SUMMERTIME CUCUMBER AND COTTAGE CHEESE SALAD

My grandmother used to make this healthy summertime salad to help use up extra cukes from the garden. My husband works outside and loves coming home to this during the heat of the summer. The cottage cheese and mayo can be subbed with low fat for a healthier version.

1 large cucumber (i prefer english)
1 small sweet onion
24 ounces cottage cheese
2 tablespoons mayonnaise
salt and pepper

Steps:

  • Dice cukes and onion into small pieces.
  • Mix cottage cheese, cukes, onions, mayo and salt/pepper in medium mixing bowl.
  • Refrigerate for at least 30 minutes.

Fresh cottage cheese salad. Utilize the veggies from your garden. I'm not sure when I started making this salad. My grandma came up with it years ago, and I've made some simple changes to make it my own. **I've never had this salad on a bun, but my fellow Zaarites have taken gorgeous pictures in that form. I think I'll try it on a toasted onion bagel!

1 (24 ounce) container cottage cheese
1 medium carrot, peeled and shredded
1/2 green pepper, chopped (more or less depending on your taste)
2 green onions, chopped fine (use tops)
2 medium fresh tomatoes, de-seed for less juice and chopped
salt and pepper

Steps:

  • Drain excess fluid from cottage cheese. (If you decide to put in on bread, you may want to drain in a strainer.).
  • Gently fold together shredded carrot, green pepper, onions, tomato and cottage cheese.
  • Place in serving dish, and refrigerate until ready to serve.

1 1/2 c cottage cheese (regular, low-fat, fat free large or small curd ... your choice)
1 thin cucumber or 2 cucumber pickles peeled , halved and cut thin
1 - 2 green onions chopped partially up stem
1 - 2 pinches dill (optional)
salt/pepper to taste
garnish: w/ cherry tomatoes, cherry peppers, fresh green pepper strips, raddishes or whatever suits your fancy

  • 1. In serving bowl add all ingredients starting with the cottage cheese first , mix/toss well .. top with garnishes of your choice. Enjoy !

Nice crisp lettuce leaves filled with no fat cottage cheese, spring onions, radish and celery, garnished with tomatoes, cucumber and radish and seasoned with dill.

6 large lettuce leaves (I use iceberg)
1 cup fat-free cottage cheese
2 spring onions, chopped
1 stalk celery, from the heart chopped
1 large red radish, chopped
1/2 teaspoon dried dill
salt & freshly ground black pepper
1 large plum tomato, sliced
1 large red radish, sliced
8 -10 thinly sliced peeled cucumbers

Steps:

  • Arrange 3 large lettuce leaves on each of two plates, set aside.
  • Place cottage cheese in a bowl and add chopped spring onions, radish, celery, dried dill and salt and pepper to taste.
  • Mix well.
  • Place half of cottage cheese mixture on top of lettuce on each plate.
  • Garnish with sliced radish, cucumber and tomatoes.
  • Sprinkle salt and pepper to taste over garnishes.
