Time 35m

Number Of Ingredients 13

1 lb Peaches ((semi-ripe) chopped )
1 cup White sugar
1 red chili (fresh)
1 tbsp Ginger sliced
1/2 tsp Lemon zest
1 Star anise
1/2 bay leaf
2 Cardamom pods
3 Cloves
5 back peppercorns
2 tbsp Vinegar
1/4 tsp Salt
1 tsp Chilly flakes ((optional))

Steps:

  • Peaches - Sore an X at the bottom of the peaches and drop them in hot boiling water. Blanch them for 3 to 5 minutes. Let cool for 5 minutes then peel and roughly chop them.Pro tip - scoring an X at the bottom will make it easier to peel them as the skin shrinks.
  • Combine - In a medium saucepan or small skillet over medium heat add all the ingredients except chili flakes. Pro tip - I find adding the chili flakes later preserves the color of the peaches.
  • Boil - Cook on medium until all the sugar has dissolved then bring to a boil and let it boil for 2 minutes.Pro tip - At first the mixture will appear dry. As the sugar melts it will become thick and syrupy.
  • Mash - Use a potato masher to mash the fruit. Reduce the heat to a low simmer or medium-low. Pro tip - mashing the fruit will help squeeze all the juice from the fiber of the fruit.
  • Simmer - Continue to cook on a low simmer for 10 to 20 minutes. Then add the chili flakes and continue to simmer for another 10 minutes until thick. Pro tip - to make it less spicy omit the chili flakes. You can even throw in a handful of raisins for added sweetness.
  • Cool - when most of the moisture has dried out, cool in the pan for 10 minutes then transfer to a sterilized mason jar and store in the fridge.

Time 50m

Number Of Ingredients 6

1 small red onion sliced
3 tbsp brown sugar
2 tbsp lemon juice (or cider vinegar)
½ tbsp crushed chili flakes (I used 1 tbsp because we love it extra spicy)
¼ tsp kosher salt (or more as needed)
1 ½ lb fresh peaches (cubed into pieces (about 6 -7 peaches))

Steps:

  • Place the onion, sugar and lemon juice in a saucepan. Heat over medium-heat while stirring to melt the sugar.

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 10

Peanut oil, for frying
Kosher salt
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
3 pounds chicken wings, cut at joint
1/2 stick (2 ounces) butter
2 cloves garlic, chopped
1/2 cup peach preserves
1/4 cup hot sauce (recommended: Tabasco)
1 tablespoon soy sauce

  • Preheat deep fryer with peanut oil to 350 degrees F.
  • Mix the 2 teaspoons salt, smoked paprika, and garlic powder together in a small bowl.
  • Add chicken wings and toss to coat.
  • Melt the butter in medium saucepan over medium heat with the garlic.
  • Stir in peach preserves, hot sauce, and soy sauce. Cook until syrupy and thick, about 5 minutes. Transfer to a large bowl.
  • Add the wings to the deep fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You will need to do this in 2 batches so you don't overcrowd your fryer.

PEACH-CHILE JAM

Peach-Chile Jam image

This jam is reminiscent of red pepper jelly. It's fruity, sweet and slightly spicy with a defined chile flavor. Try it on a cheese plate, with pork or chicken or simply on buttered toast.

Provided by Food Network Kitchen

Categories     condiment

Time 2h30m

Yield about 1 3/4 cups of jam

Number Of Ingredients 5

1 3/4 pounds ripe peaches (5 to 8)
3/4 cup sugar
Pinch of salt
1 red Fresno chile pepper, seeded and finely chopped
2 tablespoons golden syrup

Steps:

  • Bring a large pot of water to a boil. Cut a small X in the bottom of each peach; add to the boiling water for 1 minute. Transfer to a bowl of ice water to cool; drain and peel off the skins with a paring knife. (Or for harder peaches, remove skins with a vegetable peeler.)
  • Chop the peaches. Combine with the sugar, salt and chile in a medium saucepan. Toss and let stand until the sugar dissolves and the liquid is syrupy, 10 to 20 minutes.
  • Add the syrup to the pan and bring to a rapid simmer over medium-high heat. Reduce the heat and simmer, stirring frequently and skimming off any foam, until the peaches soften and the juices thicken, about 15 minutes. (Gently mash any large peach chunks.) Remove from the heat and let the jam cool to room temperature, stirring occasionally, about 1 hour.
  • Transfer the jam to a jar or other airtight container and refrigerate until cold and fully jelled, 1 to 2 hours. Store in the refrigerator for up to 2 weeks.

SPICY SWEET PEACH SALSA

Spicy Sweet Peach Salsa image

This is an awesome sweet hot salsa. It's a canning recipe not a fresh mix so with this one, you can have Peach salsa all year round :-) I've changed the recipe some deleting the celery as I don't like it (but to keep the necessary proportions of acids the same for safe canning, I subbed 1 3/4 extra cups green pepper and a 1/4 cup hot pepper. I used jalapeno but you could use your favorite) & adding two extra peaches; This salsa is wonderful w/ grilled chicken or fish or just as a go along to chips.Be prepared;with the jalapenos it DOES have a bite.

Provided by JanetB-KY

Categories     Sauces

Time 2h30m

Yield 8 1/2 pint jars

Number Of Ingredients 9

3 lbs ripe tomatoes, peeled then chopped (about 7 medium)

5 fresh peaches, peeled then chopped
1 cup sugar
1 cup white vinegar
1 1/2 teaspoons salt
1 1/2 teaspoons pickling spices, in cheesecloth

Steps:

  • Pour boiling water over tomatoes; leave for one minute.

  • Peel, chop and measure to get 1 1/2 quarts (6 cups) Pour boiling water over peaches and let sit for two minutes.

  • Pour into sterilized pint or half pint jars, leaving 1/4 inch headspace.
