This is my favorite meatloaf recipe and it is different than the standard ketchup on top. This probably isn't for everyone. It has a sweeter taste and if you like savory and sweet together you'll probably enjoy. If you don't I would probably pass on this recipe.

1 1/4 lbs ground beef
1/2 cup and 2 tablespoons dry breadcrumbs
1 egg
garlic powder
2 dashes Worcestershire sauce
1/3 cup ketchup
1/4 cup packed brown sugar
1/4 cup pineapple preserves (if can't find use apricot)

Steps:

  • Preheat oven to 350 degrees F.
  • Ina large bowl, combine the beef, bread crumbs, egg, garlic powder and Worcestershire sauce. Mix well, and place into a meatloaf pan.
  • Bake in oven for 30 to 50 minutes.
  • Meanwhile, in a separate medium bowl, stir together the ketchup, brown sugar and pineapple preserves. Pour over the meatloaf about 20 minutes before removing from oven.
  • I like the make double the sauce for everyone to spoon extra over their meatloaf.

1/2 cup brown sugar
2 tablespoons butter
1/2 yellow onion, chopped
1 1/2 lbs lean ground beef
1 egg
1 1/2 cups fresh sourdough breadcrumbs, blend 5 bread slices in food processor
1/2 cup milk
6 tablespoons Heinz 57 steak sauce, divided
salt and pepper
2 tablespoons cornstarch
4 tablespoons water
3 tablespoons Heinz 57 steak sauce
2 tablespoons hot ketchup, Heinz Kicker's Hot & Spicy
1 tablespoon ketchup, regular
3 tablespoons A.1. Original Sauce
1 tablespoon brown sugar
1/2 cup apple juice

Steps:

  • Meatloaf:.
  • Preheat oven to 350 degrees.
  • Lightly grease a 5x9 inch loaf pan.
  • Press the brown sugar in the bottom of the loaf pan.
  • In a small sauté pan, melt butter.
  • Add chopped onions and cook until soften, about 5 minutes.
  • In a mixing bowl, combine ground beef, egg, breadcrumbs, milk and 3 tablespoons of the Heinz 57 sauce. Add cooked onions and season the mixture with salt and pepper.
  • Shape mixture into a loaf and press into pan.
  • Brush remaining 3 tablespoons Heinz 57 sauce on top of loaf.
  • Bake uncovered for about 1 hour or until juices are clear.
  • Sauce:.
  • Whisk cornstarch in water until blended.
  • In a small saucepan over low heat, combine cornstarch mix, Heinz 57, Heinz Kicker Ketchup, A1 sauce, regular ketchup, apple juice and brown sugar. Heat until bubbly. Sauce will be thick.
  • Pour sauce over meatloaf to serve.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
1 cup frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped cremini mushrooms
1/2 cup pitted prunes, chopped
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
2 large eggs, lightly beaten
1 clove garlic, minced
1 medium onion, grated
1/2 cup ketchup
Kosher salt and freshly ground black pepper
2 tablespoons apricot preserves
2 teaspoons soy sauce
1 teaspoon ground ginger
1 teaspoon rice vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1/4 cup apricot preserves
1/4 cup ketchup
1/4 cup brown sugar
1/4 cup apricot preserves

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, Worcestershire sauce, ketchup, brown sugar and apricot preserves.
  • Place in a greased 9x5 inch loaf pan.
  • Cook for 40-50 minutes.
  • In a separate bowl combine ketchup, brown sugar and apricot preserves. Remove meatloaf from oven after it has cooked, spread on glaze and cook for an additional 20 minutes.
