1/2 teaspoon paprika
1/2 teaspoon curry powder (I use hot)
1/2 teaspoon sea salt
1/4 teaspoon garlic powder
1/4 teaspoon rounded cayenne pepper (or more/less to taste)
1/4 teaspoon turmeric
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
2 tablespoons olive (coconut, or peanut oil)
2 cups raw nuts like pecans (walnuts, almonds & cashews)

Steps:

  • Heat oven to 325 degrees and line a small cookie sheet with parchment or silicone.
  • Combine all the spices in a medium bowl that will hold the nuts, too. Add oil and mix until smooth.
  • Dump the nuts into the bowl and stir until they are evenly coated and spread evenly on the prepared pan in a single layer.
  • Bake nuts for 12-15 minutes, stirring at the halfway point.
  • Remove from oven and stir once more before letting sit on pan to cool for about an hour. Store in an airtight container.

1 1/2 cups granulated sweetener of choice (divided, * See notes)
1/4 cup water
1 teaspoon vanilla extract
2 tablespoon cinnamon (divided)
3 cups raw almonds

Steps:

  • On medium heat, heat a large pan or skillet.
  • When hot, add 1 cup of your granulated sweetener of choice, 1 tablespoon of cinnamon, water, and vanilla extract, and mix until fully combined. Allow to heat up, stirring occasionally.
  • When the mixture has completely dissolved, add your almonds. Mix your almonds into the sweet mixture, ensuring each almond is evenly coated. Continue to stir until the sweetener begins to crystallize on each almond. Remove from the heat.
  • Allow almonds to sit for 2-3 minutes, before using a spatula to break apart the almonds, before they crystallize together.
  • Once cooled, toss the almonds in the remaining half cup of sweetener and tablespoon of cinnamon, before transferring to an airtight container.

Sugar free cinnamon roasted almonds (candied almonds) are a superb tasty snack at any time of the year. Why not make them sweet or spicy?

150 g almonds (whole)
2 tsp egg whites
1 tsp ground cinnamon
¼ tsp ground cloves
½ tsp ground mixed spice
1 tsp granulated sweetener of choice (or more, to your taste)

Steps:

  • Whisk the egg whites until frothy with a fork in a large mixing bowl.
  • Pour the almonds into the egg whites and stir with the fork until they are completely coated.
  • Leave the almonds to sit for 2-5 minutes until most of the egg white has soaked into the almonds. The almonds should be coated and sticky, ready for the spices.
  • Place the spices and sweetener in a cup and stir to combine evenly, then sprinkle over the egg white covered almonds. Turn gently with the fork so the almonds are coated with the spices.
  • Place the spiced almonds onto a baking tray that has been lined with a silicone liner or baking parchment. Make sure there is some space between each almond and separate any clumps.
  • Bake at 130C/260F for 10 minutes, turning half way through. You only need the egg whites to cook and completely dry out to help with storage. You don't want any dampness remaining or these spiced almonds will not stay fresh.
  • Once completely cool, they can be stored in a sealed glass jar for up to a month.

Spicy Sugared Almonds image

1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1 1/2 cups plus 1 tablespoon sugar
1 1/2 cups whole almonds

Steps:

  • In a small bowl, stir together the cinnamon, cayenne pepper and 1 tablespoon of the sugar; set aside.
  • In a 4-quart saucepan, combine 1/2 cup plus 2 tablespoons water and the remaining 1 1/2 cups sugar. Stir over medium-high heat until the sugar dissolves and the mixture boils.
  • Add the almonds and stir constantly over medium-high heat until the water evaporates and the sugar starts to dry and turn gray. (The sugar mixture will start to foam and then start to dry and look like sand. This takes 5 to 6 minutes.) Continue stirring constantly until the sugar starts to melt and caramelize, coating about half of the almonds in a reddish-brown sugar mixture and the rest in a glossy sugar mixture, 2 to 3 minutes.
  • Sprinkle the cinnamon mixture over the almonds, stirring constantly, and immediately transfer to a baking sheet lined with parchment paper, spreading the almonds to separate. Cool completely, then break apart. Store the almonds in an airtight container for up to 2 weeks.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine almonds and olive oil in a bowl; toss to coat. Spread almonds in a single layer on a baking sheet.
  • Bake in preheated oven until toasted, about 15 minutes. Allow almonds to cool slightly.

1/3 cup Stevia Truvia
1 1/2 tablespoons Stevia Truvia
1 tablespoon cinnamon
1 egg white
1 tablespoon water
1/2 teaspoon salt

Steps:

  • Preheat oven to 250 f.
  • Line cookie sheet with non stick foil.
  • In stand mixer, with wire attachment, whip egg white and water til very frothy.
  • Mix in truvia, salt and cinnamon.
  • On low speed, mix in almonds.
  • Spread nuts on prepared cookie sheet.
  • Bake for 1 hour to 1 hour 15 minutes - stirring every 15 to 20 minutes.
  • Cool - enjoy.

1/2 teaspoon freshly ground nutmeg
2 cups whole almonds
3 tablespoons light corn syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a large baking sheet with non-stick cooking spray, or pour a small amount of oil, and evenly spread with a paper towel.
  • In a small dish, mix together the sugar, cinnamon, and nutmeg, set aside.
  • In another bowl, combine the almonds with the corn syrup until the almonds are evenly coated; sprinkle on the sugar, stirring to make sure it gets mixed in evenly.
  • Spread the coated almonds on the greased baking sheet and bake for 10-12 minutes or until bubbly, and the almonds are browned; remove from oven.
