MY BEST SOUTHERN CORNMEAL MUFFINS



My Best Southern Cornmeal Muffins image

2 cups self-rising white corn meal mix (look for Martha White or White Lily brands) 1 Large egg 2 cups buttermilk (whole buttermilk, if you can find it) 1/4 cup vegetable oil (plus a bit more for greasing the muffin tin) butter for serving

Steps:

  • Preheat oven to 475 degrees. Put cornmeal mix in a medium bowl. Beat the egg in a 4 cup pyrex measuring cup (or another medium bowl), add buttermilk and vegetable oil and mix until smooth. Pour buttermilk mixture over the cornmeal and stir until combined. Do not over mix...a few small lumps are fine. Set aside while you prepare the pan.
  • Grease a 12-count muffin tin by drizzling 1/4-1/2 teaspoon of vegetable oil in each cup and spreading it around, making sure to coat the sides. Place muffin tin in the hot oven until very hot....you should be able to smell the pan and the oil cooking almost, but not quite, burning ...this will only take 5-6 minutes if your oven is nice and hot.
  • Carefully take the hot pan out of the oven and immediately fill with cornmeal batter, each cup about 3/4 full. The batter should sizzle and pop as you pour it in. Do this quickly and immediately return the pan to the hot oven. Bake until dark golden brown, 15-20 minutes.
  • When the muffins come out of the oven, immediately remove them from the muffin tin and place on a cooling rack (otherwise the crusts will steam and turn soft) Serve as soon as possible with salted butter.

  • Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.

3 cups all-purpose flour
1 cup sugar
1 cup medium cornmeal
2 tablespoons baking powder
1 1/2 teaspoons salt
1 1/2 cups whole milk
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 12 muffin cups with paper liners. In the bowl of an electric mixer fitted with a paddle attachment, mix the flour, sugar, cornmeal, baking powder, and salt. In a separate bowl, combine the milk, melted butter, and eggs. With the mixer on the lowest speed, pour the wet ingredients into the dry ones and stir until they are just blended. Spoon the batter into the paper liners, filling each one to the top. Bake for 30 minutes, until the tops are crisp and a toothpick comes out clean. Cool slightly and remove from the pan.

1 cup yellow cornmeal
1/4 cup sugar
2-1/2 teaspoons baking powder

1/2 teaspoon baking soda
1 large egg
1 large egg yolk
1-1/4 cups buttermilk
1/3 cup canola oil
3/4 cup whole kernel corn
HONEY BUTTER:
1/2 cup butter, softened
2 to 3 tablespoons honey

Steps:

  • In a large bowl, combine the first six ingredients. In another bowl, combine the egg, egg yolk, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in corn., Fill greased muffin cups three-fourths full. Bake at 400° for 18-23 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. , In a small bowl, beat butter and honey until blended. Serve with muffins.

Coarse salt
1/4 cup sunflower or safflower oil
4 tablespoons unsalted butter, melted
2 tablespoons mild honey, such as acacia or orange blossom
2 large eggs, lightly beaten
1 cup whole milk

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. Whisk together cornmeal, flour, sugar, baking powder, and 1 1/4 teaspoons salt in a large bowl. Combine oil, butter, and honey; stir in eggs and milk. Stir oil mixture into cornmeal mixture. Divide batter evenly among baking cups.
  • Bake until tops are golden and a toothpick inserted into the centers comes out clean, about 18 minutes. Let cool for 10 minutes.
