 tablespoons white wine vinegar
2 garlic cloves, minced
2 tablespoons honey
2 teaspoons chopped red chilis, or 1 small mild red chili, minced finely
1 teaspoon arrowroot powder
1 teaspoon grated ginger
1/4 teaspoon salt
1/4 teaspoon cayenne pepper, optional

Steps:

  • Mince the garlic finely and use a microplane grater to grate down the ginger (or mince very finely). In a small saucepan, combine all the ingredients: the vinegar, garlic, honey, red chilis, arrowroot, ginger, salt and cayenne pepper (if desired). Stir so the arrowroot is dissolved. Bring the ingredients to a boil and cook briefly (1 min or less) until the sauce thickens. Cool and serve alongside your favorite meats for dipping. It's be super tasty with chicken, as a sauce on top of salmon or drizzled on top of stir-fried veggies.

1/2 Cup Rice Vinegar
1/2 Cup Brown Sugar
3 T Soy Sauce
3 T Garlic, minced
1/4 t Crushed Red Pepper Flakes

Steps:

  • Simmer all ingredients in a saucepan over medium heat. Cook until reduced by half, about 20 minutes. Serve at room temperature.
