SLOW-ROAST SPICED LAMB SHOULDER WITH SUMAC ONIONS

Slow-Roast Spiced Lamb Shoulder with Sumac Onions image

At Maydan the lamb shoulder is cooked sous vide until meltingly tender and then finished in the hearth until crisp and golden brown. We adapted their recipe for the oven to similar effect.

Categories     Bon Appétit     Dinner     Lamb     Spice     Coriander     Cinnamon     Cardamom     Lemon Juice     Mint     Parsley     Roast     Wheat/Gluten-Free

Yield 8 servings

Number Of Ingredients 16

1 (6-7-lb.) bone-in lamb shoulder
2 Tbsp. black peppercorns
2 Tbsp. coriander seeds
2 Tbsp. paprika
2 tsp. ground cinnamon
1 tsp. ground cardamom
1 tsp. ground cloves
1 tsp. freshly grated nutmeg
1 large red onion, thinly sliced
3 Tbsp. fresh lemon juice
2 tsp. sumac
1/2 cup mint leaves
1/2 cup parsley leaves with tender stems
Kosher salt, freshly ground pepper
Special Equipment
A spice mill or mortar and pestle

Steps:

  • Season lamb very generously with salt and pepper; place on a wire rack set inside a rimmed baking sheet.
  • Toast peppercorns and coriander seeds in a dry small skillet over medium heat, tossing often, until fragrant, about 3 minutes; let cool. Finely grind in spice mill or with mortar and pestle; transfer to a small bowl. Mix in paprika, cinnamon, cardamom, cloves, and nutmeg, then rub all over lamb. Chill uncovered at least 4 hours and up to 1 day.
  • Let lamb sit out on counter at room temperature 1 hour before roasting.
  • Place a rack in middle of oven; preheat to 275°F. Transfer lamb to a roasting pan and pour in 3 cups water. Cover tightly with foil and cook, turning lamb over and rotating pan halfway through, until meat is almost falling off the bone, 3-3 1/2 hours. Remove lamb from oven and turn up heat to broil (or to highest heat if you have a drawer-style broiler). Discard foil, transfer lamb to a cutting board, and pour off liquid in pan. Return lamb to pan; roast, uncovered, until nicely browned, about 5 minutes.
  • Meanwhile, toss onion, lemon juice, and sumac in a small bowl with your hands, squeezing onion a bit to soften.
  • Just before serving, toss mint, parsley, and a pinch of salt into onion mixture. Serve lamb topped with onion salad.

SUMAC-RUBBED LAMB WITH MINTY ARTICHOKES

Sumac-Rubbed Lamb with Minty Artichokes image

We can't think of a better large-format meat. A leg of lamb is fatty and flavorful, and its size makes it hard to overcook.

Yield 6-8 servings

Number Of Ingredients 15

1 (4-5-lb.) boneless leg of lamb
3 Tbsp. sumac, plus more for serving
5 tsp. Diamond Crystal or 1 Tbsp.
1 Tbsp. freshly ground black pepper, plus more
2 heads of garlic, halved crosswise
2 (14-oz. cans) unmarinated artichoke hearts, drained, halved lengthwise
1/2 bunch oregano, plus leaves for serving
1 cup dry white wine
1/4 cup extra-virgin olive oil
1 1/2 cups mint leaves, divided
1-2 bunches red radishes with tops, quartered, and/or 4-6 watermelon and/or purple radishes, thinly sliced
1 shallot, thinly sliced into rings
2 Tbsp. white wine vinegar
3 Tbsp. toasted sesame seeds
Aioli, labneh, or plain whole-milk Greek yogurt (for serving)

Steps:

