MAGIC THREE-INGREDIENT PASTA SAUCE
Three ingredients: tomato, butter, and onion come together perfectly in this simple - and simply magical - pasta sauce.

Steps:
- Add the tomatoes, butter, and onion to a heavy medium-sized saucepan. Bring sauce to a simmer over medium heat, then reduce the heat to low, keeping it at a steady simmer.
- Simmer for about 45 minutes until the butter droplets float free from the tomatoes, stirring occasionally with a wooden spoon, gently smashing the tomato on the side of the pan as you stir.
- Remove the onion and discard.
- If desired, season to taste with salt.
- Serve with your favorite pasta.
SUPER RICH 3 INGREDIENT TOMATO SAUCE
Never did so little produce so much intense flavor! Easy on the butter, though, you may find this too rich! I will admit, my husband doesn't care for this sauce - a little too heavy, he says. But for me, the richer the better! I use this when a recipe calls for a small amount of tomato sauce, with Italian seasoning on meatball sandwiches, wherever it seems to fit.

- Put the tomato paste in a heavy, small saucepan and add 1/4 cup water. Heat gently.
- Cut the butter into small pieces and add to the tomato mixture. Stir with wooden spoon over low heat til butter is melted and incorporated.
- Use as is, or add additional ingredients to suit dish you will be using it in.
MARCELLA HAZAN'S TOMATO SAUCE
This is perhaps the most famous recipe created by Marcella Hazan, the cookbook author who changed how Americans cook Italian food. It also may be her easiest. Use your favorite canned tomatoes for this and don't be scared off by the butter. It gives the sauce an unparalleled velvety richness.

- Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt.
- Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
- Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.
