SPICY CHOCOLATE PORK AND BEANS



Spicy Chocolate Pork and Beans image

4 pounds pork shoulder, diced
3 tablespoons olive oil
4 red onions, finely chopped
6 cloves garlic, crushed
1/4 cup plus 1 teaspoon smoked paprika
Six 14-ounce cans chopped tomatoes
Four 14-ounce cans black-eyed peas, drained and rinsed
2 cups coconut water
6 ounces dark chocolate
1/2 pound basmati rice, cooked
4 small avocados, sliced
1 bunch fresh cilantro, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Preheat an ovenproof saute pan with a lid over high heat.
  • Working in batches, brown the pork on all sides in 2 tablespoons oil, then transfer to a bowl.
  • Heat the remaining tablespoon oil in the pan, then cook the onions, about 5 minutes. Add the garlic and smoked paprika and cook for an additional 30 seconds.
  • Add the chopped tomatoes, black-eyed peas, coconut water and the pork and bring to a simmer, stirring well. Cover and transfer to the oven. Bake, stirring occasionally, until pork is tender, about 1 1/2 hours.
  • Stir in the chocolate until it has melted. Serve with the basmati rice, avocado slices and cilantro.

4 tablespoons/59 ml extra-virgin olive oil
3 cloves garlic, peeled and crushed
8 (3-ounce/85 g) pork sausage links
2 sprigs fresh rosemary
1 (10-ounce/283 g) can peeled plum tomatoes
1/2 cup water
2 (19-ounce/540 ml) cans cannellini beans, drained and rinsed
Salt and freshly ground black pepper

Steps:

  • In a saucepan, heat the olive oil. Saute the garlic and add the sausages and rosemary. Cook for a few minutes, turning the sausages over. Pierce the sausages to allow the fat to drip out and flavor up the dish. Add the tomatoes to the pan. With the back of a wooden spoon, break up the tomatoes into little chunks. Add 1/2 a cup of water and allow to simmer. Then add the beans, salt, and pepper.
  • Let cook together for about 15 minutes or until the sauce has reduced and thickened.

1 spaghetti squash
Olive oil or butter
Freshly grated Parmesan cheese
Black pitted slivered olives for garnish, optional

Steps:

  • You can cook the spaghetti squash a couple of ways. To save on time, bring a large amount (enough to cover the squash) of water to a boil. Gently lower in the spaghetti squash and cook for about 30 minutes or until a fork goes easily into the flesh. Remove from the water and let it cool.
  • Or you can bake the squash. To do so, preheat the oven to 350 degrees. Set the squash on a baking sheet and prick it with a pot fork or slender long knife so the skin doesn't burst. Bake anywhere from 45 minutes to 1 1/2 hours, depending upon its size. Let cool a bit.
  • Either way you cook the squash, split it down the middle and remove the seeds. With a fork rub the squash flesh until it separates into spaghettilike strands. To serve it simply, reheat it in olive oil or butter, season with salt and pepper and fold in grated cheese or serve it more as a main course with more ample toppings. Garnish with olives.

This is a recipe I got from my mother-in-law. This roast turns out very moist. I also add potatoes and carrots for a complete meal.

1 (5 lb) pork roast
1 garlic clove, slice into 5 sections
1 (1 ounce) package beef soup mix
2 cups warm water

Steps:

  • Rinse pork with cold water.
  • Preheat oven to 350 degrees.
  • Poke holes, about 5, in pork roast.
  • Place garlic in holes.
  • Mix dry soup mix with 2 cups warm water.
  • Pour over roast.
  • Roast covered in oven for three hours.
