APRICOT SHRIMP KABOBS



Apricot Shrimp Kabobs image

Grilled shrimp kabobs, with apricot glaze, are a delicious dinner your family will love.

1/2 c apricot jam
3 T white wine vinegar
1 T Dijon mustard
1 tsp salt
1/2 tsp pepper
1 tsp honey
1 lb shelled uncooked shrimp

Steps:

  • Mix together apricot jam, vinegar, mustard, salt, pepper, and honey in a small bowl
  • Shell, clean, and devein shrimp
  • Skewer shrimp onto kabobs
  • Slather both sides with 3/4 of the apricot mixture
  • Preheat the grill to a medium heat.
  • Oil grill grate to prevent sticking.
  • Place shrimp on grill and cook for 1 to 2 minutes.
  • Turn and continue grilling for 30-45 seconds. May take longer if shrimp are large
  • Test for doneness. Cut a shrimp in half, shrimp should be pink and opaque.
  • Brush on a little more apricot mixture
  • Serve.

Wooden skewers, soaked in water for 30 minutes
6 shrimp, deveined
1/4 cup favorite seafood seasoning mix
8 ounces Italian dressing
2 ounces Worcestershire sauce
2 ounces honey

Steps:

  • Preheat a grill.
  • On wooden skewers, place deveined, curled shrimp, and season with your favorite seafood seasoning mix.
  • In bowl, mix Italian dressing, Worcestershire sauce, and honey. Heat lightly in the microwave.
  • Cook kabobs over medium/hot flame. When shrimp start to turn pink baste with Italian dressing mix and turn. Repeat every 3 to 4 minutes until

1/2 cup canola oil
1/4 cup lime juice
1/4 cup packed light brown sugar
1/4 cup rice vinegar (unseasoned)
1/4 teaspoon red pepper flakes
Zest of 1 lime, plus 2 limes, cut into wedges
2 cloves garlic, smashed
1 tablespoon grated peeled ginger
1/4 cup chopped fresh basil leaves
Pinch of salt
1 1/2 pounds large shrimp (16 to 20 per pound), peeled and deveined
Olive oil, for the grill
1 teaspoon sweet chili sauce
1 cup peach preserves
1/4 cup hot Chinese mustard

Steps:

  • Whisk together the canola oil, lime juice, brown sugar, vinegar, red pepper flakes, lime zest, garlic, ginger, basil and salt in a bowl. Put the shrimp in a large zip-top plastic bag and pour in the marinade. Refrigerate 20 minutes.
  • Meanwhile, make the sauce: Whisk the sweet chili sauce, peach preserves and mustard in a bowl.
  • Preheat a grill to medium high. Oil the grill rack. Thread the shrimp and lime wedges onto skewers. Grill 1 1/2 minutes on each side. Serve with the sauce.

¼ cup soy sauce
5 cloves garlic, finely chopped
½ tablespoon ground black pepper

1 link cured Portuguese chourico sausage, cut into 1/2-inch slices
8 skewers

1 pound frozen shrimp, thawed and peeled
¼ cup olive oil
1 tablespoon minced garlic
2 teaspoons lemon juice
¼ teaspoon pepper
1 pinch finely chopped parsley

Steps:

  • Rinse and dry shrimp.
  • Whisk olive oil, garlic, lemon juice, pepper, and parsley together in a bowl and pour into a large resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Lightly coat metal skewers with cooking spray.

1 tablespoon lemon juice
1 cup molasses
1 tablespoon chopped fresh basil
2 tablespoons vegetable oil
1 tablespoon mustard
3 tablespoons honey
1 teaspoon ground cloves
1 tablespoon ranch-style salad dressing
1 teaspoon chili powder
1 tablespoon minced fresh garlic
4 pounds large shrimp, peeled and deveined

Steps:

1/3 cup hickory-smoked barbecue sauce
1/3 cup apricot preserves
1/4 teaspoon crushed red pepper
4 slices turkey bacon, each cut lengthwise into 6 strips
1 can (8 ounces) whole water chestnut, drained
1 pound uncooked peeled deveined large shrimp, thawed if frozen
Hot cooked rice, if desired

  • 1. Set oven control to broil. Mix barbecue sauce, preserves and red pepper set aside. 2. Wrap strip of bacon around each water chestnut. ⅓ cup orange liqueur (such as Grand Marnier®)
2 tablespoons unsalted butter
1 tablespoon olive oil
1 red bell pepper, cored and sliced into 1/4-inch strips
½ cup thinly sliced green onions, with some of the green tops
1 large clove garlic, minced
1 pound jumbo shrimp, peeled and deveined
2 tablespoons water
1 tablespoon fresh lemon juice
1 tablespoon soy sauce
2 teaspoons cornstarch
⅛ teaspoon freshly ground black pepper

Steps:

  • Combine apricots and orange liqueur in a small bowl; let stand for at least 15 minutes.
  • Heat butter and olive oil in a large skillet over medium-high heat. Add bell pepper and green onions; stir constantly for 2 minutes. Add garlic and cook until fragrant, about 1 minute. 1 tablespoon reduced-sodium soy sauce
1 teaspoon sesame seeds, toasted
1 medium green pepper, julienned
1 medium sweet red pepper, julienned
1/4 cup sliced green onions
1 garlic clove, minced
2 teaspoons canola oil
1/2 pound uncooked medium shrimp, peeled and deveined
1/2 cup sliced water chestnuts, drained
1-1/2 cups hot cooked rice

Steps:

  • In a large bowl, combine the cornstarch, broth, preserves, soy sauce and sesame seeds until blended; set aside. , In a large nonstick skillet or wok, stir-fry the peppers, onions and garlic in oil for 5 minutes or until crisp-tender. Add shrimp and water chestnuts; stir-fry until shrimp turn pink. Stir broth mixture; add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve over rice.
