This is best when prepared a day ahead. Makes zesty flavorful fajitas every time. Great for beef OR chicken.

3 limes, juiced
2 green onions, chopped
3 cloves garlic, minced
3 tablespoons chopped fresh cilantro
2 tablespoons vegetable oil
½ teaspoon red pepper flakes
¼ teaspoon ground coriander
¼ teaspoon ground anise seed

Steps:

  • In a medium bowl, combine the lime juice, green onions, garlic, cilantro, oil, red pepper, coriander, and anise. Whisk until well blended.
  • Pour mixture over your favorite meat, cover, and marinate for 12 to 24 hours before cooking as desired.

This is so easy to make and super delicious! I have posted an even easier chicken marinade that is great for chicken fajitas.

1 lb skirt steak
1 garlic clove, chopped
1 teaspoon cumin
3 tablespoons chopped fresh cilantro
1/3 cup Worcestershire sauce
1/4 cup soy sauce
1 teaspoon liquid smoke

Steps:

  • Trim fat from steak.
  • Pound steak lightly to tenderize.
  • Combine ingredients in gallon-size zipper baggie. Zip closed and shake well to combine.
  • Add meat to baggie.
  • Refrigerate overnight.
  • Grill until desired doneness.

3 tablespoons chopped fresh cilantro
2 tablespoons vegetable oil
1/2 teaspoon red pepper flakes
1/4 teaspoon ground coriander
1/4 teaspoon ground aniseed (optional)

Steps:

  • Combine all ingredients in a bowl and whisk until well combined. Add protein and marinate 8-24 hours, then cook as desired. (I like to marinate in a ziptop bag with the air pressed out; it keeps the marinade in contact with the meat better.).
