The texture of this pumpkin bread is almost better than that of its full-fat version. Yum! Perfect for anytime of day. I guarantee you won't be able to tell it's low-fat OR sugar free!

1/2 cup whole wheat pastry flour
3/4 cup all-purpose flour
1/2 teaspoon sea salt
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/3 cup egg substitute
1 tablespoon olive oil
1 teaspoon olive oil
2 cups sugar substitute
6 ounces pumpkin
1/4 cup water

Steps:

  • Preheat oven to 350°F.
  • Combine whole grain pastry flour (Arrowhead Mills makes a great one), all-purpose flour, salt, spices, and baking soda in a small bowl; set aside.
  • Combine egg substitute, olive oil, Splenda, pumpkin, and water in large bowl. Gradually add flour mixture.
  • Pour into loaf pan and bake for approximately 45-50 minutes.

This is an adaption of several other recipes. I find it is very moist, and is a wonderful treat for those diabetics in your life.

1/2 cup bread flour
3/4 cup all-purpose flour
1/2 teaspoon sea salt
1 tablespoon pumpkin pie spice
1 teaspoon baking powder
1 egg
1 tablespoon canola oil
1 cup Splenda granular
7 1/2 ounces pumpkin puree (1/2 can)
1/2 cup unsweetened applesauce

Steps:

  • Preheat oven to 350 degrees.
  • Grease a loaf pan, and set aside.
  • Combine flours, salt, pumpkin spice, and baking powder in a med sized bowl.
  • Combine egg, cannola oil, splenda, pumpkin, and apple sauce in another bowl.
  • Mix wet mixture until well blended, slowly add in dry mixture.
  • When well mixed, pour into loaf pan.
  • Bake at 350 degrees for 45 minutes until a toothpick comes out clean.
  • Remove from oven and lay loaf pan on it's side to remove the bread.
  • Slice into 12 and enjoy!

2 cups canned pumpkin
1 cup skim milk
3/4 cup Splenda granular, sugar substitute
2 eggs
2 cups flour
1 tablespoon cinnamon
2 teaspoons pumpkin pie spice
1 teaspoon ground ginger
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 cups fresh cranberries, rinsed
1/2 cup walnuts, chopped
1/2 cup rolled oats
1 tablespoon margarine
1 teaspoon cinnamon
1 tablespoon Splenda granular, sugar substitute

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl stir together wet ingredients, combining the pumpkin, milk, splenda, and eggs.
  • In a separate bowl stir together dry ingredients, combining the flour, cinnamon, pumpkin pie spice, ginger, baking soda, baking powder, and salt.
  • Add the dry ingredients and cranberries to the wet mixture, stirring only until just combined. Be careful not to over mix the batter.
  • Pour batter into a greased loaf pan. Combine topping ingredients and sprinkle over the top of the pan. Pressing the topping down slightly will help it adhere to the bread.
  • Bake approximately 60 minutes or until a toothpick can be inserted and come out clean.

This is an old recipe from my mother which I have adjusted for diabetics. We give this as holiday gifts instead of the traditional fruit cake.

29 ounces pumpkin
4 cups Splenda sugar substitute
2 eggs
1/2 cup oil
1/2 cup applesauce
1 tablespoon cocoa
1 teaspoon vanilla
4 cups whole wheat flour
1 cup white flour
4 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 cups chopped dates
2 cups chopped nuts

Steps:

  • In large mixing bowl, whip eggs.
  • add oil and continue mixing.
  • add the splenda sugar substitute and mix well.
  • Add the applesauce, pumpkin, and vanilla.
  • Sift together the dry ingredients and add to the pumpkin mixture.
  • Stir in the dates and nuts.
  • Batter will be very stiff.
  • Grease and flour 8 small loaf pans or 4 larger loaf pans.
  • Bake in a preheated 350 degree oven for 1 hour or until toothpick inserted in center of loaf comes out clean.
  • Remove from pans and cool on wire rack.
  • When completely cool, store in plastic bags.
  • This bread freezes nicely and is a great Thanksgiving gift to friends.

Yeast Free Sugar Free Oil Free Pumpkin Whole Wheat Bread image

Though it might sound a little weird this is a really good bread here. I made if off of another bread recipe on recipezaar called yeast free sugar free bread recipe. I skipped the salt and used 1/4 cup of pumpkin per batch and it turned out just great! If you want to add salt, you can add 1 tsp. of celtic sea salt but it is not necessary. To make a ricer bread, use rice milk or some other natural nut milk for the liquids.

3 cups whole wheat flour
4 teaspoons baking powder
1 1/2 cups water
1/4 cup pumpkin

Steps:

  • Mix dry ingredients.
  • Do not sift the flour!
  • Mix liquids and add to dry. Stir until there is no more dry flour.
  • Depending on the humidity of the air where you live you may need a little bit more or less liquid.
  • The dough should be moist but not sticky. It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
  • Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
  • It is important not to overwork the dough.
  • Shape into a ball or an oval, with oiled hands.
  • Place in clean Bread Pan.
  • Bake for 40 minutes at 400°F.
