Makes a great dessert or snack. Add some chopped pecans and coconut for a extra special dessert. This recipe is from a Weighwatcher's cookbook. I found this recipe on Obesity Help. This recipe was posted by toomuchme08. I have not tried this recipe, but I'm posting it for safe keeping.

20 ounces crushed pineapple (Chilled & do not drain)
3 ounces sugar free cheesecake pudding mix
8 ounces sugar Cool Whip Free or 8 ounces Cool Whip Free, thawed
20 ounces sugar free cherry pie filling (1 can)
3 ounces sugar free white chocolate pudding mix or 3 ounces sugar free cheesecake pudding mix
8 ounces sugar Cool Whip Free or 8 ounces Cool Whip Free, thawed

Steps:

  • Pineapple Fluff: Combine the Pineapple and pudding Mix. Fold in the Cool Whip.
  • Cherry White Chocolate Dessert: Combine the Cherry pie filling and pudding Mix. Fold in the Cool Whip.

Graham cracker crumbs, pudding mix and crushed pineapple gives this tasty pie just the right amount of sweetness. It's easy to double the recipe for a crowd.

Number Of Ingredients 6

1 cup crushed graham cracker crumbs
1/2 cup butter, melted
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 cup fat-free sour cream
1 can (20 ounces) unsweetened crushed pineapple, drained
Sugar substitute equivalent to 2 teaspoons sugar

Steps:

  • Combine crumbs and butter; press into bottom and up the sides of a 9-in. pie plate. Bake at 350° for 8-10 minutes; cool. In a bowl, combine pudding mix and sour cream; mix well. Stir in pineapple and sweetener. Spread into crust. Chill at least 3 hours.
