TANGY LIME MARINADE

Give your favorite steaks a Mexican twist with this marinade of fresh lime juice, brown sugar, Worcestershire and garlic at your next barbecue.

Yield Makes enough for 1 to 1 1/2 pounds meat

Number Of Ingredients 5

1/4 cup fresh lime juice
2 tablespoons vegetable oil
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
3 teaspoons minced garlic

Steps:

  • Combine all ingredients in small bowl. Place beef steak(s) and marinade in food-safe plastic bag; turn steak(s) to coat. Close bag securely and marinate in refrigerator 15 minutes to 2 hours for tender steaks; 6 hours or as long as overnight for less tender steaks, turning occasionally.
  • Remove steak(s) from bag; discard marinade. Place steak(s) on grid over medium, ash-covered coals or over medium heat on preheated gas grill. Grill according to the chart for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Visit our Marinades page for more information.

  • Combine all ingredients in a mason jar and shake well. Let sit in the refrigerator for 1 hour or overnight to allow flavors to combine. Shake well before using.

1/4 cup hoisin sauce

1 (6 ounce) can tomato paste
1/2 cup lime juice
1/4 cup honey
2 tablespoons garlic, minced
1 teaspoon liquid smoke, hickory flavored
2 teaspoons fresh cilantro, chopped finely
1 teaspoon ancho chili, crushed

Steps:

  • In medium saucepan, add all ingredients and bring to a slow boil over medium-high heat on stovetop, stirring frequently.
