SUPER-SIMPLE PICNIC POTATO SALAD



Super-Simple Picnic Potato Salad image

Frozen hash browns are the key to this convenient recipe. No picnic is complete without potato salad!

1 bag (32 oz) frozen southern-style diced hash brown potatoes
1/4 cup water
2 tablespoons cider vinegar
1 tablespoon yellow mustard
1 1/2 teaspoons salt
1/4 teaspoon pepper
5 eggs
1 cup mayonnaise or salad dressing
1/2 cup chopped celery
1/3 cup chopped onion
Paprika, if desired

Steps:

  • In ungreased 3-quart microwavable bowl, mix frozen potatoes and water; spread evenly in bowl. Cover tightly with microwavable plastic wrap. Microwave on High 15 to 20 minutes or until potatoes are hot and tender, stirring once halfway through cooking.
  • Add vinegar, mustard, salt and pepper to hot potatoes; mix well. Spread evenly in bowl. Cover, refrigerate at least 5 hours or until completely cold.
  • Meanwhile, in 2-quart saucepan, place eggs in single layer. Add enough water to cover eggs by 1 inch. Heat to boiling. Immediately remove from heat; cover and let stand 15 minutes. Drain; rinse with cold water. Place eggs in bowl of ice water; let stand 10 minutes. Drain. Peel eggs. Reserve 1 egg for garnish; chop remaining 4 eggs.
  • Stir mayonnaise into cold potato mixture. Add celery, onion and chopped eggs; toss gently to mix. Spoon mixture into large serving bowl. Slice reserved hard-cooked egg; arrange on top of salad. Sprinkle with paprika. Serve immediately, or cover and refrigerate until serving time.

This is potato salad the old-fashioned way, with eggs, celery and relish. It's really good to serve with chili.

5 potatoes
3 eggs
1 cup chopped celery
½ cup chopped onion
½ cup sweet pickle relish
¼ teaspoon garlic salt
¼ teaspoon celery salt
1 tablespoon prepared mustard
ground black pepper to taste
¼ cup mayonnaise

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.

4 pounds Idaho potatoes
4 jumbo eggs, hard boiled
2 1/2 cups mayonnaise
4 green onions, finely chopped
3 stalks celery, finely chopped
1 tablespoon yellow mustard
1/2 teaspoon freshly ground white pepper
1 teaspoon kosher salt

Steps:

  • In a large pot, add potatoes and water to cover. Bring to a boil and cook until fork tender. Drain and cool. Peel cooked potatoes and cut into small chunks. Put in a very large serving bowl or container. Peel and finely chop hard boiled eggs and add to bowl. Add mayonnaise, green onions, celery, mustard, white pepper and salt. Mix until just combined. Cover and chill in the refrigerator for 3 hours before serving.

Using the microwave provides a quicker version of potato salad than you'll get from boiling the potatoes. Fast, simple, easy, and delicious! Perfect for those days when you just want potato salad but can't be bothered to make it from scratch, yet don't want the garbage you get at the grocery store. Also great for people living in households where other members don't share the same potato salad enjoyment (my fiancee hates mayo). 2 -3 medium potatoes (try to pick ones around the same size for even cooking)
1/2 cup mayonnaise
1 -2 tablespoon mild paprika
2 teaspoons garlic powder
1 teaspoon ground black pepper
1/2 bunch green onion, chopped
1 baby dill pickle, diced (optional)
1 tablespoon pickle juice (optional)
2 hard-boiled eggs, sliced (optional)

Steps:

  • Cut the eyes and blemishes off the potatoes. Skin them if you prefer but I think they're delicious and they're definitely more nutritional!
  • Rinse the potatoes and place them in the microwave undried.
  • Microwave the potatoes (three at a time if you're making a double or triple recipe for the whole family or a potluck) spaced evenly apart on HIGH for THREE MINUTES.
  • Chop your green onions. Chop your pickle and eggs if desired.
  • Flip the potatoes over (careful, they're hot!) and microwave on HIGH for THREE MINUTES more.
  • Mix the mayo, spices, onions, and optional pickle and eggs in a medium-sized bowl.
  • Let the potatoes rest in the microwave for a few minutes (they will continue to cook).
  • Test the doneness of the potatoes with a knife or fork by piercing into the center of each one. If the knife does not go in smoothly or there is resistance, repeat the microwaving process above in increments of ONE MINUTE.
  • Place the cooked potatoes immediately into a bowl of cold water. Let cool for a few minutes.
  • Remove the potatoes and cut into bite-sized pieces (usually halves and then eights will do) - careful, they may still be hot inside.
  • Mix potatoes with sauce mixture, and enjoy!

I wanted to make some potato salad, but didn't want to heat up the kitchen boiling potatoes. Yea for Microwaves!!! Easiest and fastest Potato Salad ever. And good to boot! Make it Sour/Dill or Sweet/ Relish.

5 small yukon gold potatoes about 2-3 inches in diameter
1 stick celery, chopped 1/4 inch pieces
7-15 slice dill pickle chopped or dill relish to taste or chopped sweet pickles, or sweet pickle relish to taste
1/2 to 1 Tbsp yellow mustard or stone ground / dijon if you prefer
2-4 Tbsp finely chopped sweet onion
1 1/2 tsp apple cider vinegar
1/2 (+) c mayonnaise or miracle whip (depending on whether you are making dill or sweet)
salt and pepper to taste.
i like to add a little finely chopped dill weed to my dill potato salad.

Steps:

  • 1. Microwave potatoes on high for about 3 minutes, check to see if they are tender by squeezing lightly. If they yield to pressure but don't feel quite tender, turn them over and rotate position and microwave in 30 second increments until just done but NOT soft and mushy. Remember they continue to cook for a while as they sit. Let cool on countertop while chopping other items. They may still be warm when you peel them, and that's ok.
  • 2. Chop celery, pickle, and onion. Place in medium bowl. Add mustard, vinegar and 1/2 c dressing of your choice, mix well. (if it is too sharp from the vinegar, add a pinch or two of sugar)
  • 3. Peel and chop potatoes into about 1/2- 3/4 inch dice, add to dressing/veggie mixture, season with pepper and salt, mix together lightly but thoroughly, adding extra mayo/Miracle Whip if needed.
  • 4. Serve warm, or refrigerate and serve cold.

2-1/2 pounds Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
1 medium sweet red pepper, chopped
1 small red onion, chopped
1/2 cup shredded carrot
1 cup mayonnaise
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons spicy brown mustard
1 tablespoon mustard seed
3 teaspoons snipped fresh dill, divided
1-1/2 teaspoons sugar
3/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain; cool for 15 minutes. , In a large bowl, combine the red pepper, onion, carrot and potatoes. , In a small bowl, whisk the mayonnaise, oil, vinegar, mustard, mustard seed, 2 teaspoons dill, sugar, salt and pepper. Pour over potato mixture; gently toss to coat. Sprinkle with remaining dill. Refrigerate until serving.
