SUPER EASY OVEN FRIED CHICKEN
My husbands Aunt taught me how to do this, and it is fantastic. The crust turns golden brown and I love to "clean" the pan after serving!! Measurements are not exact, as it is not a science. Just use what you need!

Steps:
- Rinse chicken breasts and pat dry.
- Season with your choice of seasonings.
- Coat chicken in flour and lay in 9x13 baking dish.
- Pour melted Butter over chicken.
- Bake in preheated 400° oven for 30 minutes.
- Check often after 25 minutes to see if crust is brown and crispy.

My sister is a big Weight watchers follower and this is her recipe. I've used bone-in chicken pieces (legs, thighs,etc..)and it always turns out good.

Steps:
- 1. Heat oven to 400ºF. Spray cookie sheet with cooking spray or line your cookie sheet with foil then spray foil for easier clean up. I'm all about easy clean up. :)
- 2. Pour buttermilk into shallow glass or plastic bowl. Add chicken; turn to coat. Let stand 5 minutes.
- 3. Meanwhile, in large resealable food-storage plastic bag, crush cereal with rolling pin. Add prepared biscuit mix and dressing mix (dry) to cereal in bag. Remove chicken from buttermilk; discard buttermilk. Add chicken to cereal mixture. Seal bag; shake to coat.
- 4. Place chicken on cookie sheet. Spray with cooking spray. Bake 45 to 50 minutes or until juice of chicken is clear when center of thickest part is cut (170°F). Serve immediately. My daughter loves this cold the next day too.

- Pour chicken broth into a large mixing bowl.
- Wash chicken pieces and pat dry. Place chicken pieces into the broth and let soak while preparing flour mixture.
- Mix flour, garlic powder, onion powder, seasoned salt, lemon-pepper seasoning, salt, basil, oregano, and cayenne pepper together in a large, shallow dish until well blended.
- Heat 2 inches oil in a deep saucepan over medium heat.
- Remove one piece of chicken at a time from the broth and dredge in the flour mixture until evenly coated. Lower a few pieces of coated chicken carefully into the hot oil. Fry until golden brown and juices run clear, about 10 minutes per side. Transfer to a paper towel-lined plate to drain. Repeat with remaining chicken.

SUPER EASY VEGAN FRIED CHICKEN
Looking through thePETA website, I found this fun and delicious recipe. Initially the recipe called for regular yellow mustard but I used a Spicy Horseradish mustard that really added a lot of kick! But feel free to use your favorite mustard for the breading part and enjoy your own little concoction!

- * Mix together the sale, onion powder, pepper, garlic powder, flour, and nutritional yeast in a deep bowl. In a seperate bowl, dilute your favorite mustard with the water. Add 1/3 cup of the flour mixture and stir. Combine the baking powder with the remaining flour mixture.
- * Dip chunks of the chicken into the mustard batter, then drop them into the flour mixture coat with the desired amount of "crust." Heat the oil in a large skillet over medium-high heat (or use a deep fryer) and fry until crust is crispy and golden brown, turning as needed.
