WARM MARINATED OLIVES



Warm Marinated Olives image

2 cups large green olives with pits, such as Cerignola (11 ounces)
2 cups large black olives with pits, such as Kalamata (11 ounces)
Zest of 1 orange, peeled in large strips
4 large garlic cloves, smashed
2 teaspoons whole fennel seeds
2 teaspoons chopped fresh thyme leaves
3/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2/3 cup good olive oil
4 sprigs fresh thyme

Steps:

  • Drain the green and black olives from the brine or oil that they're packed in and place them in a medium bowl. Add the orange zest, garlic, fennel seeds, thyme leaves, red pepper flakes, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Pour the olive oil over the mixture, add the thyme sprigs and toss to combine.
  • Transfer the mixture, including the olive oil, to a medium (10-inch) sauté pan. Heat over medium heat until the oil begins to sizzle. Lower the heat and sauté for 4 to 5 minutes, stirring occasionally, until the olives and garlic are heated through and fragrant. Serve warm right from the pan or transfer to a serving dish. Offer a small dish for the pits.

1 cup shredded cheddar cheese
2 tablespoon butter, softened
1/2 cup flour
Dash of cayenne
24 stuffed green olives drained and dried
Paprika

Steps:

  • Preheat oven to 400 degrees. In a medium bowl, combine cheese, butter, flour and cayenne with a fork until a dough-like form forms. Scoop up a tablespoon of the dough and enclose one olive with dough. Roll into a ball and place on baking sheet. Repeat process using up remaining dough. Sprinkle with paprika. Bake for 15 minutes or until golden. Serve warm.

1/4 cup sliced green onions
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 cup pitted black olives
1 package Keebler® Toasteds® sesame cracker

Steps:

  • In small bowl stir together sour cream, onions, chili powder, Worcestershire sauce and soy sauce. Stir in olives. Serve with crackers.

1 (8-ounce) package cream cheese, softened*
2 tablespoons anchovy paste
1 tablespoon chopped fresh chives
1 to 2 tablespoon light cream or milk
1 package Keebler® Zesta® Original cracker

Steps:

  • In small bowl stir together cream cheese and anchovy paste. Stir in chives and enough cream or milk to make of desired spreading consistency. Garnish as desired. Serve with crackers.*NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.
