2 cups red hot sauce (use your favorite)
1 stick margarine or butter, softened
2 1/2 tablespoons cayenne pepper
2 1/2 tablespoons crushed red chile flakes
2 1/2 tablespoons prepared horseradish
2 tablespoons minced fresh jalapeno
1 tablespoon minced fresh habanero
1 tablespoon plus 1 teaspoon ground cumin
1 tablespoon plus 1 teaspoon garlic powder
1 tablespoon plus 1 teaspoon onion powder
1 tablespoon plus 1 teaspoon coarsely ground black pepper
Hot chicken wings, for serving

Steps:

  • Combine the hot sauce, margarine or butter, cayenne pepper, chile flakes, horseradish, jalapenoes, habaneros, cumin, garlic, onion and black pepper in a food processor and mix on medium speed until all the ingredients are well mixed. Reserve the hot sauce to toss with chicken wings.
  • Cook's Note: Be sure to wear gloves when cutting the jalapeno and habanero and do not touch your face after handling the seeds or cut up peppers to avoid irritation!

Although barbecue sauce is in the title, this is nothing like a regular barbecue sauce that you'd buy in the store. It is very simple to make and keeps for approximately 1 week in the refrigerator.

1/2 c lemon juice
1/2 c cider vinegar
1/2 c ketchup
2 Tbsp worcestershire sauch
4 dash(es) hot pepper sauce
1/3 c horderadish
salt and pepper to taste
6 lb chicken pieces

Steps:

  • 1. Combine all ingredients in a stainless sauce pan and bring just to a boil.
  • 2. Lower heat immediately and simmer 15 minutes.
  • 3. Makes about 1 1/2 cup.
  • 4. Lightly brush sauce on 6 lb. of chicken pieces.
  • 5. Don't let chicken burn!

4 large idaho potatoes, each cut into 6 wedges
2 tablespoons grill seasoning
3 tablespoons extra virgin olive oil
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 cup extra-sharp white cheddar cheese, shredded
2 tablespoons prepared horseradish
salt & freshly ground black pepper

Steps:

  • Pre-heat the oven to 425ºF.
  • Scatter the potatoes on a baking sheet and toss with the grill seasoning and EVOO. Roast in the oven, turning occasionally, until they are golden brown and tender, about 40 minutes.
  • While the potatoes are roasting, place a medium pot over medium heat with the butter. When the butter has melted, sprinkle the flour over the top and cook for about a minute. Whisk the milk into the butter-flour mixture and simmer until thickened, 2-3 minutes.
  • Remove the pot from the heat and whisk in the cheese and horseradish until the cheese has melted. Season the sauce with salt and pepper, and reserve warm.
  • Serve the oven fries with a small bowl of cheddar-horseradish dipper alongside.

2 tablespoons fat-free mayonnaise

  • Preheat oven to 350°. In a small bowl, combine the steak seasoning, rosemary and thyme; rub over meat. Using the point of a sharp knife, make eight slits in the tenderloin.
