SWEET MIXED NUTS
I started out making this just for the holidays makes a nice gift. Brown sugar,cinnamon, allspice, nutmeg and cloves. Its easy enough to do whenever, one batch in the microwave makes 1 1/2 cups.

Steps:
- Slect power high.
- In a 2 quart casserole or microwave safe dish combine sugar, water and spices.
- Heat 1 to 1 1/2 minutes til sugar is melted.
- Stir in nuts.
- Place nuts on a microwave safe plate heat on high for 3 1/2 minutes or until syrupy.
- Becareful to spread the nut mixture evenly on the plate and watch closely not to burn.I find not all microwaves act the same way.
- Place nuts on wax paper to cool completely.
- Break into pieces store in air tight container.

SWEET, SALTY, SPICY PARTY NUTS
I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
- Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
- Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
- Transfer nuts to the prepared baking sheet and spread into a single layer.
- Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

- Oven 250.
- Whisk eggs and water until frothy. Stir in nuts. Mix well. Stir in remaining ingredients. Mix well. Spread nuts on lightly buttered cookie sheet. Bake until dry, about 45 minutes. Cool and break into chunks. (Can be made ahead and kept in an airtight container for 3 days.).

SWEET AND SPICY SASSY NUTS
I love the combination of sweet, spicy and crunchy that good spiced nuts have, but the ones you buy at the store are crazy expensive! Here's my take on sweet and spicy nuts, or as I like to call them, Sassy Nuts. Berbere seasoning is an Ethiopian spice mix available at African markets or on the Internet. I highly recommend it if you are a fan of full flavored hot spice blends. I put these nuts into festive gift bags for my children's teachers at Christmas time. Enjoy!

- Preheat oven to 350 deg F.
- Pour the 6 cups of nuts into a gallon size zipper top plastic bag. In a small bowl, beat the large egg white with the teaspoon of water until the white is frothy. Pour the frothy egg white into the plastic bag with the nuts, seal and shake until all the nuts are coated with the egg white mixture.
- In a separate bowl, mix the salt, brown sugar, cinnamon, and Berbere spice mix (or your substitute), until well blended.
- Pour the brown sugar spice mix into the plastic bag, seal, and shake until all the nuts are covered.
- Line a jellyroll pan with parchment paper. Pour the spiced nuts onto the pan, spread out in an even layer. Bake in a 350 deg F oven for 20 minutes, stirring every 5 minutes, until the spice glaze is set and the nuts are toasted.
- Allow to cool completely before serving. The spice glaze will set hard as it cools.
