1 pound catfish nuggets
1/2 cup cornmeal
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • In a shallow dish, mix together cornmeal, Cajun seasoning, garlic powder, and salt.
  • Place a catfish nugget in the cornmeal dish. Coat completely. Remove to a lined baking sheet. Repeat for remaining fish.
  • Bake at 400° for 17-20 minutes, until fish is cooked through, golden, and flaky.

2 pounds catfish fillets, cut into 1 1/2-inch pieces
2 tablespoons dried thyme leaves
1 cup spicy brown mustard
1 quart vegetable oil for frying
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon baking soda

Steps:

  • Place the catfish pieces into a mixing bowl and sprinkle with thyme leaves. Toss until the catfish is evenly coated with the thyme. Mix in the mustard with your hands. Cover, and refrigerate overnight, up to 24 hours.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Whisk the flour, salt, black pepper, and baking soda together in a mixing bowl.
  • Dip the catfish pieces one at a time into the flour mixture and shake off the excess. Fry the catfish nuggets in batches until they are no longer translucent in the center and are golden brown, 3 to 4 minutes. Let the oil come back up to temperature between batches. Drain the nuggets on a paper towel-lined plate before serving.

1 1/2 cups ketchup
2 tablespoons horseradish
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce (recommended: Frank's Red Hot)
1 clove garlic, minced
Vegetable oil, for frying
1 1/2 cups buttermilk
2 eggs
2 tablespoons cayenne pepper
1 tablespoon salt
1 1/2 teaspoons freshly ground black pepper
2 catfish fillets (about 1 1/4 pounds), cut into roughly
2 1/2 by 1-inch strips
1 cup all-purpose flour 1 cup bread crumbs
1/2 tablespoon sugar

Steps:

  • To make the sauce: Mix all ingredients in a bowl and refrigerate until serving.
  • When ready to fry, fill a large heavy pot with enough oil to measure 1 1/2 inches up the side of the pan and heat to 350 degrees F.
  • To make the catfish sticks: In a measuring glass, mix together buttermilk, eggs, cayenne, salt and pepper. Pour into a large plastic bag, then add the catfish. Seal, removing as much air as possible, and refrigerate for 10 minutes. Meanwhile place flour in a shallow bowl. Combine the bread crumbs with sugar and place in another shallow bowl. Remove fish from the buttermilk mixture and coat lightly with flour. Place strips back in the buttermilk and then dredge in the bread crumb mixture. Fry strips in batches for about 3 minutes on each side or until golden brown. Drain on a paper towel-lined plate.
  • Serve catfish sticks with dipping sauce.

One 8-ounce package hushpuppy mix
1/2 cup milk
1/2 cup water
1 large egg, beaten
1 tablespoon sliced pickled jalapeno peppers, minced
1 tablespoon hot pepper sauce
1/2 teaspoon cayenne
Vegetable oil, for frying
1 1/4 pounds catfish fillets (about 4 fillets)
1 cup all-purpose flour
Spicy Tartar Sauce, recipe follows
1 cup mayonnaise
1 tablespoon sliced pickled jalapeno peppers, finely minced
1 tablespoon finely minced onion
1 garlic clove, finely minced
1 teaspoon hot pepper sauce
1/2 teaspoon lemon juice
1/4 teaspoon chili powder
1 pinch salt

Steps:

  • In a medium bowl, stir together hushpuppy mix, milk, water, egg, jalapenos, hot pepper sauce and cayenne; let stand 5 minutes.
  • Pour oil to a depth of 1/2 inch in a large deep skillet; heat oil to 350 degrees F.
  • Pat catfish fillets dry with paper towels, and cut into bite-size pieces. Dredge catfish pieces in flour, and then dip in hushpuppy batter mixture. Drop catfish pieces into hot oil, and fry, in batches, 3 to 4 minutes on each side or until golden. Serve with Spicy Tartar Sauce.
  • Stir together all ingredients in a medium bowl. Cover and chill until ready to serve.

Crunchy catfish nuggets that can be served as hors d'oeuvres. These were a special hit with my 3 year old who loved the fact that she could eat them like finger food. You may want to adjust the seasoning - my daughter is used to spicy stuff! These have the great taste of fried fish without the grease.

½ cup dry bread crumbs
½ teaspoon lemon pepper
½ cup egg substitute
2 (4 ounce) fillets catfish, cut into 1 inch pieces
2 tablespoons vegetable oil

  • In a small bowl, mix dry bread crumbs and lemon pepper. Place egg substitute in a separate small bowl. Dip catfish pieces in the egg substitute, then into the bread crumb mixture to coat.

1 pound catfish fillets, cut into 1 inch pieces
3/4 cup seasoned fish fry coating (such as Louisiana® Fish Fry Products)
nonstick cooking spray

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place seasoned breading mix in a gallon-size plastic resealable bag. Drop catfish pieces inside, close, and shake to coat fish with breading on all sides.
  • Spread out nuggets on a baking sheet and spray with non-stick cooking spray. Place nuggets in an even layer in the air fryer basket, sprayed side down. You may need to work in batches depending on the size of your air fryer. Spray the tops with non-stick cooking spray.
  • Air fry for 8 minutes. Using tongs, flip nuggets over and cook for 4 minutes more.
