16 ounces pumpkin
2 cups milk
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 (1 ounce) box sugar-free instant vanilla pudding mix

Steps:

  • Mix pumpkin, spices, and half the milk.
  • While stirring, slowly add mix and remainder of milk.
  • Stir until smooth.
  • Let sit for 30 minutes if you prefer a thicker consistency.

3/4 cup part-skim ricotta cheese
4 ounces fat free cream cheese, room temperature
1/2 cup sugar substitute
1 large egg
1 large egg white
1/4 cup fat-free half-and-half
1/4 teaspoon vanilla extract
1 dash ground cinnamon

Steps:

  • Preheat oven to 250 degrees.
  • Mix ricotta and cream cheese until creamy.
  • Add sugar substitute, eggs, half-and-half, and vanilla.
  • Beat until well blended.
  • Transfer into ramekins.
  • Place into larger baking dish and add hot water to depth of 1 inch.
  • Bake until set (approx 45 mins).
  • Remove and cool.
  • Serve chiled or at room temperature.
  • Sprinkle with cinnamon.

3/4 cup(s) granulated sugar substitute
1 large egg
1 teaspoon(s) vanilla extract
1 teaspoon(s) baking soda
1/4 cup(s) sugar free jam whatever you like
1 cup(s) natural peanut butter

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper. Mix sugar substitute, egg, and vanilla with an electric mixer set on low for 3 minutes. Add peanut butter and baking soda. Mix on medium until dough comes together, about 30 seconds. Form dough into 24 (2-teaspoon) balls and place on baking sheet 1 inch apart. Gently press your thumb into the center of each to make an indentation. Fill each indentation with 1/2 teaspoon jam. Bake until lightly browned on the bottom, 12 to 14 minutes. Transfer to a wire rack to cool completely

1 cup reduced-fat creamy peanut butter
1 teaspoon pure vanilla extract
1 1/2 cups Splenda granular

Steps:

  • Melt butter in sauce pan.
  • Add peanut butter and stir until smooth
  • Add vanilla and splenda to peanut butter mixture and stir to combine with a wooden spoon.
  • Pour into an 8 x 8 pan that has been either buttered, Pam'ed or lined with wax paper
  • Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool.
  • Cut into 1-inch pieces and store in an airtight container for up to a week.
