1 1/2 lbs bluefish, filets
6 lemon wedges
2 tablespoons prepared mayonnaise
salt
pepper

Steps:

  • Pre heat oven to 450 degrees Trim dark areas from bluefish filets. Rinse under cold water and pat dry. Place filets on sheet pan skin side down and slather generous even coating of mayonaise on top of fish. Salt and pepper and geneous sqweeze of lemon juice. Place in top third of hot oven and bake until bubbly and brown on top about 10 minutes depending on thinkness.

Broiled Bluefish Fillets with Fennel Mayonnaise image

two 8-ounce skinless bluefish or mackerel fillets
For fennel mayonnaise
1 teaspoon fennel seeds
1 large garlic clove
1/2 teaspoon salt
2 tablespoons mayonnaise
1/2 tablespoon fresh lemon juice

Steps:

  • Preheat broiler and oil a shallow baking pan large enough to hold fillets in one layer.
  • Make fennel mayonnaise:
  • In a dry small skillet toast fennel seeds over moderate heat, stirring, until fragrant. Mince fennel seeds and garlic with salt and in a small bowl stir together with mayonnaise, lemon juice, and pepper to taste.
  • Arrange fillets in pan and spread fennel mayonnaise evenly over tops. Broil fillets 3 inches from heat until just cooked through, about 7 minutes.

1/4 cup mayonnaise
3 tablespoons Dijon mustard
1/2 teaspoon dried thyme
4 6-ounce bluefish fillets, skin and bones removed
Kosher salt
freshly ground black pepper

Steps:

  • Place a large cast-iron griddle or ovenproof skillet under the broiler and preheat until very hot, at least 10 minutes.
  • Meanwhile, combine the mayonnaise, mustard and thyme in a small bowl.
  • Generously season the fillets with salt and pepper. Paint one side of each fillet thickly with the mustard mixture.
  • Place the fish in the skillet, painted side up, and broil until the coating is brown and bubbling, 3 to 4 minutes.

ITALIAN BAKED BLUEFISH



Italian Baked Bluefish image

This recipe was the result of a somewhat crazed search for a recipe to use up some bluefish not requiring the grill. I think it comes originally from a Betty Crocker book. It really is a brilliant treatment of fatty fish like bluefish. We love this preparation, though to be honest I think I am a bit more profilgate with the olives and capers and garlic than the recipe suggests.

1 lb bluefish fillet
1/4 cup dry red wine
2 tablespoons ripe olives, chopped (I use Kalamata)
1 tablespoon capers
4 anchovy fillets, chopped
2 garlic cloves, crushed
1 (28 ounce) can diced tomatoes (I use Muir Glen organic)

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the fish fillets into four pieces and place in an ungreased 8" square baking dish.
  • Mix the remaining ingredients and pour over the fish.
  • Bake uncovered for about 40 minutes or until the fish flakes easily.

A great, easy way to make bluefish, one of my favorites. Also works with other meaty, firm, flavorful fish. You can vary the herbs, or use a spice mix such as Old Bay or Cajun seasoning.

2 lbs bluefish fillets
1/2 cup mayonnaise (lowfat OK)
2 lemons
2 tablespoons fresh dill, chopped
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Place fillet in foil lined pain. Salt and pepper to taste.
  • Spread mayonnaise over the fillet.
  • Sprinkle with dill, to taste.
  • Slice lemons thinly and lay slices over the fillet, covering most of the area.
  • Bake until flakey and tender, about 30 minutes.

Number Of Ingredients 7

4 cloves garlic
2 tablespoons dry vermouth
2 tablespoons horseradish
3/4 cup mayonnaise, preferably homemade
1/4 cup heavy cream if available, or evaporated milk
4 boneless bluefish fillets, about 1 1/4 pounds
2 tablespoons fresh tarragon, if available, or 1/2 teaspoon dried

Steps:

  • Preheat the broiler to high.
  • Broil the garlic cloves until they are tender, peel the skins and mash to a paste.
  • Add the paste, vermouth and horseradish to the mayonnaise. Stir in the cream and blend well.
  • Select a flame-proof baking dish large enough to hold fish in one layer. Coat both sides of the fillets with the garlic mayonnaise and place in the dish, skin side down. Place under broiler about 5 inches from the heat. Cook 5 to 7 minutes, depending on the thickness of the fillet. The fish is done when it flakes easily with a fork.
  • Sprinkle with tarragon and serve immediately. Serve additional garlic mayonnaise on the side.
