A classic Turkey Club sandwich made healthy, piled high with turkey breast, bacon, lettuce, and tomato on whole grain bread, the perfect easy lunch.

Steps:
- Cook bacon until crisp then drain fat on a paper towel.
- Toast the bread the spread mayo on both pieces. Top with 1 slice lettuce, turkey, tomato, bacon and remaining lettuce and close.
- Slice in half and enjoy!

- In a 4-qt. slow cooker, combine the first 6 ingredients. Cover and cook on low until vegetables are tender and cheese is melted, 3-4 hours. Stir mixture; spoon 1/2 cup onto each bun.

This is my version of a local sandwich I love. I get the craving too often to eat out every time, so I adopted it and make my own at home. I say "Summer" because the cucumber gives it a 'refreshing' taste. Yummy!