  • Place a rack in middle of oven; preheat to 275°F. If lamb is tied or trussed, remove any twine or netting. Sprinkle lamb all over with 3 Tbsp. sumac, 5 tsp. Diamond Crystal or 1 Tbsp. Morton kosher salt, and 1 Tbsp. pepper.
  • Reroll lamb so the fattier side is on top (it doesn't have to be tight; you can just close it back up like a book). Using 3-4 pieces of kitchen twine, tie lamb in 2" intervals to close. Place bottom halves of both garlic heads, cut side up, in the center of a 13x9" baking dish and set lamb, fat side up, on top (the garlic acts as a makeshift, better-tasting wire rack). Scatter cloves from remaining top halves of garlic heads around lamb, then tuck artichokes and sprigs from ½ bunch oregano around. Pour in wine and oil; season vegetables with salt and pepper. Roast lamb and artichokes until a thermometer inserted into the thickest part of lamb registers 135°F for medium-rare, 2-2 1/2 hours.
  • Remove lamb and artichokes from oven and increase temperature to 500°F (taking the lamb out while the oven heats up prevents the meat from overcooking).Once oven temperature is at 500°F, slide baking dish back into oven and roast until fat on lamb is golden brown and artichokes are sizzling and starting to crisp around the edges, 10-12 minutes. Carefully transfer lamb to a cutting board and let rest at least 20 minutes.
  • Meanwhile, scatter half of mint leaves over artichokes and toss well to coat. Toss radishes, shallot, and vinegar in a small bowl to combine; season radish salad with salt and pepper.
  • Thinly slice lamb and arrange on a platter or serve directly on cutting board and spoon some of the artichoke mixture and any pan juices over. Scatter sesame seeds, oregano leaves, more sumac, and remaining mint on top.
  • Spoon some aioli into a bowl and serve lamb with radish salad, aioli, and remaining artichoke mixture alongside.
  • Do Ahead: Lamb and artichokes can be roasted 3 hours ahead. Let sit at room temperature. Reheat artichokes just before serving.

TURKISH LAMB CHOPS WITH SUMAC, TAHINI, AND DILL

Turkish Lamb Chops With Sumac, Tahini, and Dill image

A coating of toasted, lightly crushed fennel, coriander, and cumin seeds gives grilled or broiled lamb loin chops both a heady scent and a good crunch.

Provided by Melissa Clark

Categories     Lamb     Easter     Sesame     Coriander     Cumin     Garlic     Lemon Juice     Dinner

Yield Serves 4 to 6

Number Of Ingredients 19

For the lamb:
1 tablespoon Turkish red pepper or Aleppo pepper (or use red chile flakes)
2 teaspoons fennel seeds
2 teaspoons coriander seeds
2 teaspoons cumin seeds
2 teaspoons kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper
3 pounds bone-in loin lamb chops, the thicker the better
Extra-virgin olive oil, for grilling
For the tahini sauce:
1/3 cup fresh lemon juice (from about 2 lemons)
2 to 3 garlic cloves, grated on a Microplane or minced
1 3/4 teaspoons kosher salt
1 cup tahini
1/2 teaspoon ground cumin
4 to 6 tablespoons ice water
For serving:
Fresh dill sprigs
Ground sumac (optional)

Steps:

  • Prepare the lamb:
  • Combine the Turkish red pepper, fennel seeds, coriander seeds, and cumin seeds in a small bowl. Heat a small skillet over medium-low heat, add the spice mixture, and toast until fragrant, 1 to 2 minutes. Pour the mixture into a mortar or spice grinder, add the salt and black pepper, and either pound or briefly grind until you get a coarse-textured spice mix. Don't overdo it if you've gone electric here-the coarse texture is an essential part of the dish.
  • Pat the spice mixture all over the lamb chops, and let them marinate at room temperature for at least 30 minutes, or uncovered in the fridge for up to 24 hours.
  • Make the tahini sauce:
  • While the lamb is marinating, in a food processor, blend the lemon juice, garlic, and salt. Let the mixture sit for 10 minutes. Then add the tahini and ground cumin, and blend until a thick paste forms. With the processor running, gradually add the ice water, 1 tablespoon at a time, until the sauce is smooth enough to drizzle.
  • Heat a grill or broiler to high.
  • Drizzle the chops lightly with olive oil. Grill the chops until they are charred on the outside and cooked to taste within (or broil the chops on a broiler pan or rimmed baking sheet). Cooking time will depend on how thick your chops are, so watch them carefully: 2-inch-thick bone-in chops will take at least 3 to 5 minutes per side for rare. You'll need less time for thinner chops, and more time if you like them cooked medium rare or beyond. Let the lamb rest for 5 minutes before serving.
  • To serve, drizzle the tahini sauce over the chops, and garnish them with the dill sprigs. Add a dusting of the red sumac if you like.

