SWEET-AND-SPICY STEAK

2 tablespoons coarsely ground pepper
1 tablespoon ancho chile powder
1 tablespoon kosher salt
6 tablespoons dijon mustard
1/4 cup honey
2 tablespoons horseradish, drained
6 fresh mint leaves, finely chopped
Kosher salt and freshly ground pepper

Steps:

  • Rub four 8-ounce filets mignons with Pepper-Ancho Rub on one side; drizzle with vegetable oil. Grill rub-side down over high heat, about 4 minutes; flip, reduce the heat to medium or move the steaks to a cooler spot and grill 4 more minutes (for medium-rare), brushing often with Mint Glaze (recipe below). Top with more glaze.
  • Whisk all of the ingredients in a bowl.
  • Whisk the mustard, honey, horseradish and mint in a bowl; season with salt and pepper. Set aside a few tablespoons for the finished steaks.

1 (2 pound) bone-in ham steak
½ cup chunky salsa
⅓ cup apricot nectar
¼ cup apricot preserves
1 tablespoon brown sugar
1 teaspoon taco seasoning

Steps:

  • Coat a large skillet with cooking spray and place over medium heat. Fry ham in skillet until browned and heated through, 5 to 6 minutes per side. Drain any excess grease. Add salsa, apricot nectar, apricot preserves, brown sugar, and taco seasoning to skillet.
  • Reduce heat to low and cover skillet. Simmer until sauce is hot and bubbly, turning ham steak once, about 5 minutes.
  • Transfer ham steak to a platter and cover with sauce.

I created this recipe when frustrated by the packets of glaze that came with spiral hams bought at the grocery store. It is sweet, with the perfect amount of spice, and makes a nice crust on the outside of the ham, similar to the famous ham store's. This recipe makes enough to cover a 3 to 5 pound ham. Store in an airtight tin if not using immediately.

1 cup packed brown sugar
2 teaspoons pumpkin pie spice
½ teaspoon mustard powder
¼ teaspoon onion powder
freshly ground black pepper to taste

Steps:

  • Mix together brown sugar, pumpkin pie spice, mustard powder, onion powder, and pepper in a bowl until well blended. Makes enough rub to cover one 3 to 5 pound ham. To be sure sugars form a crust, do not cover the ham during cooking. If not using immediately, store in an airtight tin.

1 tablespoon olive oil
1 cup chopped onions
1 garlic clove, minced
2/3 cup pineapple spreadable fruit
1 can (15 ounces) tomato sauce
1/2 cup packed brown sugar
1/4 cup cider vinegar
2 tablespoons soy sauce
1 tablespoon lemon juice
1-1/2 teaspoons molasses
1 teaspoon ground mustard
1/2 teaspoon liquid smoke, optional
1/4 teaspoon pepper
1/4 teaspoon celery seed
3 fully cooked bone-in ham steaks (1 pound each and 3/8 inch thick)

Steps:

  • In a large saucepan, heat olive oil over medium heat. Add onions; saute until softened and lightly browned, 5-6 minutes. Add garlic; cook 1 minute more. Pulse onions, garlic and pineapple preserves in a food processor or blender until smooth. Return to pan. Add next 10 ingredients. Bring to a boil over medium heat; cook, stirring constantly, until sauce reaches desired consistency, 10-15 minutes. Remove from heat and cool slightly., Reserve 1/2 cup sauce; spread remaining sauce generously over both sides of ham steaks. Refrigerate, covered, 1-2 hours., Grill ham steaks, covered, on a greased grill rack over medium direct heat, turning and brushing frequently with reserved sauce, until heated through, 10-15 minutes.

I love a good ham steak. It's the easy way to have some ham without baking a huge traditional ham. In the meat section of the market, you can buy these nice thick ham steaks and have a quick dinner that evening. This glaze is awesome and perfect for ham!

1 lb ham steak
1/3 cup orange marmalade
1 tablespoon cider vinegar
1 1/2 teaspoons fresh rosemary, chopped (or 3/4 teaspoon dry)
1/2 teaspoon dry mustard
1/2 teaspoon soy sauce
1 pinch red chili pepper flakes

Steps:

  • Arrange your oven rack to be 2 to 3 inches from the broiler. Heat the broiler to high heat.
  • Dry the ham steak with paper towels and set on the broiler pan.
  • In a small sauce pan, combine the 6 glaze ingredients. Bring to a simmer over medium heat for 2 to 3 minutes while constantly stirring.
  • Brush one side of the ham with the glaze and broil until the glaze is bubbling and browned - 4 to 5 minutes.
  • Remove and flip the ham steak and brush the other side - repeat the process.
  • Serve immediately.

SPICY MUSTARD HAM GLAZE (NOT SWEET AT ALL)

I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! Hope you enjoy!! :)

2 tablespoons spicy brown mustard
2 teaspoons Worcestershire sauce (or my original thought was liquid smoke, but then learned I didn't have any)
2 teaspoons ground cumin
2 teaspoons fresh ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons mustard powder
8 1/2 lbs bone-in ham

Steps:

  • 1. In a small bowl, wisk all ingredients together.
  • 2. Pat ham dry with papertowel.
  • 3. Schmear all over ham.
  • I put mine in the slow cooker for 8 hours on low, or you could bake, roast, smoke, or grill the ham, depending on your preference. You could also marinate the ham before cooking, but I just didn't think about this until the morning of.
  • I made a double batch of this to use as a dipping sauce as well. Delish!
