SUMMER BUTTER BEAN SALAD WITH HOT SAUCE VINAIGRETTE

Summer Butter Bean Salad with Hot Sauce Vinaigrette image

Are you wondering what butter beans are? They're what we call lima beans in the South because of their creamy, buttery texture. For this salad, I thought about succotash, a classic Soul Food dish made with butter beans, fresh corn and tomatoes, then I added a few more fresh summer veggies and herbs, plus a spicy, tangy vinaigrette. You really could add anything else from your garden or the farmers' market, like zucchini, bell peppers or snap peas-go ahead and make it your own!

SUMMER WHITE BEAN AND ARUGULA SALAD

Summer White Bean and Arugula Salad image

"I'll explain how to choose and use a pressure cooker to make healthier dishes in a shorter amount of time," says Melissa Clark. "This tool preserves the flavor and texture of the beans and other vegetables while making your life easier in the kitchen."

Provided by Melissa Clark

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 9

1 1/2 cups dried cannellini beans
1/4 cup extra-virgin olive oil, divided, plus more to taste
Sea salt
1 tablespoon sherry vinegar, plus more to taste
2 tablespoons minced shallots
8 cups wild arugula, baby kale, or baby mustard greens
2 cups cherry tomatoes, halved
4 ounces young pecorino or Manchego, coarsely grated
Freshly ground black pepper, optional

Steps:

  • In the bottom of a pressure cooker, combine beans, 4 cups water, 1 tablespoon oil and 1 teaspoon salt. Cover tightly and bring to high pressure over medium-high heat, about 10 minutes.
  • While the beans are cooking, combine the ingredients for the vinaigrette. In a small bowl, combine the vinegar, shallots and a pinch of salt. Check the pressure cooker, adjusting the heat as needed to maintain pressure, for 30 minutes. Drizzle the remaining olive oil into the vinaigrette. Set aside.
  • Once the beans have cooked at pressure for 30 minutes, remove from the heat and run the pot under cool, running water to release the pressure. Check the quick release valve to make sure all of the pressure has been released.Carefully open and test the beans. If they are not done, continue to simmer uncovered until they are (usually just another 5 to 10 minutes). If the pan dries out, add more water. Drain the beans and let cool.
  • To assemble the salad, add half of the vinaigrette to the cooled beans. Toss gently to coat.In a large bowl, toss together the arugula, remaining vinaigrette and halved tomatoes. Add the grated Pecorino or Manchego cheese. Add the dressed beans. Toss to combine. Finish with optional freshly ground black pepper. Serve immediately.

MAKE-AHEAD SUMMER BEAN SALAD

Make-Ahead Summer Bean Salad image

Freezes beautifully! I always keep a batch or two of this frozen, ready for unexpected company, or just for summertime ease. Guests will never know you made it weeks in advance. So simple, but this salad always gets compliments and requests for the recipe. A healthy and cooling addition to any summer lunch or dinner--pulling this out of the freezer really helps out when you're caught short or it's too hot to be stuck in the kitchen! Can be made and kept fresh in the fridge for several days before serving, or frozen (undrained) for several weeks.

EASY SUMMER "MEXICAN" BUTTER BEAN SALAD

Easy Summer

This is a great, quick, fresh tasting salad with a Mexican "flair" that's easy to whip-up for cookouts or picnics or anytime you're grilling. I got it originally from gloryfoods.com, but have modified it slightly(mainly less oil, more cayenne). It's a terrifc way to use the cukes from your garden and your homegrown tomatoes could easily be used in place of the grape tomatoes. Cannellini beans, garbanzo beans or black-eyed peas can be substituted for the butter beans. Frozen vs canned is a matter of preference.

VEGAN SUMMER THREE-BEAN SALAD WITH TOFU AND SOY VINAIGRETTE

Vegan Summer Three-Bean Salad With Tofu and Soy Vinaigrette image

Provided by Elaine Louie

Categories     dinner, lunch, salads and dressings

Time 1h

Yield 4 main course or 6 appetizer servings

Number Of Ingredients 19

For the tofu-soy vinaigrette:
1 cup silken tofu
1/2 cup soy sauce
2 tablespoons sugar
2 tablespoons sambal oelek chili paste
2 tablespoons sherry vinegar
1 tablespoon sesame oil
1 cup canola oil
For the radishes and beans:
1 pound radishes, preferably a mix of different kinds, trimmed and thinly sliced
Salt
2 pounds fresh beans, preferably a mix of three kinds, such as green, yellow wax, and Romano, or haricot verts, snow peas and sugar snap peas, trimmed
For the tofu croutons:
4 cups vegetable oil, or as needed
2 tablespoons cornstarch
1/2 pound firm tofu, patted dry and cut into 1/2-inch cubes
Salt
1 to 2 tablespoons black sesame seeds, lightly toasted
1 to 2 tablespoons white sesame seeds, lightly toasted.

Steps:

  • For the tofu-soy vinaigrette: In a blender, combine the tofu, soy sauce, sugar, sambal oelek, vinegar and sesame oil. Blend until smooth. With the motor running at medium-low speed, slowly add the canola oil; the vinaigrette will become very thick. May be covered and refrigerated for up to a week.
  • For the beans and radishes: Prepare two bowls of ice mixed with water. Place the sliced radishes in one of the ice baths. Bring a large pot of heavily salted water to boil. Add the beans and boil until they are crisp-tender, about 4 minutes. Drain under cold water, then place in the remaining ice bath to chill. Drain well and set aside.
  • For the tofu croutons: Pour oil into a wok or small deep-fryer over high heat, and heat to 350 degrees. Meanwhile, put cornstarch into a wide, shallow bowl, and add tofu, tossing gently to coat. Working in batches, if needed, deep-fry the tofu until golden and crispy, 5 to 6 minutes. Using a slotted spoon, transfer to paper towels to drain. Season with salt, and set aside.
  • Drain the radishes well, and place in a large bowl. Add blanched beans, and toss to mix. Add vinaigrette to taste, reserving any excess for another use. Mix well, and season with salt to taste. To serve, place in individual serving plates or bowls, top with tofu croutons, and sprinkle with black and white sesame seeds.
