1/4 cup sugar
2 tablespoons canola oil
1 teaspoon cayenne pepper
1/2 teaspoon garlic salt
1/2 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes
2 cups unblanched whole almonds

Steps:

  • In a small bowl, combine the first six ingredients. Add almonds; toss to coat. Spread into a greased 15x10x1-in. baking pan. , Bake at 250° for 30 minutes or until lightly browned, stirring occasionally. Cool. Store in an airtight container.

1 tablespoon olive oil
1 pound blanched almonds
½ cup white sugar
1 tablespoon ground cinnamon
⅜ teaspoon sweet paprika
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine almonds and olive oil in a bowl; toss to coat. Spread almonds in a single layer on a baking sheet.
  • Bake in preheated oven until toasted, about 15 minutes. Allow almonds to cool slightly.
  • While almonds are baking, mix sugar, cinnamon, paprika, and cayenne pepper in a small bowl. Sprinkle spice mixture over almonds and toss again. Spread almonds in a single layer and continue to bake until spices are fragrant, 5 to 10 minutes. Cool before serving.

my dh loves sugar spiced nuts but is diabetic...so we came up with this. Based on a recipe from AllRecipes for pecans!

1 lb raw almonds
1/3 cup Stevia Truvia
1 1/2 tablespoons Stevia Truvia
1 tablespoon cinnamon
1 egg white
1 tablespoon water
1/2 teaspoon salt

Steps:

  • Preheat oven to 250 f.
  • Line cookie sheet with non stick foil.
  • In stand mixer, with wire attachment, whip egg white and water til very frothy.
  • Mix in truvia, salt and cinnamon.
  • On low speed, mix in almonds.
  • Spread nuts on prepared cookie sheet.
  • Bake for 1 hour to 1 hour 15 minutes - stirring every 15 to 20 minutes.
  • Cool - enjoy.
