- Heat oven to 425 degrees F. Scrub potatoes and dry well. Pierce several times with tip of knife; arrange on large baking sheet. Bake 45 minutes or until tender. Cool.
- Slice each potato in half; scoop out flesh (reserve for mashing or potato pancakes), leaving 1/4-inch shell. Brush inside and outside of each potato half with oil; season with salt and pepper.

SUPER SIMPLE CHILI SPICE MIX (WITH CHILI RECIPE INSTRUCTIONS)
I make up about 6-8 small mason jars of the spice mixture ahead of time so that when I am ready to make chili it is about 10 minutes work away (plus simmer time but I haven't figured out how to get around that yet). It is a very versatile recipe and I have made it with ground beef or ground pork and have interchanged various types of beans and corn. Our favorite version is corn with black beans.

- Just layer the spices into a small baby food or mason jar (or ziploc baggy). No need to mix but make sure to label it. I make 6-8 jars at a time.
- To make chili brown 1 pound ground meat of choice (generally beef or pork). Chop extra veggies to make it really special. 1 each of onion and green pepper plus about 6 mushrooms. Cook fresh vegetables with meat for about 5-8 minutes or until soft before adding addtional ingredients. Add one15-ounce can tomato sauce (not spaghetti sauce) and one 28-ounce can chopped tomatoes and jar of spice mixture. Choose 2 different cans of beans or 1 can of beans and 2 cups of corn. Mix everything together and cook on medium low until it starts to simmer. Turn down to low (lid off) and let simmer for about 1 hour (watch the pot carefully because this can burn easily if it is kept on too hot an element). The chili is edible then but it does benefit from additional simmering time if possible. It tastes even better the next day!
- It is also a good candidate for the slow cooker if you prefer. 3-4 hours on high or 6-8 hours on low (make sure to brown ground meat and vegetables before adding rest of ingredients to slow cooker). Serve in a bowl with or without cheese or serve over a baked potato or corn muffin with cheese on top. Yummy! This also freezes well.

This is the recipe I make every year for the Super Bowl, for my boyfriend and two dozen or so of his closest beer-drinking, football-watching friends. The problem with trying to find a good chili recipe is that what makes a "good" chili is a personal opinion; my idea of a great chili may be very different from yours. My chili is heavy on the meat, garlic and spice; rather rich-tasting, hearty, thick, fiery, and smoky. If that sounds like something you'd enjoy, I'm also going to include plenty of advice on how to adjust it to meet your tastes. Enjoy. Notes: To cut down on fat, lean, turkey/chicken Italian sausage can be used, without affecting the flavour or texture of the final meal. Extra-lean beef can also be used.

- Warning: this makes a LOT of chili. I suggest using a 12-quart stock pot.
- In stockpot over medium heat, brown sausage or beef, stirring and breaking it up as it browns. Depending on how lean your meat and sausage are, add olive oil if the meat begins to stick.
- When meat is browned, add onions and garlic and cook until soft. Add chili powder, cocoa, and cumin. Stir well to incorporate and cook for an additional minute.
- Transfer chipotles to blender or food processor and puree until smooth, adding some water if necessary.
- (Warning: if you aren't familiar with chipotles and aren't a fan of very spicy food, they are VERY HOT. If you aren't sure how much of this you would like in your chili - reserve it for now, proceed with the rest of the recipe, and then incorporate the chipotles, one teaspoon at a time, until your desired hotness level is reached).
- Add (chipotles if you are confident you want all of them in there), molasses, tomato paste, ONE can of crushed tomatoes, and ONE cup of the beef stock. Bring to boil, stirrng well to prevent from sticking to bottom of pot.
- Taste your chili so far. Add salt and liquid smoke to taste - it's a big pot, so you may need to add what seems like a LOT of salt to get it to taste right. A little goes a long way with the liquid smoke.
- Depending on how soupy or tomatoey you like your chili - you may or may not wish to add more stock or more tomatoes.
- The Velveeta may seem like an odd ingredient to add to chili - but it adds a creaminess that makes it all come together. If you're not sure you'll enjoy it - remove about a cup of chili to a much smaller pot, add an ounce of Velveeta and cook, stirring, to melt. Taste it - and compare it to the big pot to see which you like better.
- If you like it - cube the Velveeta and add, stirring well to melt and incorporate into the chili.
- If you have left the chipotles aside until now, and want to add a bit of zing - add them, one teaspoon or so at a time, stirring well to incorporate after each addition.
- If you overshoot and it's spicier than you wanted - the potato flakes can soak up a lot of the spice, and you can add them a little at a time.
CHUCK'S SUPER CHILI
This chili is slightly sweet with a touch of heat; the wine gives it a different taste. Everyone in my family loves this chili. I've won a couple of work chili cook-offs with this recipe and done well in some larger cook-offs as well.

- Heat a large skillet over medium-high heat and stir in Italian sausage and ground sirloin. Cook and stir until meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.

- Brown ground beef in (preheated) large skillet with a little water.
- Drain and rinse beef in a colander.
- MUST RINSE IF YOU WANT IT LOW FAT!
- Leave the colander in the sink.
- Put beef in a stock pot.
- Rinse kidney beans in the colander.
- Mix them with the beef.
- Add all other ingredients.
- Cook over med-low heat for about an hour.
- Stir once in a while.
- DON'T LET IT BURN!
- Serve hot.
- Great with Tortilla chips and shredded cheddar cheese.
- Note: For the best Nachos EVER, Spread finished chili over tortilla chips, top with shredded Monterey Jack cheese.
- Place in preheated 400°F oven for 10 minutes.
- Sour cream on the side.
- You can make this into 2 layers also.
- Just add more chips, then chili, then cheese again.

