- Heat oven to 325°F. Grease rectangular baking dish, 13x9x2 inches.
- Cut potatoes crosswise into 1/8-inch slices, cutting only three-fourths of the way through to bottom. Place cut sides up in dish. Brush with butter. Sprinkle with salt and pepper.
- Bake uncovered 1 hour, brushing with butter once or twice. Mix cheese and bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake 20 to 30 minutes longer or until tender.

- Mix the first seven ingredients in a bowl. Boil the milk and cream together, add to the bowl, and mix again.
- Rub a suitable oven-proof dish with half the butter, arrange the potato mixture in the dish, sprinkle with the remaining cheese, and dot with the rest of the butter.
- Bake at 350 degrees until the potatoes are tender (about 1 hour). If the top is not browned, run the dish briefly under the broiler before serving.

Steps:
- Cut the potatoes into thin slices 3/4 way through, leaving a small uncut portion of the potato (fan like).
- Put half of the butter and garlic in an oven proof dish and place the potatoes in the dish.
- Sprinkle with salt & pepper.
- Drizzle with remaining butter and garlic.
- Bake in 375°F oven (takes about and hour depending on the size of the potato).
- Baste occasionally with the butter in the dish.
- After 30 minutes sprinkle with the cheese and bread crumbs- do not baste after putting on the cheese and crumbs.
- Finish baking until potatoes are done and golden.
SWEDISH CREAMED POTATOES WITH DILL

- Boil whole, unpeeled potatoes in unsalted water until fork-tender. Remove and allow to sit until cool enough to touch. Peel potatoes, then chop into 1" dice.
- In a saucepan over medium-high heat, stir together butter and flour to make a light roux, but do not allow to darken. Add cream, salt, and pepper and whisk steadily until incorporated and thickened into a cream sauce, about 5 minutes. - Saute onions in the butter, on medium heat. until limp, but not brown.
- In a medium baking dish, alternate layers of potatoes, onions and cheese, making sure that the cheese is at the top and final layer.

- Serve warm.

- Melt butter in pan at medium/high heat.
- Add onion, garlic, nutmeg, paprika, and half of the dill.
- Wash potatoes and cut into bite sized, uniform pieces.
- Stir butter and add potatoes and salt, stir to coat with butter.
- Cover and reduce heat to medium or lower and simmer for 1/2 hour or longer. Stir occasionally; turn off heat when potatoes are fork tender.
- Mix remaining dill with sour cream and milk, blend well and add lemon juice.
- Spoon potatoes into a serving dish with a slotted spoon to remove excess butter.
- Serve sour cream sauce with potatoes or pour over them and blend, depending on your tastes.

PRUNE STUFFED PORK ROAST WITH BROWNED POTATOES, SWEDISH STYLE
The Swedish have a delicious way of serving pork. Stuffed with prunes and cooked in a broth along with potatoes cut accordion style, this is fabulous. When sliced, a lovely pattern reveals itself. You can do as I do and alternate dried prunes and dried apricots, for another delicious twist.

- Wash and pare potatoes. Cut into slices, 1/8 inch thick, down through the top of each potato, being careful not to cut through to the bottom, leaving the bottom intact. Place in ice water to chill for about 1 hour, while you get everything else ready.
- Wipe the pork with damp paper towels; trim off excess fat.
- Preheat oven to 350*F. With a long narrow, sharp knife, starting at each end pierce through to center of roast. Using fingers, push fruit into the holes to completely fill. Rub roast on all sides with half a lemon. sprinkle with salt, pepper and ginger.
- Place fat side up, in shallow roasting pan without rack. Pork will rest on bones. Pour beef broth around. Cover the pan with foil or a tight fitting lid and roast, covered, for 30 minutes.
- Remove from oven. Drain and dry potatoes.
- Melt butter with paprika. Roll dry potatoes in this twice, then place in roasting pan around the roast. Pour remaining paprka butter over potatoes. Roast, uncovered, basting every half hour with pan drippings. (add water if needed).
- Roast 1 hour 20 minutes, or until thermometer registers 175*F. Remove roast and potatoes to heated platter; keep warm in a low oven.
- Make a gravy by pouring pan drippings into a two cup measure. Skim off fat, reserving 2 TBS. Put the 2 TBS fat into roasting pan. Stir in the flour and ginger until smooth. Cook stirring over low heat to brown the flour slightly. Add water to the pan drippings to make 1 1/4 cup and gradually stir into the flour mixture along with the milk; bring to boiling, stirring until thickened.
- Serve with the roasted pork and potatoes for a really special meal.

SLICED BAKED POTATO (ALSO KNOWN AS SWEDISH BAKED POTATOES,OR HASSELBACK POTATOES)

- Preheat oven to 425°F Using a sharp kitchen knife, carefully start making a series of vertical cuts width-wise through the potato, making sure not to cut all the way through - cuts should only be 3/4 of the way through the potato. (Considering placing the potato on a wooden spoon, or putting one chopstick on each side of the potato. This way, when you slice, the spoon/chopstick stops the knife from going all the way through.) Rinse the potatoes after slicing them to get ride of excess starch. Place sliced potatoes on a baking sheet slices up, then drizzle top with oil, sea salt and pepper. perhaps small slices of garlic as well. [Optional: Bake for 35 to 40 minutes. Remove from the oven, sprinkle Romano cheese and bread crumbs and season with a little more salt and pepper to taste. Return to the oven, and bake for an additional 20 minutes, or until nicely browned.] Bake for 50 minutes. (Time may vary depending on size of potato and oven.) When they're done you can add some shredded cheese, green onion or any other topping you might like!
SWEDISH CREAMED POTATOES FROM SKANE (SKANSK POTATIS)
Swedish potatoes from a cookbook from my Swedish neighbor, Millie. These are awesome but a heart attack waiting to happen! LOL. In order to have bacon drippings I sometimes fry the bacon crisp and then crumble it over the top of the potatoes as we like the extra crunch on top of the creamy potatoes.

- Sauté onion in 2 tbs bacon fat until soft and a medium frying pan.
- Remove from pan and set aside.
- Add remaining bacon fat and potatoes.
- Fry until golden brown on the outside.
- Stir in the onions.
- Add milk and cook a couple of minutes. Look to see how much of the liquid is absorbed before adding the cream as you want enough to slightly cover the potatoes and enough to cook them.
- Sprinkle with salt and pepper.
- Stir until blended.
- Cover pan.
- Cook very slowly, low heat until potatoes are soft, about 15 minutes This will depend on how large your potato cubes are.

POTATISMOS (SWEDISH MASHED POTATOES)
The Swedish mashed potatoes took a bit of getting used to for me. I love nutmeg in my apple pies and other sweets, but it's not a flavor I expect in my mashed potatoes. Of course I always ate them the way my first husband's Norwegian gramma made them, but when I make them myself I use just enough to add a hint of flavor. After all, without the nutmeg they're just plain mashed potatoes. ;)

SWEDISH CREAMED POTATOES
I cook this whenever I do my Christmas Ham with Prunes and Red Cabbage recipes. The three work wonderfully together. Its taken from Scandinavian Holiday Recipes. I have copied the recipe directly but I've never added the herbs or leeks (I always seem to forget) and I must warn you that every time I do this the potatoes take ages (an hour or so!) to cook, maybe its me doing something wrong. The saving grace is that if you do do it to accompany the ham and cabbage, both of those recipes are very forgiving timewise ; ie the ham can be turned down and then rested and the red cabbage can simmer away quite happily just being stirred occasionally.