MOROCCAN LAMB FILLET (BACKSTRAP)

Moroccan Lamb Fillet (Backstrap) image

This is very simple marinade to make and is wonderful with lamb served over couscous and topped with a mint yogurt. This works particularly well with a lamb fillet (backstrap) as it is one of the better cuts of lamb and comes out so juicy and tender. I marinated my lamb in the morning before work and cooked it in the evening, it is better if you can marinate at least a few hours to allow the flavours to come through. I made this with just 2 lamb fillets that were quite a good size but I think there would be enough marinade mix for 3, so I have listed 2-3 below. Prep time does not include marinating time.

Categories     Lamb/Sheep

Time 18m

Yield 2-3 serving(s)

Number Of Ingredients 12

2 -3 lamb fillets (backstrap)
1 teaspoon ground cumin
1 teaspoon paprika
3 garlic cloves, crushed
1 teaspoon ground coriander
1 teaspoon dried parsley flakes
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1 teaspoon sugar
1/2 teaspoon harissa
2 tablespoons lemon juice
2 tablespoons olive oil

Steps:

  • Combine all the marinade ingredients in bowl, add lamb and turn to coat each fillet well. Marinade several hours in the fridge.
  • Heat a little oil on a grill plate or fry pan, add lamb and cook each side until browned and cooked as desired. (mine were quite thick and it was about 4-5 Min's a side to get a nice pink center.).
  • Remove lamb from heat and allow to rest 5 Min's, slice thickly and serve.
  • Serve lamb over couscous with a mint yogurt sauce.

LAMB FILLET WITH ORANGE, REDCURRANT AND MINT SAUCE

Lamb Fillet with Orange, Redcurrant and Mint Sauce image

This was in Melbournes Herald Sun Newspaper yesterday. It looks fast and tasty, and I love lamb! They suggested 3 minutes would be enough cooking time for the fillets, but I think a little more would suit me!

Provided by JustJanS

Categories     Lamb/Sheep

Time 10m

Yield 6 serving(s)

Number Of Ingredients 9

6 lamb fillets (large enough for 1 per person)
1 teaspoon finely grated orange rind
1/2 cup orange juice
2 tablespoons lemon juice
1/3 cup red currant jelly
2 tablespoons port wine or 2 tablespoons chicken stock
2 teaspoons French mustard
salt and pepper
1 tablespoon fresh mint leaves, roughly chopped

Steps:

  • Mix everything (except the lamb) together in a small saucepan and bring to the boil, stirring to melt the redcurrant jelly.
  • Cook for a couple of minutes (this can be done in advance).
  • Season the lamb and oil the outside lightly.
  • Put in a hot pan and brown on all sides.
  • Cook until done to your liking-I would cook a small thin fillet for about 5 minutes.
  • Remove to a warm plate and cover loosely with foil or another plate.
  • Tip the sauce into the lamb cooking pan, and boil quickly.
  • Serve the lamb sliced diagonally with plenty of sauce poured over.

SESAME CHILI AND PARSLEY CRUSTED LAMB FILLETS

Sesame Chili and Parsley Crusted Lamb Fillets image

This is another really quick recipe to make with the end resulting in a lovely tender lamb fillet. I cooked this in a frying pan but this could also be cooked on the BBQ. I do not like my lamb overcooked and like it pink in the centre. I cook mine about 5-8 Min's a side depending on the thickness. I then cover it and let it stand for a further 5 Min's, this additional standing time cooks the lamb just the way I like, but cook as you prefer. I served mine with French Tart's Recipe#208297 which went really well with this.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

4 lamb fillets (about 200g each)
3/4 cup sesame seeds
1 teaspoon dried chili pepper flakes
3 tablespoons fresh parsley, chopped finely
3 tablespoons olive oil

Steps:

  • Combine sesame seeds, chili flakes and parsley in a bowl.
  • Combine lamb fillets in a large bowl with the oil.
  • Place lamb one at a time in sesame seed mixture and coat each fillet all over.
  • Cook either on a lightly oiled grill plate, fry pan, or on the BBQ until browned on both sides and cooked as desired. Cover and stand 5 Min's then slice thickly.
  • I served mine over fruity saffron rice, but it also goes well with a crisp green salad topped with tomatoes and bocconcini.