SUPER BOWL CHILI (ANYTIME)
Chunky and full of texture, this chili isn't for the faint of heart. It has some kick behind it. I love the mixture of pork and ground beef - it adds something a little different. The robust flavor from the chili powder and cumin really makes this yummy. Cheese and sour cream mellow this a little and are the perfect topping.

We have an abundance of peppers (of all sorts) growing wonderfully in our garden, so I came up with this wonderful medium heat level sauce (adjustable) that went great as an accompiment with our broiled cod fish fillets. Use it for any recipe calling for Thai chili sauce. Also great as a warm drizzle over a light salad (or how about over ice cream?). This is also a great canning or OAMC recipe! Great for gift giving/gift baskets. Recipe doubles, triples, etc. quite easily, just needing longer time to reduce down.

- To a small saucepan, add all ingredients and stir to combine. Heat and gently simmer over med-low heat, stirring occasionally, until reduced by half or when it is the consistency of a thick maple syrup, about 15-20 minutes. Be sure to keep an eye on it so it does not overcook or burn.
- Remove from heat, let cool slightly, then use an immulsion blender or a mini food processor to chop everything up 'fine'. (you can also do this halfway thru the cooking process, then again at the end of cooking). If using, add food coloring to show level of heat (dark red being very hot).
- Serve warm over fish, pork, chicken, vegetables, etc. Cover and refrigerate any extra. It will last 6 months or more in the fridge. This will get hotter the longer it is stored!
- CANNING: PLEASE follow your canning booklet for sterilization instructions. Using 4 oz jars (a little sauce goes a long way), hot pack in boiling water bath for 10 minutes. Stored, it should last up to 2 years.

- finely chop the chili's and garlic.
- Add the sugar, chili's and vinegar to a pan and bring to the boil. Reduce the heat and simmer for 15 minutes. Add the garlic and simmer for a further fifteen minutes until the mixture becomes thickened and syrupy.
- Transfer to a sterilised jar and allow to cool. This can be kept in the fridge for up to a month. (Only lasts a week in our house though!).

- 1. Drizzle about a Tbsp. of olive oil or canola oil in a large stock pot on the stove and heat to med-high temp. Saute onion, jalapenos, and garlic until onions are almost clear.
- 2. Mince lean ground beef and cook with the onion mixture. Salt & pepper to taste. Add Mexican oregano and stir to blend.
- 3. Add tomatoes, tomato sauce, tomato paste, green chiles, including the liquid from the tomatoes. Stir to incorporate.
- 4. Drain the liquid from all of the beans. Pour beans into the chili mixture and stir well. If you have time to tend to the beans you can leave them in the stock pot. Let the chili beans simmer for 1-2 hours. Make sure to stir periodically. Otherwise, put the chili mixture & beans into a slow cooker for 4 - 6 hours on low, then on warm until ready to serve.
- 5. Optional: Serve with corn bread, Fritos scoops, shredded cheddar/jack or mexican blend cheeses, and sour cream.
- 6. * DIRECTIONS IF YOU ARE GOING TO USE A SLOW COOKER OR CROCKPOT: Steps 1 , 2 & 3 are done in a large skillet or large saute pan instead of a stock pot. Pour the ingredients into slow cooker or crockpot and continue with steps 4 & 5.

- 1) Combine spices (salt, chili powder, cumin, black pepper, sugar) in a small bowl and mix well. Set aside. 2) Heat large Dutch Oven (or large lidded pot) over medium heat. When hot, add ollive oil and butter, then onion and garlic. Saut'e with 1 teaspoon of your spice blend for 3-4 minutes. 3) Add ground beef plus one tablespoon of your spice blend until meat is fully cooked. Do not drain any juices off. 4) Add tomato sauce, crushed tomatois, beef broth, ketchup, hot sauce and drained beans. Add all of your remaining spice blend then stir well and bring up to a simmer. Once it starts simmering, reduce heat to low and simmer with the lid on for 30 minutes. Taste for seasoning adjustment. I usually add a bit more salt and pepper, but not too much. This recipe makes about 16 small or 8 large servings. Serve in bowl with hand crushed Frito's over the top. Cooks Note When it comes to choosing your canned tomato products, I like the taste of the organic brands much better. Don't try to make seasoning adjustments until after all ingredients have simmered and concentrated for the first 30 minutes. It takes them a white to come together. If making this the day before, let the chili cool down with the lid on for about 30-45 minutes before putting in your fridge. When ready, slowly reheat the chili over low heat then move into your crock pot on the low temp setting. Have some hot sauce, diced jalapeno, diced onion and shredded cheddar cheese available for your guests to serve themselves.

- In a small casserole dish spread the cream cheese evenly all over the bottom.
- Top with the can of chili.
- Top with the shredded cheese.
- Add as many jalapeño slices as you wish. If the kids are coming, I will just top half the dish or leave them out all together and serve them on the side.
- Bake in a 350° oven until cheese melts, about 10 minutes.
- When I am expecting a crowd, I triple the recipe and put it in a lasagna pan.
- I also recommend Frito's "Scoops" corn chips because regular tortilla chips tend to break in this dip.
