Number Of Ingredients 11

2 cups ground fully cooked ham, roast beef or chicken
2 hard-boiled large eggs, chopped
1/4 cup mayonnaise, ketchup or chili sauce
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon celery salt
1/8 teaspoon onion powder
1/8 teaspoon pepper
2 tablespoons chopped celery, onion or olives, optional
1 tablespoon sweet pickle relish, optional
8 slices bread

Steps:

  • In a medium bowl, combine the first eight ingredients. If desired, add celery, onion or olives and/or relish. Spread 1/2 cup on four slices of bread; top with remaining bread.

I was given this recipe by an older woman from OK, 30 years ago. It is always a hit with adults who spend time trying to figure out the ingredients as the chili sauce makes it look like it has some kind of ground meat in it, and they can see the eggs and vegetables. This is not particularly a kid-favorite - because of the vegies. Prep-time does not include boiling the eggs.

8 ounces cream cheese (at room temp.)
3 tablespoons onions, chopped
3 tablespoons bell peppers, chopped
3 tablespoons chili sauce
3 hard-boiled eggs, chopped
2/3 cup pecans, chopped
1 loaf bread (no crust-saves work)

Steps:

  • Mix the first 4 ingredients well; then fold in the eggs and nuts - so that the eggs don't get smashed.
  • Salt and pepper mixture.
  • Butter one slice of bread, put mixture on the another, then put the two slices together to form a sandwich.
  • Cut off crusts.
  • Can cut into 3 finger sandwiches if serving at a pot-luck.

For our 5 year olds lunch box for either snack time or lunch for his first year at kindergarten that are reasonably healthy but will bring a smile to his face when he finds them. Kids tire of the same old sandwich, so I came up with this as a new and fun way to make sure he doesn't skip his sandwich! I was surprised at how much lunch meat and cheese I was able to get in the muffin! If you child likes lettuce you could stuff some of that inside as well. You could actually fill the hole with just about any type of sandwich filling. :)

1 dinner roll, muffin (Dinner roll baked in muffin tin, I bought them in our grocery store's bakery)
mayonnaise or mustard
1 -2 slice deli chicken (your child's favorite) or 1 -2 slice deli ham (your child's favorite)
1 slice cheese (your child's favorite)

Steps:

  • Using a small paring knife, pierce the bottom of the muffin until the knife almost reaches the top. Cut a circle and pull out the bread cylinder and set aside.
  • Using your fingers, press the inside bread walls to make them thinner.
  • Add condiment of your choice to inside of roll.
  • Add lunch meat until it is about a 1/3 full. Then add cheese until it is 2/3 full and fill with more lunch meat.
  • Cut a bit of the cylinder off and apply condiment to the bready side of the circle. Press into bottom of muffin.

1 cup roasted pecan bits
1 (18 ounce) package refrigerated sugar cookie dough
1 (11 ounce) package semisweet chocolate chips
½ cup apricot preserves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pulse pecans in a food processor until finely ground.
  • Place cookie dough onto a work surface and knead pecans into dough. Roll dough back into a log, similar to the original shape. Slice dough into 1/4-inch-thick slices and arrange on a baking sheet.
  • Bake in the preheated oven until cookies are golden around the edges, about 10 minutes. Cool cookies on a wire rack.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Spread apricot preserves on the top of half of the cooled cookies. Place a second cookie over the apricot layer creating a sandwich. Dip half of each sandwich cookie into the melted chocolate and place on a sheet of waxed paper to dry.
