1/2 cup creamy peanut butter
1 egg (beaten)
1/4 cup honey
1 teaspoon vanilla extract
1/4 teaspoon baking soda
2/3 cup whole wheat flour

Steps:

  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or spray with cooking spray.
  • Mix together the peanut butter, egg, honey and vanilla extract in a bowl.
  • Add the baking soda and mix well. Fold into the flour.
  • Using a 1-inch ice cream scoop, carefully portion the dough into 12 bites. Roll the bites into smooth balls. Flatten the balls to 1/4 inch thick. Use a fork to create the classic criss-cross pattern.
  • Bake the cookies for 7-9 minutes.
  • Allow to cool and then take off the cooking sheet.

1 cup Splenda (use a sugar alternative that measures 1:1 with sugar)
1 Egg

Steps:

  • Preheat your oven to 325 and prep your cookie pans/sheets for nonstick. I like to use parchment paper.
  • In a mixing bowl, mix together the peanut butter, sugar alternative and egg. Mix until blended.
  • Using a tablespoon, drop spoonfuls of cookie batter on to the prepped baking sheet. Leave at least 1/2" between cookie edges.Bake your cookies for 8-10 minutes. Do not over-bake. These cookies are better when not burnt.

1 cup shortening, i prefer butter
1 cup peanut butter
1 1/2-2 cups Splenda sugar substitute
2 eggs
3 cups whole wheat flour, i use pastry flour
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon vanilla

Steps:

  • Cream shortening and peanut butter together I find that putting these ingredients together in a microwave safe bowl and microwaving for 30 seconds makes the mixing job a lot easier Add sugar and continue to cream together Add eggs and vanilla and beat In a separate bowl measure and add flour, salt, soda and baking powder together Sift dry ingredients to creamed mixture and mix thoroughly.
  • The mixture will be crumbly but stick together if pressed with hands.
  • Optional: Chill dough in refrigerator for several hours Shape dough into balls about 1 inch in diameter Space evenly on cookie sheet Press flat with fork Bake at 375 for 12 to 15 minutes.
