SOUTHWEST CHICKEN SKILLET WITH ZUCCHINI AND CORN



Southwest Chicken Skillet with Zucchini and Corn image

This southwest chicken skillet with zucchini, bell peppers, and corn is a delicious and healthy summer meal!

1 teaspoon coarse salt
1/2 teaspoon ground black pepper
1 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon red pepper flakes
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons olive oil (, divided)
1 1/2 lbs boneless skinless chicken breast (, sliced into thin strips)
1 1/2 lb about 3 small zucchini (, thinly sliced)
1 red bell pepper (, thinly sliced)
2 loves garlic (minced)
1 cup corn (, can use fresh, frozen or canned)
Juice of 1 lime
2 tablespoons fresh cilantro (, chopped)
1/2 cup cotija cheese (, crumbled)

Steps:

  • Combine all ingredients. Store in an airtight container (I use a jar) for several months.
  • Add 1 tablespoon of olive oil to a large skillet set over medium high heat and heat for 1 minute. Add chicken in a single layer (cook in batches if needed to avoid crowding the pan) and sprinkle with about 2 tablespoons of the spice mix.
  • Cook for a few minutes on each side until browned and cooked through, stirring as needed. Remove chicken from the pan and set aside.
  • Add remaining tablespoon of olive oil to the skillet and heat for 1 minute. Add zucchini and bell peppers and sprinkle with about 1 tablespoon of the spice mix. Cook for a few minutes until vegetables have started to soften.
  • Add garlic and corn and cook for a minute more.
  • Return chicken to the skillet, add lime juice, and toss until combined. Top with chopped cilantro and cotija cheese and serve immediately.

Green Chile, Chicken, and Corn Soup image

This soup has some of my favorite things in it! I really enjoy it in the fall, just as the weather is turning cold. I can usually still find fresh corn at that time, and it's so great to have a warm soup on a crisp, chilly night! This is from "Southwest Cooks!", a collection of Native American cuisine.

1 medium onion
2 whole cloves
5 cups beef broth
3 cups chicken broth
3 chicken breast halves, skinned
2 large baking potatoes, peeled and diced
2 anaheim chilies
2 3/4 cups fresh cut corn, about 4 ears
1 avocado, sliced
2 medium tomatoes, chopped
salt and pepper
sour cream, fresh cilantro sprigs

Steps:

  • Peel the onion and stud with the cloves. Combine the onion, broths, chicken and potato in a Dutch oven; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until the potato is tender.
  • Remove the onion. Remove the chicken, reserving the broth in the pan. Let the chicken cool, bone it, and chop the meat. Return the chicken to the pan; set aside.
  • Cut chiles in half lengthwis; remove seeds and membranes. Place chiles, skin side up, on an ungreased baking sheet; flatten with the palm of your hand. Broil 3 inches from the heat (with electric oven door partially opened) 6 minutes or until charred. Place chiles in ice water; peel and discard skins. Coarsely chop the chiles, and add to the reserved broth mixture.
  • Stir in corn; bring to a boil. Reduce heat and simmer, uncovered, 4 minutes or until the corn is tender. Taste your soup, and add salt and pepper as needed (depends on the broth you originally used).
  • Ladle soup into individual soup bowls. Top each serving with avocado slices and chopped tomato. Garnish, if desired with sour cream and fresh cilantro.

3 cups or canned fat-free reduced-sodium chicken broth
1 tablespoon unsalted butter or olive oil
1/2 cup chopped white onion
3/4 pound zucchini (3 medium), cut into 1/2-inch dice
1 cup fresh corn kernels (from one large ear)
1 (4-ounce) can peeled and diced green chili
1/2 teaspoon ground cumin
1/2 teaspoon salt, or to taste
lime wedges

Steps:

  • Prepare the chicken stock, if using homemade. Melt the butter in a 2-quart saucepan, and cook the onion over medium heat until softened, about 3 minutes. Add the broth, zucchini, corn, chopped chiles, cumin, and salt. Bring to a boil, then reduce the heat, cover, and simmer until the zucchini is tender, about to 6 to 8 minutes. CHICKEN AND ZUCCHINI SOUP

I looked in the fridge tonight and all I could find was a small bit of roast chicken and some veggies. I decided to give this method of making chicken stock a go - shared with me by the Home Ec. teacher I work with. It makes a wonderful stock and this was the resulting soup.

