My favorite thing about this easy baked Pesto Chicken and Vegetables is that it's all made in one pan! A healthy 30 minute meal for quick weeknight dinners.

1 lb boneless (, skinless Chicken breasts, cut into bite-size pieces)
1 bell pepper (, chopped)
1 zucchini (, chopped)
1 cup cherry tomatoes
½ red onion (, chopped)
baby broccoli ((broccolini))
1/2 cup pesto
1/2 cup mozzarella cheese (, optional)

Steps:

  • Pre-heat oven to 425F.
  • In a large bowl, combine the chicken, veggies, and pesto until the chicken and veggies are coated well with pesto.
  • Transfer mixture to a large sheet pan and bake for 15-20 minutes. If desired drizzle with mozzarella cheese during the last 5 minutes of baking.

1 pound boneless skinless chicken thighs, cut into 1-inch pieces
1 teaspoon salt-free seasoning blend
2 teaspoons olive oil
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 tablespoons lemon juice
1 cup uncooked gemelli or spiral pasta
2 cups fresh broccoli florets
1 cup frozen peas
1/3 cup prepared pesto

Steps:

  • Toss chicken with seasoning blend. In a large nonstick skillet, heat oil over medium-high heat. Add chicken and brown evenly; remove from pan., In same pan, combine broth and lemon juice; bring to a boil, stirring to loosen browned bits from pan. Stir in pasta; return to a boil. Reduce heat; simmer, covered, 10 minutes., Add broccoli; cook, covered, 5 minutes. Return chicken to pan; cook, covered, until pasta is tender and chicken is no longer pink, 2-3 minutes longer, stirring occasionally. Add peas; heat through. Stir in pesto.

If you like pesto, this makes a great pasta dish, especially for using up some of the vegetables from your summer garden. It can be either a side dish or a main dish for supper. The amount of oil required for the pesto is approximate, so be prepared to use more if needed. The pesto directions make more than is needed for the dish, so reserve the extra pesto for another use.

1 (8 ounce) package ziti pasta or 1 (8 ounce) package rotini pasta, cooked
2 cups loosely packed fresh basil
1/2 cup grated parmesan cheese
1/2 cup pine nuts
2 cloves garlic, minced
1/2 cup extra virgin olive oil, plus
1 tablespoon extra virgin olive oil
1/3 lb asparagus, cut into quarters
1/3 lb green beans, cut into thirds
1/3 lb zucchini, halved lengthwise and sliced

Steps:

  • Make the pesto by pureéing the basil through garlic in a blender or food processor; slowly add the 1/2 cup olive oil, blending until smooth.
  • Heat the 1 Tbs oil in a skillet over medium heat and sauté the asparagus, beans and zucchini about 10 minutes, stirring often, until cooked but not limp.
  • Add 1 cup of the pesto, stir thoroughly, and cook until heated thru.
  • Toss the pasta with the pesto-vegetable mixture and serve.

¼ cup pesto
3 cups penne pasta, cooked and drained
¾ cup cherry tomato, halved
parmesan cheese, to garnish
fresh basil, chopped, to garnish

Steps:

  • Heat the oil in a pan over high heat. Combine the chicken, garlic, salt, and pepper, cooking until chicken is browned.
  • Then, mix in the heavy cream, parmesan, and pesto, stirring until evenly combined.
  • Next, bring to a boil and cook until the sauce has reduced, about five to seven minutes.
  • Toss in the pasta and cherry tomatoes, stirring until evenly coated. Remove from heat.
  • To serve, sprinkle parmesan cheese and basil on top!
