SURPRISE SPINACH CASSEROLE

I like to make this for the holidays instead of creamed spinach. The surprise is how quick and delicious it is.

Number Of Ingredients 6

1 - 3 oz pkg reduced-fat cream cheese, softened
1/2 stick(s) butter, softened
1/4 teaspoon(s) each salt and pepper
2 - 10 oz pkgs frozen spinach, thawed, squeezed dry
1/4 cup(s) grated parmesan cheese
1/4 cup(s) chopped pecans

Steps:

  • Heat oven to 350. Spray a 1-12/-quart casserole dish w/ cooking spray. In lg bowl, combine cream cheese, butter, salt and pepper. Mix well.
  • Stir in spinach. Spoon into casserole dish. Sprinkle w/ grated cheese and then pecans. Bake 30 mins, or until top is golden.

1 package(s) (3 oz.) cream cheese
1/2 stick(s) butter, softened
1/2 teaspoon(s) salt
1/4 teaspoon(s) black pepper
2 package(s) (10 oz. ea.) frozen chopped spinach, thawed and well drained
1/4 cup(s) grated parmesan cheese
1/4 cup(s) chopped pecans

Steps:

  • In a large bowl, combine the cream cheese, butter, salt,and pepper; mix well. Add spinach; mix well.
  • Spoon the mixture into a greased 1-1/2 qt. casserole dish. Sprinkle with the cheese, then with the pecans.
  • Bake in a pre-heated 350-degree oven for 30-35 minutes, or until heated through and top is golden.
