This is tasty, but not exactly diet food and lately I've made it with ground turkey, rather than beef. I like to make this when we're vacationing at our cabin in the woods. I found this years ago in a newspaper, don't remember which one, but it was sent in by a Jane Achterberg from Wisconsin.

2 cups grated cheese (American or cheddar)
2/3 cup evaporated milk
1 1/2 lbs extra lean ground beef
1/2 cup coarse bread or 1/2 cup cracker crumb
1 egg
1/2 cup chopped onion
1/2 cup chopped mushroom
1 tablespoon mustard
1 teaspoon salt
1/8 teaspoon pepper
1 loaf French bread, about 15 inches long (1 lb.)

Steps:

  • Heat oven to 350°.
  • Mix all ingredients, except bread, in a large bowl.
  • Cut bread in half lengthwise; spread meat mixture on top of cut sides of bread.
  • Wrap aluminum foil around the crusty bottom and sides of each bread half, leaving meat mixture uncovered; put onto baking sheet (s).
  • Bake until meat is cooked through and bread is crusty, about 35 minutes.

2 cups all-purpose flour, or more if needed
1 envelope Fleischmann's® RapidRise Yeast
2 tablespoons sugar
½ teaspoon salt
½ cup milk
¼ cup water
2 tablespoons butter OR margarine

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

I usually keep a can of sloppy joe sauce in the pantry, because our kids love sloppy joes. But sometimes I don't have buns on hand. With this fun casserole, we can still enjoy the flavors that they love in a flash. The bun-like top crust is made with biscuit mix, sprinkled with sesame seeds and baked until golden. -Trish Bloom, Ray, Michigan

1-1/2 pounds ground beef
1 can (15-1/2 ounces) sloppy joe sauce
2 cups shredded cheddar cheese
2 cups biscuit/baking mix
2 large eggs, lightly beaten
1 cup 2% milk
1 tablespoon sesame seeds

Steps:

  • In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Stir in sloppy joe sauce. Transfer to a lightly greased 13x9-in. baking dish; sprinkle with cheese. , In a large bowl, combine the biscuit mix, eggs and milk just until blended. Pour over cheese; sprinkle with sesame seeds. Bake, uncovered, at 400° for 25 minutes or until golden brown.

Homestyle Alberta Beef on a Bun image

This is my mother's recipe, and a favorite of everyone who's ever tasted it. It takes a long time to cook, but very little prep. Start it in the morning, and you'll have a delicious meal waiting for you in the evening. Don't worry about using an expensive roast. The cheap tough ones turn out beautifully.

5 lbs round roast
1 (425 ml) bottle barbecue sauce (we prefer Bull's Eye original)
4 fresh garlic cloves, minced
pepper
18 kaiser rolls

Steps:

  • Place frozen roast in roasting pan.
  • Heat, uncovered, at 450 degrees for 45 minutes (30 minutes for smaller roast).
  • Remove roast from oven, and season with garlic and pepper.
  • Cover, decrease heat to 275 degrees, and roast for approx 4 hours until fork tender.
  • Pull apart roast with fork.
  • Layer ingredients into slow cooker (1 layer beef, 1 layer au jus from roasting pan, 1 layer BBQ sauce). Repeat until all ingredients have been added.
  • Heat on low until warmed through and bubbling (2-3 hours).
  • Spoon onto sliced Kaiser rolls, and enjoy!

1 cup whole milk, homogenized, warmed (divided)
1/4 cup granulated sugar
1 tablespoon active dry yeast
1 large egg
1/4 cup butter, melted
1 1/2 teaspoons salt
3 cups all-purpose flour
1 large egg
1 tablespoon whole milk, homogenized

Steps:

  • In a small bowl, combine 1/2 cup of warm milk with sugar and yeast.
  • Let stand for about 10 minutes until frothy.
  • In another bowl, combine the egg and remaining 1/2 cup of warm milk and the melted butter.
  • In the bowl of a stand mixer with a dough hook, combine flour and salt.
  • Add the yeast mixture and egg mixture to the flour.
  • With the mixer on low speed, start mixing, then increase the speed as flour is incorporated.
  • Continue to mix for another 2 minutes or until the dough comes together.
  • Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until the dough is smooth and elastic.
  • Form dough into a ball and place into a lightly greased large bowl.
  • Cover with plastic wrap.
  • Leave overnight in the refrigerator or alternatley, let proof in a warm area until doubled in size for about 45 minutes.
  • Punch dough down and turn out onto a very lightly floured surface.
  • Tear off pieces of dough and form 14 to 16 - 1 1/2 inch balls.
  • Roll them between your hands to make a smooth ball.
  • Place the dough balls in a buttered 8" x 8" pan or an 8" round pan, so the dough balls are touching each other.
  • Cover with plastic wrap and then with a damp cloth or towel and let rest in a warm area for about 40 minute or until doubled.
  • Preheat oven to 350°F.
  • In a small bowl, whisk together the egg and milk to make an egg wash.
  • Using a pastry brush, generously coat the top of the dough buns with the egg wash.
  • Bake in preheated 350 F oven for about 18 to 20 minutes or until the top is golden brown.
  • Pull apart at the dinner table and serve with butter.
