6 frozen uncooked breaded chicken breasts (I get mine at Costco, brand tyson- breaded tenderloins)
32 ounces Classico tomato and basil pasta sauce (or your favorite)
1 teaspoon garlic powder
2 cups part-skim mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded

Steps:

  • Preheat oven to 425°F.
  • Coat bottom of casserole with some of the spaghetti sauce.
  • Arrange chicken breasts in casserole dish.
  • Pour spaghetti sauce over the chicken sprinkle with garlic powder.
  • Top with shredded mozzarella, followed by shredded parmesan cheeses.
  • Bake 25-30 minutes.
  • Serve with cooked pasta to use up all that sauce.
  • Don't forget the garlic bread.

This recipe is based off of a Cooking Light recipe, but it is not pan fried at all. You could easily double this recipe, but I cook for two, so this is perfect for us. I serve this with veggies and crescent rolls.

1 tablespoon parmesan cheese, grated (the powdery kind)
2 tablespoons Italian seasoned breadcrumbs
1/8 teaspoon salt
1 large egg, lightly beaten
2 (5 ounce) boneless skinless chicken breasts, pounded to 1/4 inches
3/4 cup spaghetti sauce (tomato-basil is good)
1/2 cup mozzarella cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly spray a pie plate or a foil-lined baking sheet with cooking spray; set aside.
  • Combine Parmesan, breadcrumbs, and salt in a shallow dish (I use a paper plate). Place egg in a separate shallow dish.
  • Dip each side of each chicken breast in egg, then dredge in the breadcrumb mixture. Place on prepared pan.
  • Bake for 18 minutes, flipping once halfway through, until done.
  • Take the chicken out and switch the oven to BROIL.
  • Divide the sauce evenly and pour over each piece of chicken. Sprinkle evenly with the mozzarella cheese.
  • Broil 2 minutes or until the cheese melts.

Ever had one of those nights where you didn't want take-out but you didn't want to make a fuss in the kitchen either? Tonight was one of those nights. I think some of my best dinners are 50% creativity and 50% laziness! ;) So with some of the usual pantry suspects, some leftover chicken, and a minimum amount of fuss, we ended up...

1 loaf of your favorite garlic bread cut lengthwise (we used aldi's l'oven fresh parmesan and romano)
1 jar(s) prego roasted garlic parmesan sauce
4 oz sliced mushrooms (canned or fresh)
1-2 c cubed or shredded chicken (we used a rotisserie chicken)
8 oz shredded cheese, 5-cheese italian blend
1 pkg caesar salad kit (optional)

Steps:

  • 1. Preheat oven to 400F.
  • 2. Lay out the loaf halves on a baking sheet.
  • 3. Spread on the sauce, as much or as little as you like. (Save the remaining sauce for another meal or warm it up for dipping.)
  • 4. Add the mushrooms, dividing evenly. Then the chicken, and finally the cheese.
  • 5. Bake for 12-15 minutes. Depending on how crispy you like your pizza bread, I'd start keeping watch after 10 minutes. Cut each loaf half into 3 pieces, add a small caesar side salad and dinner is served!
  • 6. Going to try it with sliced olives next time, and maybe sliced up breaded chicken tenders. Yummy! I imagine this would also work with the texas toast style garlic bread if you prefer it.
