This creamy, satisfying summer salad or dessert is also a family favorite at Thanksgiving. My mother-in-law could be counted on to bring this dish to all our family functions.

1 (8 ounce) package cream cheese
¼ cup white sugar, or to taste
1 (12 ounce) container frozen whipped topping, thawed
3 bananas, peeled and sliced
1 (15.25 ounce) can crushed pineapple, drained
1 (15.25 ounce) can fruit cocktail, drained
1 large Jonagold apple, peeled and chopped
½ cup sweetened flaked coconut
1 (4 ounce) jar maraschino cherries, drained and halved
½ cup chopped pecans
½ cup golden raisins

Steps:

  • Beat the cream cheese and sugar together in a large bowl. On high speed, beat in the whipped topping. Fold in the bananas, pineapple, fruit cocktail, apple, and coconut. If desired, mix in the maraschino cherries, pecans, and raisins. Pour the salad into a serving bowl, and chill 1 hour before serving.

2 ounces cream cheese, softened
4 teaspoons sugar
2/3 cup whipped topping
1-1/2 cups mixed fresh berries
Additional whipped topping, optional

Steps:

  • In a small bowl, beat cream cheese and sugar until smooth. Fold in whipped topping., In each of 2 parfait glasses, layer a fourth of the cream cheese mixture and a fourth of the berries. Repeat layers. Top with additional whipped topping if desired. Chill until serving.

2½ cups crushed vanilla wafers
½ cup unsalted butter
2 cups powdered sugar
½ cup unsalted butter (softened)
8 ounces cream cheese (softened)
8 ounces cool whip
20 ounces crushed pineapple (1 can, drained well)
fresh berries (optional topping)

Steps:

  • Melt butter in the microwave and allow to cool.
  • Combine the cookie crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan.
  • Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until it is all mixed together.
  • Next add the can of pineapple and cool whip and stir in with a rubber spatula.
  • Spread the pineapple mixture over the crust.
  • Sprinkle the remaining cookie crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.
  • Feel free to top with fresh berries when serving, if desired.

2 cups flour
1 cup chopped pecans
1 cup butter, melted
1/4 cup sugar
1 cup packed brown sugar
3 tablespoons cornstarch
5 cups chopped rhubarb (fresh or frozen)
1 cup sliced fresh strawberries
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 1/4 cups whipping cream, WHIPPED, divided
brown sugar (optional)

Steps:

  • Preheat oven to 350; grease a 13x9 pan; set aside.
  • In a small bowl, combine crust ingredients; press into prepared pan; bake for 18-20 minutes (golden brown); cool.
  • In a large sauce pan, combine sugar & cornstarch; stir in rhubarb; bring to a boil (medium heat), stirring often; reduce heat, cook & stir for 4-5 more minutes --thickened; remove from heat, cool.
  • Stir in strawberries; set aside.
  • In a small mixing bowl, beat cream cheese and powdered sugar (smooth); fold in one cup of the WHIPPED cream; spread over crust; top with rhubarb-berry mixture; spread with with remaining whipped cream.
  • Chill for 3-4 hours before serving.
  • Garnish with a sprinkle of brown sugar if desired.
