CALIFORNIA SUNSHINE CAKE

Much like the Orange Kiss-Me Cake, this recipe uses an entire orange, raisins and walnuts. I like to substitute hazelnuts. Recipe can be halved for an 8" X 8" cake. Check for doneness at about 35 min. for smaller cake. I use organic oranges and wash them thoroughly.

2 oranges
1 cup raisins
1/2 cup butter, softened (do NOT use low fat margarines)
1 cup sugar
2 eggs
1 teaspoon salt
2/3 cup buttermilk
2 cups white flour, sifted
1 teaspoon baking soda
2/3 cup orange juice
1/4 cup sugar
2 teaspoons cinnamon

Steps:

  • Juice the oranges, reserving juice for topping.
  • Put the orange rind, the raisins and the nuts through the medium blade of a meat grinder (or process with steel blade in food processor until a coarse grind is achieved).
  • Combine butter and sugar in mixer bowl and beat together until fluffy.
  • Add eggs one at a time and continue beating until completely incorporated.
  • Combine salt, flour and baking soda and sift together.
  • Add flour and buttermilk alternately in 3 portions, mixing on low after each addition.
  • Fold in orange, raisin, nut mixture until completely combined.
  • Preheat oven to 350F and grease a 9" X 13" pan or a bundt pan.
  • Bake for 45 minutes, or until toothpick inserted in cake comes out clean.
  • While cake is still hot, pierce all over with a fork.
  • Mix orange juice, sugar and cinnamon and carefully pour mixture over cake. (This is harder on the bundt cake -- be patient).
  • When cake has cooled, remove from pan.
  • Refrigerate leftover cake.

1 (18 1/4 ounce) box white cake mix
1 cup water
1/3 cup vegetable oil
3 eggs
2 teaspoons orange extract
1 (3 ounce) box orange Jell-O
1 cup boiling water
1 cup cold water
1 (8 ounce) package cream cheese, at room temperature
1 (3 1/2 ounce) box instant vanilla pudding
1 (3 ounce) box orange Jell-O
1 cup milk
1 teaspoon vanilla
1 (8 ounce) container Cool Whip, thawed

Steps:

  • Place cake mix in a bowl.
  • Add water, oil,eggs and extract; beat on medium low speed two minutes.
  • Place batter evenly into a greased and floured 9x13 inch baking pan.
  • Bake in a 350 degree oven for 30-35 minutes.
  • While cake is warm, poke holes evenly over cake with a fork.
  • Pour boiling water over jello in a bowl, stir and dissolve for 2 minutes. Then add cold water into jello and stir till combined.
  • Pour evenly over cake, when cooled; chill 2-4 hours.
  • For frosting, beat softened cream cheese till creamy and smooth.
  • Add pudding, orange jello, milk and vanilla; beat 1-2 minutes, or till smooth.
  • Fold in Cool Whip till combined.
  • Frost evenly over cooled cake.
  • Cover and chill till ready to serve.
  • Chill leftovers.

Twist on banana bread!! Very moist. When testing I was concerned about not having added spices, but the flavored jello, bananas, and toasted coconut really pulled it all together.

1 3/4 cups all-purpose flour
1 (3 ounce) package pina colada flavored Jello gelatin
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 ounces rum
1/2 cup butter or 1/2 cup margarine
1/2 cup white sugar
1/4 cup brown sugar
2 large eggs
2 medium bananas, mashed
1 cup toasted coconut
1 3/4 cups powdered sugar
1/4 cup pineapple juice

Steps:

  • Preheat oven to 350.
  • Grease 9 x 5 in loaf pan. (Wilton Cake Release works best).
  • Sift dry ingredients (including jello) together into bowl.
  • In seperate bowl beat butter or margarine until creamy.
  • Beat in white and brown (NOT POWDERED) sugars slowly.
  • Beat in eggs (and rum if desired) THOROUGHLY.
  • Slowly beat in dry ingredients.
  • Finally beat in mashed bananas until well mixed.
  • Pour into greased loaf pan.
  • Center loaf pan in oven.
  • Bake for 1 hour to 1 hour and 15 minutes OR until toothpick inserted in CENTER of loaf comes out clean.
  • While loaf is baking prepare pineapple glaze.
  • Sift powdered sugar into bowl.
  • Beat powdered sugar together with pineapple juice until smooth.
  • Pour over cooled loaf and sprinkle with toasted coconut.

1 (18 1/2 ounce) package yellow cake mix (without pudding)
3 eggs
1/3 cup oil
1 cup crushed pineapple, with a little juice
1/2 cup sour cream
1 tablespoon crushed pineapple (a little juice and a little fruit)
1/2 cup sifted powdered sugar

Steps:

  • FOR THE CAKE: Beat together all the ingredients, for 4 minutes, at medium speed. Spread batter evenly into a greased 10 inch tube pan and bake in a 350°F oven for 45 to 50 minutes, or until a cake tester, inserted in center, comes out clean. Allow to cool in pan.
  • When cook, remove from pan and brush top with Pineapple glaze, and allow a little to drip down the sides. Serves 10.
  • FOR THE GLAZE: Stir together pineapple and sugar until blended.
  • NOTE: This cake is a good choice for a ladies luncheon, for it is very light and very delicious.