1 chicken carcass
4 cups water
2 sprigs fresh thyme
2 tablespoons oil
1 medium onion
1 stalk celery
2 small carrots
1 garlic clove
2 cups pasta shells
2 zucchini
1 cooked chicken breast
salt
pepper

Steps:

  • Take the chicken breast off the roast chicken and put the chicken bones, wings and any other bits in a large microwave dish with the water and thyme. Cover and cook on high for 10 minutes.
  • While that is cooking, start on the prep of the veg.
  • Finely chop the onion and fry in the oil. Add a little salt to help season the veg as they are cooking.
  • Cut the celery into strips lengthways and then chop into small cubes. Add to the onion.
  • Peel and cube the carrot to about the same size as the celery. Add to the pot.
  • Add crushed garlic.
  • By this time the stock should be finished - unless you are particularly fast at veg prep!
  • Strain the stock over the vegetables.
  • Add the pasta shells or whatever pasta you happen to have.
  • Slice the chicken breast and pick off any good bits of chicken from the drained bones. Add to the pot.
  • Simmer for as long as it takes to cook the pasta - 13 minutes for my pasta shells.
  • Season to taste with salt and pepper.
  • Add more water if necessary. I needed to add a little more water after about 10 minutes.
  • Add the zucchini/courgette in the last 5 minutes of cooking. Slice the zucchini lengthways. Cut into triangular pieces. I find cutting the zucchini this way helps keep them in one piece in a soup where they may get overcooked when the soup is reheated.

1-1/4 pounds boneless skinless chicken breasts, cut into thin strips
1 to 2 tablespoons canola oil
2 cans (14-1/2 ounces each) chicken broth
1 package (16 ounces) frozen corn, thawed
1 can (14-1/2 ounces) diced tomatoes, undrained
1 medium onion, chopped
1 medium green pepper, chopped
1 medium sweet red pepper, chopped
1 can (4 ounces) chopped green chilies
1-1/2 teaspoons seasoned salt, optional
1 teaspoon ground cumin
1/2 teaspoon garlic powder

Steps:

  • In a large skillet, saute the chicken in oil until lightly browned. Transfer to a 5-qt. slow cooker with a slotted spoon. Stir in the remaining ingredients. Cover and cook on low for 6-8 hours or until chicken and vegetables are tender. Stir before serving.

Corn and Green Chile Soup image

4 ears of corn
Olive oil
A few chopped scallions, plus sliced scallions for garnish
Seeded, chopped green chiles
1/4 cup cornmeal
2 chopped potatoes
Crema or sour cream, for garnish (optional)

Steps:

  • Remove the kernels from the ears of corn and set aside.
  • Place the 4 stripped corn cobs in 6 cups water in a large pot. Bring to a simmer and cook for 15 minutes, then remove.
  • In a skillet, heat a few glugs of olive oil. Add the chopped scallions and green chiles and sauté. Add 1/4 cup cornmeal and cook, stirring, about 5 minutes.
  • Add the scallion-and-chili mixture to broth along with the corn kernels and 2 chopped potatoes. Cook until soft. Garnish with crema or sour cream, if you'd like, and the sliced scallions.

1/2 cup(s) green onions, white and light green parts (save darker tops as a garnish)

Steps:

  • Saute diced zucchini and onions in butter over medium heat in a dutch oven until the onion softens.

  • Simmer over low heat for 20 minutes or until zucchini is tender. Add cilantro (and chop extra for garnish) and diced cream cheese. Allow cheese to melt and incorporate into soup.
  • Serve soup with chopped green onions and additional cilantro. Serve with corn tortillas if you prefer.
